- In a large saucepan, bring rice, sugar, salt, and 4 1/2 cups milk to a boil over medium-high. Reduce heat, cover, and simmer 25 minutes. Uncover and cook, stirring constantly, until rice is tender and pudding is creamy, 5 minutes. Stir in vanilla and remaining 1/4 cup milk.
- Transfer to a serving dish and press plastic wrap directly on surface to prevent a skin from forming. Refrigerate until chilled, at least 1 hour (or up to 3 days). To serve, stir in heavy cream and sprinkle with cinnamon.

Try it today and enjoy this sinful chocolate cake in the form of delicious individual rice puddings. Step 1 In a saucepan, combine the cooked white rice, chocolate milk, sugar, and butter. Cook over low heat until thickened. This should take about 30 minutes, stirring often.
- Step 2 Next, add the vanilla extract, chopped pecans, and shredded coconut. When combined, pour into individual dessert cups.
- Step 3 When ready, garnish with additional pecans and coconut, if desired. This can be served warm or cold.
RICE PUDDING WITH LEFTOVER RICE
Steps:
- Gather the ingredients and preheat the oven to 300 F.
- In a medium saucepan, heat the milk and rice over medium-low heat, stirring together frequently so the milk doesn't burn. Bring the mixture to a slow simmer.
- In a separate medium bowl, combine the eggs, sugar, and vanilla.
- Whisk about 1/2 cup of the hot milk mixture into the egg mixture to temper the eggs. Add all of the egg mixture to the saucepan of hot milk and rice, stirring constantly to avoid scrambling the eggs. Allow to cook until thick enough to coat the back of a spoon, about 175 to 180 F.
- Add the cinnamon and raisins, stirring just to combine.
- Finally, pour the rice pudding mixture into an 8 x 8-inch casserole or baking dish and bake in the preheated oven for 25 to 35 minutes. For a creamy texture, remove the rice pudding when it's lightly set with a slight jiggle. For a firm baked custard, cook until a knife inserted in the middle comes out clean.
- Allow the rice pudding to cool slightly before serving.

- Lightly grease or spray with cooking spray the inside of a 31/2- to 6-quart crockpot.
- Combine all ingredients in the crockpot, cover the crockpot and cook on low for 21/2 to 3 hours, or until all the liquid has been absorbed. Stir before serving.
- Serve either warm or chilled. To chill, allow the rice pudding to cool for about 2 hours, then spoon it into a bowl, cover and refrigerate until ready to serve. Serve with cream and a sprinkling of slivered almonds or nuts of your choice.

- Boil rice in salted water until tender. (I boiled mine for about 15 minutes.) Do not drain.
- Mix sugar and cocoa, add to rice. Add milk.
- Bake in a slow oven (300 degrees) for about 1½ hours, stirring twice during the first hour. Allow to brown during the last half hour. Serve hot or cold Yield: 4-5 servings
