1 ripe avocado - peeled, pitted, and diced
1 tablespoon mayonnaise
½ teaspoon salt
½ teaspoon garlic powder
¼ teaspoon onion powder
⅛ teaspoon cayenne pepper, or to taste
8 (8 inch) flour tortillas
2 tomatoes, diced
1 cucumber, sliced
1 green bell pepper, cut into strips
1 head lettuce, chopped
1 (8 ounce) package fresh mozzarella cheese, sliced

Steps:

  • Prepare spread: mash diced avocado, mayonnaise, salt, garlic powder, onion powder, and cayenne pepper in a bowl with a fork until well blended.
  • Assemble wraps: spread tortillas with a layer of avocado spread. Place diced tomatoes, cucumber slices, bell pepper strips, lettuce, and mozzarella cheese slices onto each wrap, leaving about 2 inches of space at the bottom. Fold bottoms up. Roll tortillas over vegetables firmly to enclose fillings.

200g butter
200g dark brown soft sugar
100g dark chocolate (we used 80%) broken into chunks
75ml brandy
1 tsp vanilla extract
250g raisins
250g currants
100g dried cranberries
100g dried sour cherries
100g mixed peel
200g self-raising flour
100g ground almonds
3 tbsp cocoa
1 tsp mixed spice
3 eggs , beaten with a fork

Steps:

  • Put the butter, sugar, chocolate, brandy, vanilla and dried fruits into a large saucepan. Heat gently, stirring occasionally until everything has melted together. Remove from the heat.
  • Heat oven to 150C/130C fan/gas 2. Line a deep cake tin, 20cm round or 18cm square, with a double layer of baking parchment. Wrap a few layers of newspaper around the outside and secure with string.
  • Mix the flour, almonds, cocoa and spice together. Stir the eggs into the slightly cooled chocolate mixture in the saucepan, followed by the flour mixture. Scrape into your prepared tin and bake for 1½ hrs- 1 hr 45 mins or until a skewer poked in comes out clean. Cool in the tin, then decorate (see 'Goes well with', right, for decoration ideas). Greaseproof-wrapped cake will keep for 2 months in an airtight container.

  • Spread cream cheese evenly over the tortillas. Top the cream cheese with lettuce leaves. Arrange the turkey slices in even layers on top of the lettuce. 1 teaspoon salt
3 eggs
1 cup white sugar
½ teaspoon almond extract
1 cup semisweet chocolate chips
1 cup chopped dates
½ cup maraschino cherries, chopped
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Stir flour, baking powder and salt together. Beat eggs until light; add sugar gradually, beating well after each addition.

1 pound ripe apricots, plums, peaches, strawberries, or blueberries, washed and coarsely chopped
2/3 cup sugar

Steps:

  • In a medium saucepan, combine fruit and sugar over low heat, stirring until sugar is dissolved. Raise heat to medium-low; bring mixture just to a simmer. Cook, stirring occasionally, until mixture is thick and fruit is very soft, 30 to 40 minutes.
  • Preheat oven to 200 degrees. Line a baking sheet with a Silpat or parchment paper; set aside. Using an immersion blender, or food processor fitted with the steel blade, puree until very smooth. Strain through a fine mesh sieve.
  • Spread strained fruit mixture evenly over prepared baking sheet. Bake until dry, but still tacky, about 2 hours. Cool completely.
  • Cover surface of fruit with parchment paper. Invert onto cutting board; parchment side down. Peel off Silpat. With the pizza wheel, cut fruit in half lengthwise and again in half crosswise, forming four equal rectangles. Cut through parchment with a knife to separate. Roll each rectangle up tightly in parchment paper beginning with the short side of the fruit that does not have extra parchment paper. This will allow you to peel the fruit from the parchment paper. Store them in an airtight container for up to 2 weeks.
