Chocolate Malt Ice Cream with Malt Ball Crunch image

Provided by Valerie Bertinelli

Categories     dessert

Time 7h50m

Yield 6 cups

Number Of Ingredients 9

1 cup whole milk
4 large egg yolks
1/2 cup sugar
1/2 cup malted milk powder
1 tablespoon unsweetened cocoa powder
1 cup milk chocolate chips
2 cups heavy cream
5 ounces chocolate-covered malt balls (about 1 cup), coarsely crushed
1 cup chocolate syrup

Steps:

  • Put a 9-by-5-inch loaf pan in the freezer to get cold.
  • Whisk the milk, egg yolks, sugar, malted milk powder and cocoa powder together in a medium bowl.
  • Put the chocolate chips in a large bowl.
  • Put the cream in a medium saucepan and heat over medium-high heat until it just starts to simmer. Slowly pour about half of the cream into the bowl with the milk/egg mixture, whisking constantly. Pour all of the liquid from the bowl back into the saucepan and cook, stirring constantly, until the custard reaches 160 degrees F, 2 to 3 minutes.
  • Strain the custard through a fine-mesh sieve into the bowl with the chocolate chips. Let stand 5 minutes, then stir until the chocolate is melted and thoroughly combined. Cover with plastic wrap and refrigerate until very cold, at least 4 hours.
  • Churn the custard in your ice cream maker according to the manufacturer's instructions. When the ice cream is ready, add the crushed malt balls and continue to churn until well distributed.
  • Spoon about a third of the ice cream into the cold loaf pan and spread evenly with a spatula. Drizzle in half of the chocolate syrup. Add another third of the ice cream, then smooth and drizzle with the remaining syrup. Smooth the remaining ice cream on top, then cover with plastic and freeze until firm, 2 to 3 hours.

Categories     dessert

Time 1h20m

Yield 24 servings

Number Of Ingredients 17

2/3 cup sugar
1 teaspoon light corn syrup
3 cups heavy cream
3 tablespoons unsalted butter
7 ounces milk chocolate, chopped
4 ounces bittersweet chocolate, chopped
1/2 teaspoon kosher salt
2 cups all-purpose flour
1 tablespoon baking powder
3/4 teaspoon fine salt
1 cup malted milk powder (such as Carnation)
3/4 cup Dutch-process cocoa powder
1 1/3 cups sugar
1 stick unsalted butter, at room temperature
4 large eggs, at room temperature
1 3/4 cups half-and-half
1 1/2 cups crispy rice cereal

Steps:

  • Make the frosting: Sprinkle the sugar evenly in a large skillet and add the corn syrup. Bring to a boil over medium heat, stirring once or twice. Continue to boil, swirling the pan but not stirring, until the caramel is amber. Carefully pour in the heavy cream (it can splatter) and add the butter. Simmer, whisking constantly, until the caramel is smooth, about 2 minutes.
  • Combine both chocolates and the salt in a medium heatproof bowl. Pour the hot caramel over the chocolate and let stand until melted, about 5 minutes. Whisk until smooth and shiny, then cover and refrigerate until set, at least 4 hours or overnight. (The frosting can be made up to 2 days ahead.)
  • Make the cupcakes: Position a rack in the middle of the oven and preheat to 375 degrees F. Line two 12-cup muffin pans with paper liners. Whisk the flour, baking powder and salt in a bowl. Sift the malted milk and cocoa powders into another bowl.
  • Beat the sugar and butter in a third bowl with a mixer until light and fluffy, about 7 minutes. Add the malted milk powder mixture and beat until combined. Add the eggs, one at a time, beating well after each addition. With the mixer on low speed, add the flour mixture in three parts, alternating with the half-and-half in two parts, beginning and ending with flour.
  • Divide the batter evenly among the prepared cups, filling each about three-quarters of the way. Bake until a toothpick inserted into a cupcake comes out clean, 15 to 20 minutes. Let cool in the pans 10 minutes, then transfer the cupcakes to racks to cool completely.
  • Beat the chilled frosting with a mixer or whisk until thick, about 2 minutes, but don't overwhip. Spread on the cupcakes or transfer to a pastry bag with a star tip and pipe on top. Refrigerate until ready to serve, then sprinkle with the cereal.

