2 large Hass avocadoes, cubed or 1 large florida avocado
1/2 cup maple syrup, plus
2 tablespoons more maple syrup
2 -4 tablespoons sugar (optional)
2 tablespoons coconut oil (optional)
1 -2 teaspoon vanilla extract
1 teaspoon balsamic vinegar
1/2 teaspoon low sodium soy sauce
1 cup cocoa powder
1 pint raspberries (optional)
fresh mint leaves, chopped (optional)
shaved dark chocolate (to garnish) (optional)

Steps:

  • Place first seven ingredients (through and including soy sauce) in a food processor and pulse until smooth.
  • Sift cocoa powder with a metal strainer to remove lumps, then add to avocado mixture and blend until smooth. At this point you can refrigerate the pudding in a tightly-sealed container for up to a week or freeze it for up to a month.
  • Serve chilled, layered with raspberries, if desired, and garnished with fresh mint and shaved chocolate.

2 cups semisweet or dark chocolate chips or chopped chocolate from a block
2 dozen biscotti, homemade or purchased, or 2 dozen mini pretzels
2 cups dried fruit
Red and green sprinkles or smashed candy cane pieces

Steps:

  • Bring a saucepan with 1 inch of water to a boil. Put the chocolate in a large metal or heatproof glass mixing bowl and place on top of the saucepan with boiling water. Pay careful attention that the mixing bowl does not touch the surface of the boiling water. Stir the chocolate until it is almost melted. Remove it from the saucepan and continue to stir until the chocolate is completely melted. This entire process should take no more than 5 to 10 minutes.
  • Line a cookie sheet with parchment or waxeds paper. Dip each biscotti or pretzel in the chocolate to cover half of each and then dip in the sprinkles or candy cane pieces. Set each piece on the lined cookie sheet to allow the chocolate to harden.
  • Store in cool airtight containers for up to 2 weeks.
  • Try not to eat them all at the same time.

2 tablespoons chile powder (we use ancho)

Steps:

  • In a medium saucepan, heat 1 1/2 cups water until almost boiling. Turn off the heat and add in the chocolate. Whisk until melted and combined.
  • Turn the heat back on again if you wish to further melt, heat and thicken. However, do not walk away, chocolate burns very easily. Continue stirring until you remove it from the heat. Do not let the chocolate and water come to a full boil. After the water and chocolate are combined, add in the agave, chile powder and vanilla.
  • Enjoy immediately while it's hot, or pour over ice for a unique experience!

½ teaspoon baking soda

1 cup dates, pitted and chopped
1 cup butter
1 cup white sugar
1 cup packed brown sugar
3 eggs
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Grease and line a 9 x 13 inch pan.
  • Combine first 4 ingredients. Take 1/2 cup of flour mixture and dredge the dates.
  • Cream butter and sugars until light and fluffy. Add eggs, one at a time, and beat well after every addition. Gradually stir in flour mixture.
  • Add dates and walnuts and stir until completely combined.
  • Pour batter into prepared pan and bake for 10 minutes. Lower heat to 300 degrees F (150 degrees C) and bake for 30-40 minutes or until done.
  • Cool on a wire rack for 20 minutes and cut into bars. Wrap individually with foil or colored cellophane wrap.

20 fresh large quahog clams (about 10 pounds)
1 pound hot chourico or linguica (smoked Portuguese sausage) or fully cooked Spanish chorizo
1 large onion, chopped (about 2 cups)
3 teaspoons seafood seasoning
1 package (14 ounces) herb stuffing cubes
1 cup water
Optional: Lemon wedges and hot pepper sauce

Steps:

  • Add 2 in. water to a stockpot. Add clams and chourico; bring to a boil. Cover and steam 15-20 minutes or until clams open., Remove clams and sausage from pot, reserving 2 cups cooking liquid; cool slightly. Discard any unopened clams., Preheat oven to 350°. Remove clam meat from shells. Separate shells; reserve 30 half-shells for stuffing. Place clam meat in a food processor; process until finely chopped. Transfer to a large bowl., Remove casings from sausage; cut sausage into 1-1/2-in. pieces. Place in a food processor; process until finely chopped. Add sausage, onion and seafood seasoning to chopped clams. Stir in stuffing cubes. Add reserved cooking liquid and enough water to reach desired moistness, about 1 cup., Spoon clam mixture into reserved shells. Place in 15x10x1-in. baking pans. Bake until heated through, 15-20 minutes. Preheat broiler., Broil clams 4-6 in. from heat 4-5 minutes or until golden brown. If desired, serve with lemon wedges and pepper sauce. Freeze option: Cover and freeze unbaked stuffed clams in a 15x10x1-in. baking pan until firm. Transfer to freezer containers; return to freezer. To use, place 3 stuffed clams on a microwave-safe plate. Cover with a paper towel; microwave on high until heated through, 3-4 minutes. Serve as directed.

20 Hershey's™ milk chocolate nuggets, unwrapped

Steps:

  • Heat oven to 375°F. In small bowl, mix sugar and cinnamon. Remove 2 tablespoons of mixture to second small bowl; reserve.
  • In large bowl, stir cookie mix, flour, softened butter and egg with spoon until soft dough forms. Shape dough into 20 (1 1/2-inch) balls. Flatten each ball to 2 1/2-inch circle. Press 1 chocolate into center of each cookie, making sure to form dough around chocolate to enclose; reshape into balls. Roll in remaining sugar-cinnamon mixture. Place 2 inches apart on ungreased large cookie sheets. Discard sugar-cinnamon mixture after rolling balls.
  • Bake 8 to 10 minutes or until edges are set and light golden brown. Cool 2 minutes; remove from cookie sheet to cooling rack. Sprinkle reserved 2 tablespoons sugar-cinnamon mixture on tops of warm cookies. Cool completely, about 30 minutes. Store covered in airtight container.

Steps:

  • In small bowl, stir orange butter ingredients with wooden spoon until blended. Cover; refrigerate until serving time.
  • In shallow dish, stir milk, Bisquick mix, vanilla, 1 teaspoon orange peel, the orange juice and eggs with fork or whisk until blended. In each slice of bread, cut 3-inch pocket through top crust. Spread 1 tablespoon hazelnut spread in each pocket.

Don't use the recipe variation for using lowfat milk! This is an abominable perversion of the philosophy of Cream of Wheat and will give you much too rich a bowl of cereal. I use "quick" Cream of Wheat.
