2 large Hass avocadoes, cubed or 1 large florida avocado
1/2 cup maple syrup, plus
2 tablespoons more maple syrup
2 -4 tablespoons sugar (optional)
2 tablespoons coconut oil (optional)
1 -2 teaspoon vanilla extract
1 teaspoon balsamic vinegar
1/2 teaspoon low sodium soy sauce
1 cup cocoa powder
1 pint raspberries (optional)
fresh mint leaves, chopped (optional)
shaved dark chocolate (to garnish) (optional)

Steps:

  • Place first seven ingredients (through and including soy sauce) in a food processor and pulse until smooth.
  • Sift cocoa powder with a metal strainer to remove lumps, then add to avocado mixture and blend until smooth. At this point you can refrigerate the pudding in a tightly-sealed container for up to a week or freeze it for up to a month.
  • Serve chilled, layered with raspberries, if desired, and garnished with fresh mint and shaved chocolate.

I was a bit skeptical at first as it would certainly take a lot to live up to a name like "Chicken for the Gods" but it is absolutely to die for . . . and so simple because I just throw it together in the crockpot in the morning and have an absolutely delicious meal when I get home.

1 3/4 cups flour
2 tablespoons dry mustard (scant)
6 boneless skinless chicken breasts
2 tablespoons oil
1 (10 ounce) can condensed chicken with rice soup
1/4 cup water

Steps:

  • Place flour and mustard in shallow bowl and coat chicken breasts.
  • In skillet, brown coated breasts in oil.
  • Place in slow cooker and pour condensed soup over the chicken. Add water.
  • Cover and cook on low for 6-7 hours.

2 ts Sesame seeds -- toasted
1/2 c Waterchestnut powder -- *
1 tb Sherry
1/4 c Flour
1 Chicken -- * see note
1 ts Soy sauce
1/4 c Butter or margarine --
2 c Chicken stock -- seasoned
1/2 c Whipping cream
1 lg Egg -- beaten

Steps:

  • A chicken about 2 1/2-3 pounds-cut up. ** Available at most Chinese markets. Marinate chicken pieces in mixture of egg, sherry, soy sauce, 1/4 teaspoon salt and dash of pepper for 20 minutes. Coat each piece of chicken with water chestnut powder. Heat 1 inch of oil in pan. Add chicken and cook until tender and browned on both sides. Melt butter over medium heat and blend in flour and cornstarch. Bring chicken stock to a boil and stir rapidly while adding butter mixture. Reduce heat and add whipping cream (or half and half). Season to taste with salt and pepper. Neatly slice chicken pieces and arrange on hot platter. Cover with cream sauce and sprinkle with toasted sesame seeds. 1 ¼ cups sifted all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup dates, pitted and chopped
1 cup butter
1 cup white sugar
1 cup packed brown sugar
3 eggs
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Grease and line a 9 x 13 inch pan.
  • Combine first 4 ingredients. Take 1/2 cup of flour mixture and dredge the dates.
  • Cream butter and sugars until light and fluffy. Add eggs, one at a time, and beat well after every addition. Gradually stir in flour mixture.
  • Add dates and walnuts and stir until completely combined.
  • Pour batter into prepared pan and bake for 10 minutes. Lower heat to 300 degrees F (150 degrees C) and bake for 30-40 minutes or until done.
  • Cool on a wire rack for 20 minutes and cut into bars. Wrap individually with foil or colored cellophane wrap.

1 teaspoon semisweet cocoa powder or 1 teaspoon unsweetened cocoa powder
1/2 teaspoon salt
1/4 teaspoon paprika
1 dash cayenne pepper or 1 dash dried red chili pepper
enough lemon juice, to make it goopy
1 tablespoon cilantro or 1 tablespoon basil (or other greenish stuff)

Steps:

  • Put everything but the chicken in a cereal bowl, mix it up.
  • Wash the chicken, coat it with the mix, cook the chicken.

This recipe is adapted from "the Encyclopedia of Creative Cooking" which has been around forever. I like the interesting mix of ingredients. It is reminiscent of a mole but much more simple and not spicy. It called for a whole disjointed chicken which I have replaced with chicken breasts. If you use boneless chicken breasts you will need to watch the cooking time as it will cook faster. I liked Recipe #248470 with this dish.

Number Of Ingredients 15

4 chicken breast halves
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup flour
2 tablespoons olive oil
1 (16 ounce) can chicken broth
1/2 ounce bitter chocolate (half cube)
1/2 teaspoon cinnamon
1/2 cup blanched almonds, chopped or 1/2 cup sliced almonds, crushed
1/2 cup onion, finely chopped
1 cup carrot, grated
1/2 cup raisins
12 prunes, pitted
whole almond, and
chopped parsley (to garnish)

Steps:

  • Mix flour and salt and pepper. Adjust to taste as I just guessed on the measurements. Place in plastic bag and dredge breasts in it.
  • Heat oil in a skillet and add chicken. Brown on both sides. Remove chicken to oven proof dish, preferably one with a lid.
  • Add 2 Tbs flour or some of the dredging flour to pan drippings. Cook until browned, stirring constantly. Add stock gradually; cook, stirring constantly, until thickened.
  • Blend in chocolate and stir until melted. Add cinnamon and salt and pepper if needed. Stir in remaining ingredients (not garnish) and pour over chicken.
  • Bake, covered, in preheated 325 F oven for 45 minutes.
  • Garnish with chopped parsley and blanched whole almonds.