MALT CHOCOLATE ICE CREAM WITH OREO COOKIE CRUNCH

Malt chocolate ice cream with Oreo cookie crunch image

Nothing beats homemade ice cream and the beauty is there's nothing to do on the day... unless you fancy chocolate sauce on top

Provided by Paul Merrett

Categories     Dessert

Time 2h

Number Of Ingredients 8

750ml milk
250ml double cream
6 egg yolks
140g sugar
85g milk chocolate , chopped
25g plain chocolate , chopped
140g original flavour ovaltine
154g pack Oreo cookie , broken into chunks about the size of a large pea

Steps:

  • Bring the milk and cream to a simmer in a pan. Meanwhile, whisk the egg yolks and sugar until combined. Pour the milk onto the eggs, stirring well. Pour this back into a cleaned-out saucepan and slowly heat through for about 10 mins, stirring all the time. Don't allow the liquid to simmer. It should thicken as it heats up and is ready when it's thick enough to coat the back of a wooden spoon.
  • Pour the hot custard mix over the chocolate in a bowl and allow it to melt. Add the Ovaltine and whisk until smooth.
  • Cool, then churn in an ice-cream machine. As it thickens, add the biscuits. Freeze. When ready to eat, serve with White chocolate sauce (below).

OLD-FASHIONED CHOCOLATE OR VANILLA MALTED

Old-Fashioned Chocolate or Vanilla Malted image

The Walgreen drugstore chain popularized this soda-fountain drink in the 1930s under the name "Horlick's Malted Milk". You can make this warm-weather favorite with either whole milk and ice cream or low-fat milk and frozen yogurt. For adults, toss a shot of Kahlua or brandy into the blender for a tasty treat.

Yield Makes about 1 quart

Number Of Ingredients 11

1 1/4 cups heavy whipping cream
1 cup whole milk, divided
1/2 cup malted milk powder
1/3 cup granulated sugar
1/3 cup unsweetened cocoa powder
1/4 cup light corn syrup
1/8 teaspoon kosher salt
2 tablespoons nonfat dry milk powder
2 tablespoons cornstarch
1/4 teaspoon pure vanilla extract
3/4 cup chopped malted milk balls

Steps:

  • Combine the cream, 1/2 cup milk, malted milk powder, sugar, cocoa powder, corn syrup, and salt in a saucepan. Whisk well to dissolve the malt powder and cocoa.
  • Cook over medium heat, stirring frequently, until the mixture begins to steam; watch it carefully and make sure it does not come to a boil.
  • While the mixture heats, combine the remaining milk, milk powder, cornstarch, and vanilla extract in a small bowl, and stir until smooth and both of the powders have dissolved.
  • Add the cornstarch mixture to the pan, and bring to a boil over low heat, stirring constantly. Whisk the mixture until smooth and simmer over very low heat, stirring constantly, for 2 minutes, or until thickened. If the mixture is lumpy, strain it through a sieve.
  • Transfer the hot liquid to a storage container, and press a sheet of plastic wrap directly onto the surface of the mixture to prevent a skin from forming. Refrigerate the mixture uncovered until it is completely chilled (below 40°F).
  • Freeze the mixture in an ice cream maker according to the manufacturer's instructions. Transfer the soft ice cream to a chilled mixing bowl and fold in the chopped malted milk balls.
  • Serve immediately for a soft ice cream, or transfer the mixture to an airtight storage container and freeze until hard. Allow the ice cream to sit at room temperature for 15 minutes before serving if frozen solid.

  • In a large bowl, cream together the butter and brown sugar until light and fluffy, about 2 to 3 minutes. Add the first egg and beat until combined; add the second egg and beat one more time until incorporated. In two batches, add the flour mixture, mixing just until there are no specks of flour. Fold in the chocolate chips and then fold in the puffed rice.
  • Using a 2-inch cookie dough scooper, drop rounds of cookie dough onto a parchment-lined baking sheet, spacing the cookies about 2-inches apart. Transfer the baking sheet to the oven and bake for 8-10 minutes, until the cookies' edges are lightly golden brown and the centers are very soft. Warning: they'll be very fragile so be sure to let them cool on the baking sheet. Carefully transfer the cookies to a cooling rack until room temperature. As they cool they'll have more structure, chewiness and less fragility. If you eat them when they're warm, they'll fall apart a bit, but is that the worst thing in the world?
