1 box Betty Crocker™ Super Moist™ yellow cake mix
6 tablespoons butter or margarine, softened
1 egg
3 cups miniature marshmallows
1 cup butterscotch chips
1 cup semisweet chocolate chips
6 cups Rice Chex™ cereal
2 cups salted dry-roasted peanuts

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). In large bowl, beat cake mix, butter and egg with electric mixer on low speed until crumbly. Press in ungreased 15x10x1-inch pan using plastic wrap. Bake 10 to 12 minutes or until light golden brown. Sprinkle with marshmallows. Bake 3 to 5 minutes or until marshmallows puff.
  • In large microwavable bowl, microwave butterscotch and chocolate chips uncovered on Medium-High (70%) 1 minute; stir. Microwave 1 to 2 minutes longer, stirring every 30 seconds, until mixture can be stirred smooth. Stir in cereal and peanuts.
  • Immediately spoon cereal mixture over hot marshmallow layer. Let stand about 1 hour or until cool and set. For bars, cut into 10 rows by 6 rows. Store loosely covered.

3/4 cup creamy peanut butter
1/4 cup butter (softened)
1/2 teaspoon vanilla extract
1 1/2 cups confectioner's sugar
32 butter crackers (rectangle club crackers)
7 ounces dark chocolate
7 ounces milk chocolate
Paraffin wax (or shortening for thinning chocolate, optional)
16 PEEPS® Brand marshmallow trees or marshmallow snowmen
16 lollipop sticks (optional)

Steps:

  • Using a mixer, beat together the peanut butter and butter until smooth, about 1 minute.
  • Add the vanilla and sugar. Beat together for 1 minute until the sugar is completely mixed in.
  • On a cookie sheet, lay down 16 crackers.
  • Scoop a slightly heaping tablespoon of peanut butter mixture and form it into a small rectangle, the size of the cracker. Put the peanut butter mixture on top of the cracker and repeat with each cracker until the peanut butter is gone.
  • Place the remaining crackers on top of the peanut butter and press gently to make sandwiches.
  • If desired, push a lollipop stick about 1 1/2 inches into the peanut butter middle in order to make a lollipop. This makes it easy to dip in chocolate and kids love it. You can also just leave the sandwiches as is.
  • Place the cookie sheet in the freezer while you melt the chocolate.
  • Place 1 inch of water in the bottom pan of a double boiler. Place it on the stove over low heat.
  • Place the chocolate into the top of the double boiler and allow the chocolate to melt, stirring gently. If the chocolate is too thick, you can add a 1" cube of paraffin wax or 1-2 tablespoons of shortening. This will thin the chocolate and make it easier to dip the sandwiches.
  • Once the chocolate is melted, remove the cracker sandwiches from the freezer.
  • If you're making lollipops, pour the melted chocolate into a glass that is about 5" tall. Holding on to the lollipop stick, dip the cracker sandwich completely into the chocolate and turn to coat. Remove the sandwich from the chocolate and allow the excess chocolate to drip into the cup. Place the lollipop on a cookie sheet that has been lined with wax paper. Immediately press a PEEPS® Holiday Christmas tree or snowman on top of the wet chocolate. Repeat with remaining sandwiches.
  • If you're not making lollipops, keep the melted chocolate in the double boiler. Place a sandwich onto the tins of a fork and lower it into the chocolate, turning to coat. Using the fork, pull the sandwich out of the chocolate once it is completely covered. Tap the fork on the side of the pan to allow excess chocolate to drip off. Place the chocolate covered sandwich on a cookie sheet lined with wax paper and immediately press a PEEPS® Holiday Christmas tree or snowman into it. Repeat with remaining sandwiches.
  • Allow the chocolate to set completely. To speed this process up, you can place the cookie sheet into the refrigerator.
  • Store the chocolate peanut butter marshmallow sandwiches in an airtight container in a cool place.

Steps:

  • Spray an 8x8 inch baking pan with vegetable oil spray or line with parchment paper.

