This yummy recipe was submitted by Senator Christopher Bond to a community cookbook. I used 1 cup of chips in the cookies and 2 cups melted. It helps to have a knife handy to help spread the chocolate on the cookie.

- Preheat oven to 375°. Set aside 1 1/2 cups of the chocolate chips.
- Cream the sugars, butter, eggs, and vanilla until light and fluffy. Add the baking soda, salt, and flour gradually, mixing well until smooth. Add remaining chocolate chips and pecans.
- Drop rounded teaspoonfuls of dough about 3 inches apart on a cookie sheet, flattening each with the palm of your hand.
- Bake 8-10 minutes or until done. Remove from sheets and cool on rack.
- Melt reserved chocolate chips. Dip half of each cooled cookie in chocolate. Place dipped cookies on wax paper lined cookie sheet and cool in the refrigerator until chocolate hardens.

STUFFED CHOCOLATE CHIP COOKIES RECIPE BY TASTY
If there's one thing you can never have too many of, it's cookie recipes. And while we have nothing against a basic oatmeal raisin or sugar cookie, sometimes you just want to make something a bit more special. For that, there are these stuffed chocolate chip cookies. Imagine: Your favorite chocolate chip cookie stuffed with anything from caramel to peanut butter and topped with potato chips, pretzels, marshmallows, and sprinkles galore.

- In a medium saucepan over medium heat, melt the butter and toast for about 5 minutes until it turns brown and smells nutty. Pour the brown butter into a large bowl. Let sit for 30 minutes to cool before starting to make the dough.
- To the bowl with the cooled butter, add the granulated sugar, brown sugar, vanilla, and yogurt. Using an electric hand mixer or stand mixer, beat for 2-3 minutes until fluffy.
- Add the egg and egg yolk and beat again until fluffy and well-combined.
- In a separate large bowl, whisk together the flour, baking soda, and salt. Sift ⅓ of the dry ingredients at a time into the wet ingredients. Beat just until incorporated, then scrape down the sides of the bowl with a rubber spatula between each addition. Make sure not to overmix.
- Add the chocolate chips and mini chocolate chips to the dough and gently fold just to incorporate. Cover the bowl with plastic wrap and chill in the refrigerator for 2 hours. You can also store the stuffings in the fridge so they're easier to work with later.
- Preheat the oven to 350˚F (180˚C). Line a baking sheet (or 2) with parchment paper.
- Using an ice cream scooper, scoop out 3 tablespoons of chilled dough and flatten out into a ¼-inch (6 mm) thick circle.
- Add 1 tablespoon of your stuffing of choice, such as caramel, cookie butter, chocolate hazelnut spread, or peanut butter, to the center of the dough round, and fold the edges of the dough around the stuffing. Seal tightly and roll into a ball. Repeat with the rest of the dough and stuffings.
- To the outside of the cookie dough balls, add your choice of toppings, such as mini marshmallows, chopped candy bar, chocolate chips, crushed chocolate sandwich cookies, white chocolate chips, rainbow sprinkles, pretzel pieces, or crushed potato chips. Press the toppings firmly into the dough, so they don't fall off. Repeat with the remaining stuffed cookie dough balls.
- Place the stuffed and decorated cookie dough balls onto the prepared baking sheet approximately 3 inches (7 cm) apart, so the cookies don't spread into one another. You may need to use 2 baking sheets.
- Bake for 11-14 minutes, or until the cookies are golden brown and evenly spread.
- Cool on a cooling rack for 10 minutes before devouring!

The cookies are soft, chewy, packed with chocolate chips, and are dipped in rich melted chocolate before being adorned with sprinkles. Everything tastes better when it's smothered in chocolate and sprinkles.I highly recommend chilling the dough before baking it because chilled dough is key for thicker cookies that aren't as prone to spreading. I made eight large bakery-style cookies but you can scale the size down and yield more if you prefer. But bigger is better for me when it comes to cookies. I used melted semi-sweet chocolate chips for dipping, but you could use milk or white chocolate, and use your favorite sprinkles.

- To a large bowl, add the cookie mix, butter, egg and stir to combine.
- Using a large cookie scoop, 1/4-cup measure, or your hands, form approximately 8 equal-sized mounds of dough. Tip - Strategically place a few chocolate chips on top of each mound of dough by taking chips from the underside and adding them on top. I also supplemented the chocolate chips by adding a few extra from the bag of chips (you won't need the entire bag for dipping).
- Place mounds on a large plate or tray, cover with plasticwrap, and refrigerate for at least 2 hours, or overnight. Do not bake with unchilled dough because cookies will bake thinner, flatter, and be more prone to spreading and this dough is already prone to spreading.
- Preheat oven to 350F, line a baking sheet with a Silpat or spray with cooking spray. Place dough mounds on baking sheet, spaced at least 2 inches apart (do not bake more than 6 cookies per sheet because these cookies spread) and bake for about 13 to 14 minutes (if your cookies are smaller, bake less; and keep a watchful eye on them since ovens very dramatically), or until edges have set and tops are just set, even if slightly undercooked, pale, and glossy in the center; don't overbake. Cookies firm up as they cool. Allow cookies to cool on baking sheet for about 20 minutes before dipping them. I let them cool on the baking sheet and don't use a rack.
- To a medium microwave-safe bowl, add about 1 cup chocolate chips and heat on high power to melt, about 1 minute. Stop to check and stir and heat in 15-second bursts until chocolate can be stirred smooth.
- Either dip one cookie halfway into the melted chocolate or hold cookie over chocolate bowl and spoon chocolate on, allowing the excess to drip off; I prefer the later method. Repeat dipping process with all cookies, heating additional chocolate as necessary. Transfer dipped cookies to a parchment paper-lined baking tray.
- Before chocolate beings to set up, add the sprinkles, sanding sugar, or your favorite decorating items (chopped candy, nuts, etc.). Allow chocolate to set up for at least 2 hours, or until fully set (duration will depend on how thick the chocolate coating is and air temperature. Although you could speed this up by placing cookies in fridge or freezer, I waited it out at room temp. Cookies will keep airtight at cool room temperature for up to 1 week or in the freezer for up to 6 months.

- Whisk together flour, cocoa powder, espresso powder, baking powder, and salt in a small bowl.
- In a large bowl, add the butter and sugar and cream together, using an electric mixer, until light and fluffy. Beat in the eggs and vanilla, then slowly add the dry ingredients. Form the dough into a long 2-inch thick log on parchment paper and roll tightly. Freeze for at least 4 hours to overnight.
- Arrange racks in the middle of the oven. Preheat the oven to 375 degrees F.
- Slice the dough into 1/4-inch rounds and arrange them on a parchment lined baking sheet, about 1-inch apart. Bake for 12 to 15 minutes. Remove and let cool for 5 minutes on the baking sheet, then remove to a wire rack. Let cool completely before glazing.

- Preheat the oven to 350 degrees F (175 degrees C). Line two baking sheets with aluminum foil.

- Heat oven to 350°F. Spray 24 mini muffin cups with cooking spray. Cut each cookie dough round in half; place one half in each muffin cup. Bake 17 to 19 minutes until cookies are golden brown and puffed.

- Beat cream cheese and powdered sugar together in a small bowl using an electric mixer on medium-high speed until thoroughly combined. Chill filling until ready to use.
