A tender and tasty meatloaf made with ground beef, uncooked rice, vegetables, and herbs.

Steps:
- Preheat the oven to 350 degrees F. Grease a loaf or meatloaf pan. Combine all the ingredients in a bowl and mix well. Form the meat into a loaf shape and place in the loaf pan. Place the pan in the oven and bake the meatloaf at 350 degrees F for 1 hour or until the meatloaf is done and reads 160 degrees F on a meat thermometer. Remove the meatloaf from the oven and let the meatloaf rest for 15 minutes before slicing and serving.

- In a large bowl, mix all ingredients together until well blended. Pack into a 9x5 inch loaf pan, cover with foil, and bake at 350℉ (180℃). for 1½ hrs (removing foil after 30 mins). Even when cooked through, meat will still be slightly pink because of the ketchup. Drain off fat, and let the meat loaf rest for 5 minutes before slicing to serve.

We enjoy this recipe, and I am only submitting it because my DH says he cannot read the recipe written by my mother and photocopied by me over 20 years ago!! I do not know where my mother got this recipe but I assume she copied it out of some magazine at a beauty parlour, etc.

Steps:
- Combine all ingredients for meatloaf and press one half the mixture into a loaf pan.
- Combine stuffing ingredients and spread on meat mixture.
- Top with remaining meat mixture. Bake in a moderately slow over of 325 degrees F for 1-1/4 hours. Let rest 15 minutes before slicing.
- Serve with hot tomato or barbecue sauce. Serves 8.
- (Use warmed tomato soup, canned.) If the loaf pan is large enough, pour the fat off and pour the canned tomato soup over the meat for the last 15 minutes of baking.

MOROCCAN-INSPIRED MEATLOAF
The complex flavors in this meatloaf made me love the entree again after years of turning my nose up at something I considered boring, and my girlfriend who never ate meatloaf gobbles it up! Serve with optional pomegranate BBQ sauce, ketchup, or just the drippings from the meatloaf itself. Very good served with rice pilaf.

- Preheat the oven to 350 degrees F (175 degrees C).
- Heat olive oil in a large skillet over medium-high heat. Add onion, carrot, celery, garlic, and ginger; cook until onion is translucent, about 5 minutes. Stir in salt, paprika, cumin, curry powder, cayenne, cinnamon, and black pepper and cook to release flavors, 1 to 2 minutes. Remove from the heat and let cool for 10 to 15 minutes.
- Combine the lamb and beef in a large bowl. Add cooled vegetable mixture and stir to combine. Mix in bread crumbs, cilantro, eggs, and mint.
- Transfer meatloaf mixture to a 1 1/2-quart loaf pan and set in a baking pan. Pour water in the baking pan to reach halfway up the sides of the loaf pan.
- Bake in the preheated oven until firm and cooked through, about 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Remove from the oven and let rest for 10 to 15 minutes.
- Meanwhile, prepare the BBQ sauce, if using. Combine ketchup, onion, molasses, chipotle pepper, adobo sauce, and sugar in a small saucepan over low heat; bring to a simmer. Cook until flavors blend, about 5 minutes. Remove from heat and let cool to room temperature.
- Unmold meatloaf onto a large plate. Slice and serve with the sauce.

- Preheat oven to 350°. In a small bowl, mix chili sauce and ketchup. In a large bowl, combine Rice Krispies, onion, green pepper, cheese, egg, salt and pepper; stir in half of the chili sauce mixture. Add beef; mix lightly but thoroughly., Transfer beef mixture to an ungreased 9x5-in. loaf pan. Make a shallow indentation down center of loaf. Spread remaining chili sauce mixture over loaf, being sure to fill indentation., Bake 60-70 minutes or until a thermometer reads 160°; use a turkey baster to remove drippings every 20 minutes. Let stand 10 minutes before slicing.
