GRANDMA'S CHOCOLATE ZUCCHINI BROWNIES
Moist and wonderful chocolate brownies, no frosting needed. These are perfect right out of the oven!

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Grease a jelly roll pan.
- Sift flour, cocoa powder, baking soda, and salt together in a bowl.
- Beat the butter and 1 1/2 cups sugar with an electric mixer in a large bowl until smooth. Beat the first egg into the butter until completely blended, then beat in the vanilla extract with the last egg. Mix in the flour mixture until just incorporated. Fold in the zucchini; mixing just enough to evenly combine. Pour mixture into prepared pan. Sprinkle the remaining 2 tablespoons sugar, chocolate chips, and walnuts on top.
- Bake in the preheated oven until the top is dry and the edges have started to pull away from the sides of the pan, 25 to 30 minutes.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
- In a large bowl, mix together the oil, sugar and 2 teaspoons vanilla until well blended. Combine the flour, 1/2 cup cocoa, baking soda and salt; stir into the sugar mixture. Fold in the zucchini and walnuts. Spread evenly into the prepared pan.
- Bake for 25 to 30 minutes in the preheated oven, until brownies spring back when gently touched.
- Make frosting while brownies cool. Melt together the 6 tablespoons of cocoa and margarine; set aside to cool.
- Meanwhile, blend together the confectioners' sugar, milk and 1/2 teaspoon vanilla. Stir in the cocoa mixture. Spread over cooled brownies before cutting into squares.

- Preheat oven to 350.
- In a bowl, cream together butter,sugar and eggs until very creamy and well blended.
- Add salt.
- Stir in flour,mixing to blend well.
- Add chocolate syrup, vanilla and chopped nuts.
- pour mixture into well greased and floured 9 inch square baking pan,
- Smooth top.
- Bake for about 35 minutes or until toothpick inserted into middle of cake comes out clean.

- Heat oven to 350°F.
- Grease 8-inch square pan.
- In a large bowl, combine 1/2 cup margarine and sugar; beat until light and fluffy.
- Add eggs, 1/2 cup chocolate syrup and vanilla; beat well.
- Stir in flour and salt.
- Pour into greased pan.
- Bake at 350°F for 25 to 30 minutes or until toothpick inserted in center comes out clean.
- Cool completely.
- In small bowl, combine all frosting ingredients, adding enough milk for desired spreading consistency; beat until smooth.
- Spread over cooled brownies.
- Cut into bars.
- Enjoy!
- Microwave Directions: Grease 10x6-inch (1 1/2 qt.) microwave-safe dish.
- Prepare brownies as directed above.
- Pour into greased dish.
- Microwave on MEDIUM for 8 minutes, rotating dish 1/2 turn halfway through cooking.
- Microwave on HIGH for 2 to 3 minutes or until center is set.
- Cool completely on flat surface.
- Prepare frosting and frost as directed above.
- Cut into bars.

- For the Brownies:.
- Cream butter and sugar.
- Add eggs and chocolate syrup. Mix until well blended.
- Add flour and mix well.
- Add nuts.
- Bake in a 9 x 13-inch cake pan for 30 minutes at 350 degrees.
- For the Frosting:
- Boil sugar, margarine, and milk for 1 minute.
- Remove from heat and add l/2 cup chocolate chips.
- Stir until thick, then quickly spread over brownies (when brownies are cool). This frosting thickens quickly.

- Preheat oven to 180°C and line a brownie tin with baking paper. Grate zucchini and place it in a colander. Place a heavy bowl on top to weigh it down. This will remove excess water. Set zucchini aside.
- In a large bowl, sift spelt flour, carob powder, baking powder and salt. Fold in carob chunks. Cut a few dates into chunks and add to the bowl.
- In a blender, combine remaining ingredients and blend until light and fluffy. Pour wet ingredients into dry ingredients, add zucchini and stir to combine. Pour mixture into brownie tin. Bake until brownie has risen and a toothpick comes out just a little wet. This will take about 35-40 minutes.
- Place on a wire rack to cool for 10 minutes, then remove brownie from the pan. Allow it to cool completely before slicing. Personally, I like it best the next day as it has more flavour but I'll admit, it's seriously hard to resist.
