1/2 cup vegetable oil
4 oz unsweetened baking chocolate, melted, cooled
2 cups granulated sugar
2 teaspoons vanilla
4 eggs
2 cups Gold Medal™ all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup powdered sugar

Steps:

  • In large bowl, mix oil, chocolate, granulated sugar and vanilla. Stir in eggs, one at a time. Stir in flour, baking powder and salt. Cover; refrigerate at least 3 hours.
  • Heat oven to 350°F. Grease cookie sheet with shortening or cooking spray.
  • Drop dough by teaspoonfuls into powdered sugar; roll around to coat and shape into balls. Place about 2 inches apart on cookie sheets.
  • Bake 9 to 11 minutes or until edges are set. Immediately remove from cookie sheets to cooling racks.

This is a yummy chocolate cookie that's crunchy on the outside but soft and chewy on the inside! I bake it for my campers every year and they love it! The amount of sugar may be reduced so it's not too sweet.

1 cup all-purpose flour
1 teaspoon baking powder
½ cup butter, melted
2 (1 ounce) squares semisweet chocolate, chopped
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 cup semisweet chocolate chips
¼ cup confectioners' sugar for rolling

Steps:

  • Sift together the flour and baking powder; set aside. In a medium bowl, stir chocolate into melted butter until melted and smooth. Mix in the sugar, eggs and vanilla. Gradually blend in the sifted ingredients. Stir in the chocolate chips. Cover dough and chill for at least 2 hours or overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets or line them with parchment paper. Roll the chilled dough into 1 inch balls and roll each ball in confectioners' sugar. Place cookies 2 inches apart onto the prepared cookie sheets.
  • Bake for 9 to 12 minutes in the preheated oven, until the tops are cracked. Remove from cookie sheets to cool on wire racks.

This recipe is from the executive pastry chef, Thomas Haas, of the Senses Bakery in Vancouver. The Vancouver Sun proclaimed it "the best cookie in the world." I just baked it this morning and had it with my morning coffee...it's like heaven...tastes like a baked truffle! Cooking time is chilling time.

1/2 lb semisweet chocolate or 1/2 lb bittersweet chocolate (I used Valrhona 70% cocoa)
3 tablespoons butter, room temperature
2 eggs
1/3 cup sugar, plus more for rolling
3/4 cup ground almonds or 3/4 cup almond meal
powdered sugar, for garnish

Steps:

  • Melt the chocolate in the top of a double boiler set over, but not touching, simmering water.
  • Remove from the heat.
  • Cut the butter into a few pieces and mix into the chocolate until melted.
  • Beat the eggs with an electric mixer, gradually adding the sugar until ribbons form (about 4 minutes on medium-high).
  • Fold in the chocolate-butter mixture.
  • Gently add the ground almonds.
  • Cover and refrigerate overnight.
  • Heat the oven to 325 degrees.
  • Line a baking sheet with parchment paper.
  • Use a cookie scoop to form the dough into 1-inch balls.
  • Roll the balls in granulated sugar, place on the baking sheet about 2 inches apart and immediately place in the oven.
  • Bake until the center of the cookies is no longer wet, 9 to 12 minutes.
  • When slightly cool, lightly dust the cookies with powdered sugar.

2 large egg whites, room temperature
1-1/2 teaspoons vanilla extract
1-1/2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup water
1/2 cup confectioners' sugar

Steps:

  • In a microwave, melt 1 cup chocolate chips. Stir until smooth; set aside. Beat butter and sugar until crumbly, about 2 minutes. Add egg whites and vanilla; beat well. Stir in melted chocolate. , In another bowl, whisk together flour, baking powder and salt; gradually add to butter mixture alternately with water. Stir in remaining chocolate chips. Refrigerate, covered, until easy to handle, about 2 hours., Preheat oven to 350°. Shape dough into 1-in. balls. Roll in confectioners' sugar. 2 pkg. (4 oz. each) BAKER'S Bittersweet Chocolate
3 Tbsp. butter
2 eggs
1 Tbsp. honey
2/3 cup sugar, divided
3/4 cup finely ground almonds
2 tsp. unsweetened cocoa powder

Steps:

  • Microwave bittersweet chocolate and butter in small microwaveable bowl on HIGH 1 min.; stir until chocolate is completely melted and mixture is well blended.
  • Beat eggs in large bowl with mixer until thick and lemon colored. Blend in honey. Gradually add 1/3 cup sugar, beating well after each addition. Continue beating 10 min. or until mixture is thickened and falls from spoon in thick ribbons. Blend in bittersweet chocolate mixture. Add nuts and cocoa powder; mix well. Refrigerate 6 hours.
  • Heat oven to 325°F. Shape dough into 36 (1-inch) balls; roll in remaining sugar until evenly coated.
  • Place, 2 inches apart, on parchment-covered baking sheets.
  • Bake 12 min. or just until centers are set. (Do not overbake.) Cool on baking sheet 1 min. Remove to wire racks; cool completely.

Fold in the flour mixture just until it disappears. Chill the dough for about an hour or two. Make into balls, roll in granulated sugar and then powdered sugar.
