GAMBERI AL CIOCCOLATO: SHRIMP WITH CHOCOLATE



Gamberi al Cioccolato: Shrimp with Chocolate image

Number Of Ingredients 8

1 cup/229 g chopped finest quality plain dark chocolate (at least 70 percent cocoa)
1/2 cup/118 ml milk
3 tablespoons/45 ml extra-virgin olive oil
2 cloves garlic, crushed
1 pound/450 g shrimp, peeled and deveined
Salt
1 cup/240 ml white wine
Small bunch fresh flat-leaf parsley, chopped

Steps:

  • Combine the chopped chocolate and milk in a stainless steel bowl. Rest the bowl over a pot of simmering water, making sure that the bottom of the bowl is not touching the water. Stir until the chocolate is completely melted.
  • In a frying pan, heat up the olive oil and saute the garlic until soft. Add the shrimp and cook until the shrimp are pink and just opaque. Add the salt and wine, and let reduce. Then add the parsley. Plate and drizzle with melted chocolate.

2 cups Sugar
¾ cup Unsweetened Cocoa Powder
1½ tsp Baking Powder
1½ tsp Baking Soda
1 tsp Salt
2 Eggs
1 cup Buttermilk
½ cup Canola
2 tsp Orange Blossom Water
1 cup Orange Juice
Orange Zest
12 oz Cream Cheese
¾ cup Butter
3½ cups Powdered Sugar
⅔ cups Unsweetened Cocoa Powder
1 tsp Orange Blossom Water
2 tbsp Milk
Pinch of Salt

Steps:

  • Mix the sugar and orange juice in a bowl of a stand mixer.
  • Add the eggs one at a time, mixing well between each addition.
  • Add the vegetable oil, orange zest and orange blossom water
  • Add the cocoa powder.
  • In a separate bowl mix the flour, baking powder, baking soda, and salt together.
  • Alternating the dry mixture and the buttermilk add to the sugar and cocoa mixture.
  • Divide batter between two prepared 8 inch cake pans.
  • Bake for 35 to 40 minutes or until a toothpick inserted in the middle of the cake comes out clean.
  • Cool cake to room temperature before removing from the pan.
  • Cream the butter and cream cheese together in the bowl of a stand mixer.
  • Add the cocoa powder and powdered sugar.
  • Add the orange blossom water, milk, and pinch of salt
  • Mix until well incorporated.

¼ cup butter, softened
1 cup freshly grated Parmigiano-Reggiano cheese
8 slices cooked bacon
4 slices Cheddar cheese
8 slices sourdough bread

Steps:

  • In a small bowl, mash together the butter and Parmesan cheese until evenly blended. Make sandwiches by placing two slices of bacon and one slice of Cheddar cheese on half of the bread slices. Top with the remaining slices of bread.
  • Heat a large skillet over medium heat. Spread some of the butter mixture on the top of each sandwich. Place sandwiches butter side down in the skillet. Spread the remaining butter mixture on the other sides. Cook until golden brown on each side, about 3 minutes per side. To serve, cut in half diagonally.

Shrimps - about 8 tiger shrimps or 24 small shrimps
Garlic, minced - 3 cloves
Chili pepper, finely minced - 1 small
Walnut oil - 2 tablespoons
Orange juice - 1 orange
Orange zest - 1/2 orange
Lemon juice - to taste (if orange is too sweet)
Dark chocolate (85% or 99%), chopped - 15 g
White wine - 3 tablespoons

Steps:

  • - In a small pot, heat the orange juice, orange zest and wine. Do not boil. When it is hot, add the chocolate and remove from heat. Whisk the mixture to melt the chocolate. Add some lemon juice if the sauce is too sweet. - In a skillet, heat the oil and add garlic and chili. Saute for a minute, remove garlic and chili from oil, save the garlic mixture. - In the same skillet, add the shrimp to oil and saute till the shrimp is done. - Pour the chocolate sauce into the skillet over the shrimp, add garlic and chili, saute until the sauce thickens a little bit. Serve immediately.
