MASCARPONE CHOCOLATE TOFFEE BARS
Steps:
- Position an oven rack in the middle of the oven. Preheat the oven to 350 degrees F.
- Spray a 7 by 10 3/4-inch nonstick baking pan with vegetable cooking spray. Lay a 6 by 18-inch piece of parchment paper in the pan, allowing the excess paper to overhang the sides. Spray the parchment paper lightly with cooking spray.
- In a medium bowl, combine the cookie dough, 1/2 of the chopped chocolate-toffee candy pieces and vanilla extract. Using damp fingers, gently press the dough into the prepared pan. Using the tines of a fork, prick the dough all over. Bake for 12 to 14 minutes until the crust is lightly browned. Cool for 15 minutes.
- Place the chocolate chips and vegetable oil in a medium bowl. Place the bowl over a pan of simmering water and stir until the chocolate has melted. Cool the chocolate mixture for 10 minutes. Whisk in the mascarpone cheese until the mixture is smooth. Using a spatula, spread the chocolate mixture over the cooled crust. Sprinkle the remaining chocolate-toffee candy pieces and sliced almonds over the chocolate mixture. Refrigerate for at least 2 hours until the chocolate layer is firm.
- Peel off the parchment paper and cut into 1 1/2 by 2-inch bars. Serve at room temperature.
- *Cook's Note: To toast almonds, arrange in a single layer on a baking sheet. Bake in a preheated 350 degrees F oven for 8 to 10 minutes until lightly browned.

These bars take a little extra time to make but are well worth it! Be sure to use Eagle Brand sweetened condensed milk (or another brand you are familiar with) for best results. Several people have requested this recipe so I decided to post it and forward them all copies. Enjoy!

Steps:
- Preheat oven to 350° (325° glass pan).
- Grease 9x13 pan.
- To prepare crust, cream all ingredients until very well blended.
- Press evenly into pan.
- Bake for 20 minutes or until light brown.
- Set aside to cool while making the filling.
- Heat milk and margarine on stove, stirring constantly, until thickened.
- This will take 5-10 minutes.
- Spread over crust.
- Bake for 15 minutes, until golden brown.
- Sprinkle evenly with chocolate chips.
- Return to oven for 2 minutes to melt the chocolate.
- Remove from oven and spread chocolate smooth.
- Sprinkle toffee bits on top.
- Using the back of a spoon, gently press the toffee into the melted chocolate.
- Cool completely.
- Cut into bars before refrigerating.

- Preheat the oven for 375F.
- Grease a cookie sheet - either a 15x10 or 17x11.
- With an electric mixer, cream the butter with the white and brown sugar until smooth. Beat in the eggs and vanilla.
- Whisk the baking soda, baking powder and salt in with the flour, then slowly beat the flour into the creamed ingredients until smooth and no longer lumpy.
- With a wooden spoon or mixer on low, add the chocolate chips and Skor toffee bits until evenly combined.

- 1. Preheat the oven to 350
- 2. To prepare crust: Melt 1/2 cup butter and pour into a 9×13 baking dish. Add your crushed shortbread cookies and 3/4 cup of Toffee Bits. Stir to combine and press evenly into pan. Bake for 10 minutes until just starting to golden up.
- 3. While the crust is baking prepare your top layer: Cream butter and sugars together until smooth. On medium speed, add in your eggs and vanilla. Turn mixer to low and add in your dry ingredients (baking soda, salt and flour) stirring until just combined. Now add in your toffee chips and chocolate chips. Set this aside. When you crust is done remove from oven and let cool on a wire rack while you prepare the filling.
- 4. For middle layer: In a medium saucepan melt your peanut butter chips, semi sweet chips, butter and sweetened condensed milk over low, stirring frequently until completely melted.
- 5. Pour middle fudge layer over the crust and spread evenly to coat.
- 6. Drop spoonfuls of the 'cookie dough' topping evenly over the fudge layer.
- 7. Bake 25 minutes until topping is set. Let cool completely (at least 2 hours) before cutting to allow bars to set up.
