KAHLUA PARFAITS
Had this at a retreat, and had to get the recipe. These are really good! I had to guess on the number of servings, since it really depends on how big the glasses are that you serve them in. Cooking time is approximate and includes time spent cooling in the refrigerator before finishing.

Steps:
- Combine coffee, Kahlua and marshmallows in the top of a double boiler. Stir until marshmallows are melted and smooth.
- Refrigerate until cool.
- Once the mixture is cool, stir in the sour cream.
- Layer in parfait or wine glasses: the chocolate crumbs and the cream mixture, ending with the crumbs on top.
- Refrigerate until firm.

CHOCOLATE KAHLUA MOUSSE PARFAITS
Perfect for summer, these parfaits are light and refreshing. They can make an elegant finish to your meal. Instead of chocolate graham crackers you could use crushed Oreos, but I think the richness of the Oreo overwhelms the light mousse flavor. Cooking time is Chill time. Note: If you chose a smaller glass, such as a champagne glass, you will get 6 servings instead of 4 and will need to adjust the layering amounts accordingly.

Steps:
- In a large mixing bowl, combine the milk, kahlua, mousee, and cocoa. Whip on low speed until well blended. Slowly increase the mixer to high, whipping for 4-5 minutes, or until fluffy.
- In 4 clear glass dessert bowls (or wine/champagne glasses), layer 1/8 of the mousse, 2-3 tablespoons of graham crumbs, and 3 tablespoons of Cool Whip.
- If choosing to garnish with cracker crumbs rather than cookies, reserve about 1/4 teaspoon of the cookie crumbs. Repeat the layering, using the remaining ingredients.
- If garnishing with crumbs, sprinkle the remaining crumbs on top of each serving. If garnishing with cookies, leave the top of the parfait empty for now.
- Refrigerate for at least 2 hours before serving. Before serving, garnish with cookies if desired.
GRANDMA'S CHOCOLATE ZUCCHINI BREAD
This super easy zucchini bread is so moist and chocolaty that it's easy to forget zucchini is in it! My husband even loves it and he's never been a fan of zucchini!

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two loaf pans.
- Combine flour, cocoa, salt, baking soda, cinnamon, and baking powder in a medium bowl and mix together. Set aside.
- Cream sugar, butter, oil, and vanilla extract together in a large bowl with an electric mixer until smooth. Add eggs, one at a time, until mixed. Mix the dry ingredients slowly into the sugar mixture on medium speed until incorporated. Gently add chocolate chips, zucchini, and walnuts with a spoon. Pour batter equally into the prepared loaf pans.
- Bake in the preheated oven until a toothpick inserted into each loaf comes out clean, 40 to 50 minutes. Don't overcook.

KAHLUA PARFAIT
Found this recipe on the back of a cross word puzzle from a Swedish "ladies magazine". The original recipe calls for Whiskey but I make it with Kahlua. You can use whatever kind of alcohol you like. Chilling time is not included.

Steps:
- Lightly whisk egg yolks and sugar in a glass bowl.
- Put the bowl in a pan with simmering water.
- Add cocoa and Kahlua.
- Keep whisking until it thickens and doubles in size (about 10 minutes).
- Take the bowl out of the pan and keep whisking until the cream has cooled off (about 5 minutes).
- Gently mix the whipped cream with the eggcream.
- Transfer to 4 individual small bowls.
- Freeze several hours.
- When serving, garnish with a little melted chocolate, berries or whatever you fancy.

CHOCOLATE ZUCCHINI CUPCAKES
I just love chocolate but I am not the hottest for really rich food during the summer, so a nice alternate to this dilemma is zucchini-chocolate cupcakes with cream cheese icing!

Steps:
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Spread pecans onto a baking sheet. Cut butter into small pieces and scatter on top of pecans.
- Broil in the preheated oven until pecans start to turn golden brown and become fragrant, about 5 minutes, watching carefully to prevent burning. Remove from oven and allow to cool, about 10 minutes. Transfer pecans to a cutting board and smash or crush into small pieces.
- Turn off broiler and preheat the oven to 350 degrees F (175 degrees C). Line 18 cups of a muffin tin with paper liners. Spray inside of liners with cooking spray.
- Combine zucchini, oil, and eggs in a large mixing bowl.
- Mix flour, sugar, toasted pecans, sugar, cocoa powder, cinnamon, and salt in a bowl. Add zucchini mixture and stir to combine. Fill muffin tin cups 3/4 full with batter.
- Bake in the preheated oven for 25 minutes.
- While cupcakes bake, cut softened cream cheese and butter into small pieces and place in a mixing bowl. Add sugar and almond extract. Mix icing using an electric mixer until smooth, about 5 minutes. Store in the refrigerator until use.
- Remove cupcakes from the oven and let cool completely before frosting, about 1 hour.