2 cups graham cracker crumbs
2 teaspoons baking powder
1 teaspoon kosher salt
2 sticks (1cup) unsalted butter, room temperature
1 cup packed light brown sugar
2 large eggs, room temperature
2 teaspoons vanilla extract
6 full size chocolate bars, such as Hershey's
One 13-ounce container marshmallow creme
1/2 cup peanut butter chips
1/2 cup semi-sweet chocolate chips
Non-stick cooking spray

Steps:

  • Preheat the oven to 350 degrees F. Line a 9-by-13 straight-sided baking pan with parchment, letting the parchment hang over the long sides by about 2 inches (this will help you remove the bars from the pan later). Spray all the parchment, including the exposed ends, with non-stick cooking spray.
  • Add the flour, graham cracker crumbs, baking powder and salt to a medium-sized bowl then whisk to combine. Set aside. Add the butter and sugar to the bowl of a stand mixer fitted with a paddle attachment. On medium-low speed, cream the butter and sugar together until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating after each addition. Beat in the vanilla. Turn the mixer off and add in the flour mixture and stir by hand until just combined.
  • Divide the dough in half. Using clean hands, place pieces of the dough all over the base of the prepared pan (this will make it easier to spread it into a crust that covers the base of the pan). Lightly spray your clean hands with the non-stick spray then gently press and mold the dough to cover the base of the pan.
  • Place the chocolate bars on top of the dough in an even flat layer. Press slightly to adhere the chocolate to the dough. It will not cover the dough completely but will melt and spread as it bakes. Similar to the dough, dollop the marshmallow creme all over the chocolate bars. Spray your clean hands with the non-stick spray then use them to gently spread the marshmallow creme to completely cover the chocolate bars and dough. Sprinkle the peanut butter chips and the semi-sweet chocolate chips on top of the marshmallow creme. Spray your hands once again then take the remaining half of the dough and gently flatten into pancake-like pieces. Place them on top of the chips allowing some of the marshmallow creme and chips to peek through.
  • Bake until golden brown, about 35 minutes. Let the bars cool completely before cutting into squares.

6 cups/200 grams cornflake cereal
1 (12-ounce/340-gram) bag large marshmallows
1 teaspoon kosher salt (such as Diamond Crystal)
1/2 cup/125 grams natural creamy peanut butter
4 ounces/115 grams semisweet chocolate (preferably bar chocolate), roughly chopped
Flaky sea salt, for sprinkling

Steps:

  • Grease a 9-inch square pan with butter and sprinkle 1/2 cup/17 grams of the cornflakes on the bottom of the pan.
  • In a large pot, melt the 6 tablespoons/85 grams butter over medium-low heat. Add the marshmallows and kosher salt, and cook, stirring often, until about half of the marshmallows have melted but the mixture is not completely smooth. Add the peanut butter and mix until just combined, keeping some lumps of marshmallow.
  • Take the pan off the heat, and working quickly, add about half the remaining 5½ cups cornflakes, folding them into the marshmallow mixture as gently as possible to avoid crushing the cereal. Repeat with the remaining cornflakes. If the mixture becomes too sticky to work with, briefly return the pot to the heat on low.
  • Working quickly, transfer the mixture to the prepared pan, using a wet spoon or spatula to spread and pat into an even layer, again being careful to avoid crushing or packing the cereal.
  • Place the chocolate in a small heatproof bowl and microwave it in 15-second intervals, stirring between intervals, until melted and smooth. Drizzle the chocolate over the bars in overlapping lines. (If using chocolate chips, scatter the chips onto the surface of the bars while they are still warm and let sit for 5 minutes, allowing the heat of the cornflakes to melt the chocolate before dragging a fork or toothpick through it to create lines.) Sprinkle the bars lightly with flaky sea salt, and set aside at room temperature (in a cool spot, if possible) until completely set, about 2 hours.
  • Cut into bars and serve. Bars will keep, wrapped well at room temperature, for up to 3 days.

1 cup sugar
1 egg
1 cup old-fashioned or quick-cooking oats
6 oz. BAKER'S White Chocolate
1 jar (7 oz.) JET-PUFFED Marshmallow Creme
1 cup PLANTERS Lightly Salted Dry Roasted Peanuts, coarsely chopped

Steps:

  • Heat oven to 350ºF.
  • Mix 1 cup peanut butter and sugar in medium bowl with mixer until light and fluffy. Blend in egg. Stir in oats. Press onto bottom of 13x9-inch pan sprayed with cooking spray.
  • Bake 15 min. Cool completely.
  • Microwave chocolate and remaining peanut butter in large microwaveable bowl on HIGH 2 min. or until chocolate is completely melted and mixture is well blended, stirring after each minute. Add marshmallow creme; mix well. Spread over crust.
  • Sprinkle with nuts; press gently into marshmallow creme. Cut into bars.
