CHOCOLATE MINT PIE
This pie has a chocolate cookie crust and an ice cream filling, but the creme de menthe meringue topping is what makes it special. It is a perfect St. Patrick's Day treat. Vanilla ice cream can be substituted for the mint chocolate chip.

Steps:
- Combine 1 1/2 cups cookie crumbs and melted butter or margarine. Press firmly over bottom and up the sides of a 9 inch pie pan. Freeze.
- Spread half of softened ice cream in crust. Drizzle 2 tablespoons creme de menthe and sprinkle 1/2 cup cookie crumbs over the ice cream. Repeat. Freeze till firm.
- In a clean bowl, beat egg whites until foamy. Add salt and cream of tartar, and beat until slightly stiff. Gradually beat in sugar until peaks form. Fold in 2 teaspoons creme de menthe. Spread meringue over pie, and seal to edges. Freeze up to 24 hours.
- Just before serving, broil until top is golden.

LEMON MINT SAUCE WITH SHRIMP
Steps:
- Bring a large pot of lightly salted water to a boil. Meanwhile prepare the remaining ingredients.
- In a large mixing bowl, combine the red pepper, shrimp, mint, lemon juice, lemon zest, olive oil, salt and pepper. Mix thoroughly.
- Add pasta to the boiling water and cook for 8 to 10 minutes or until al dente; drain. Add the pasta to the shrimp mixture and toss to coat well.

- Combine the granulated sugar, eggs, melted chocolate, shortening, baking powder, and peppermint extract in a large bowl. Beat with an electric mixer on medium speed until combined, scraping sides of bowl occasionally. Gradually beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour.
- Cover and chill for 2 to 24 hours or until dough is easy to handle.
- Preheat oven to 375 degrees F. Line cookie sheets with Reynolds® Parchment Paper; set aside. Shape dough into 1-inch balls. Roll balls in powdered sugar and place 2 inches apart on prepared cookie sheets.
- Bake about 9 minutes or until edges are just set. Transfer the cookies on the parchment paper to a wire rack; cool completely.

Steps:
- Whisk together milk and pudding mix in a saucepan; cook and stir over medium heat until mixture thickens and bubbles; reduce heat to low; add chocolate chips and stir until melted; pour into baked pie crust and place pie in refrigerator while you do the next step.
- Beat cream cheese, powdered sugar, peppermint extract and food coloring for 1-2 minutes until smooth and fluffy; gently fold in whipped topping; spread over the chocolate mixture in pie crust; refrigerate 2-3 hours or until firm.
- Garnish pie with chopped chocolate-mints (the Andes candies may also be shaved into curls using a vegetable peeler) and serve; keep pie stored in refrigerator.
- NOTE: You may vary the extract, food coloring, and garnish for a completely different version of the pie. For example, strawberry extract, pink food coloring, and a strawberry rose for garnish. Have fun!

- Beat milk, pudding and 1/2 of the whipped topping in medium bowl with wire whisk 1 minute. (Mixture will be thick.) Spread in crust.
- Spread remaining whipped topping over pudding layer in crust.

- Remove 10 cookies and set aside.
- Crush or process remaining cookies, then mix them with the butter. Press firmly onto bottom and up side of 9-inch pie plate.
- Pour milk into large bowl. Add both boxes of pudding mix and beat with wire whisk 2 minutes or until well blended. (Mixture will be thick.).
- Spoon out 1 1/4 cup of pudding into another bowl and stir in peppermint extract. Pour peppermint pudding mixture over crust. To remaining pudding mix, add in 1 cup of whipped topping. Spread the pudding/whipped topping layer of the mint layer.
- Chop remaining cookies and combine them with about 2 ½ cups (doesn't have to be precise) whipped topping. Spread this mixture over the top. The pie might look kind of messy at this point, so clean up the edges.
- Chill for 4 hours or until set.
- To garnish, place remaining whipped topping in a plastic zipper bag. Snip off a corner of the bag (about ½ inch up from corner) and squeeze whipped topping around sides decoratively.
- To make thin zig-zags, pour COLD chocolate syrup into a small zipper bag. Snip a very, very tiny cut off the bottom corner and drizzle away!

- CAKE:
- Preheat oven to 375 degrees F.
- In a small saucepan, combine mint-chocolate chips and 1/4 cup of water.
- Cook over medium heat, stirring constantly, until chips are melted and mixture is smooth.
- Cool 10 minutes.
- In medium bowl, combine flour, salt, baking soda, and baking powder; set aside.
- In a large bowl, combine brown sugar and butter; beat until creamy.
- Add eggs, 1 at a time, beating well after each addition.
- Blend in chocolate mixture.
- Gradually beat in flour mixture alterantely with remaining 1 cup of water.
- Pour into 2 greased and floured 9-inch round baking pans.
- Bake at 375 degrees F. for 25 to 30 minutes, or until cakes test done.
- Coll completely on wire racks.
- Fill nd frost with Chocolate Mint Frosting.
- Garnish as desired.
- CHOCOLATE-MINT FROSTING:
- Combine over hot (not boiling) water, the mint-chocolate chips and butter.
- Stir until chips are melted and mixture is smooth.
- Stir in vanilla extract and salt.
- Transfer to a large bowl.
- Gradually beat in the confectioners' sugar alternately with milk; beat until smooth. (if necessary add more milk until desired consistency is reached.)
- GARNISHES:
- Use chocolate curls and grated chocolate on top of the cake.
- Form a ring of grated chocolate pieces around the outside edge and use the curls in the center.
- To make chocolate leaves, select several small leaves, wash and dry them and paint one side of them with melted chocolate.
- Chill until firm and peel the leaf off the chilled chocolate.
- Use as garnish.

- Spread 2 tablespoons of peanut butter onto bottom of pie crust.
- Prepare chocolate pudding and pie filling mix with the skim milk. Pour into pie crust. Let chill in refrigerator until set.
