SHRIMP SCAMPI WITH ASPARAGUS



Shrimp Scampi with Asparagus image

Sauteed shrimp is tossed with small ridged pasta shells, called conghiglie rigate, that are perfect for picking up the garlic-infused white wine sauce.

1/2 pound asparagus, sliced on a bias into 2-inch pieces
1 pound pasta, conghiglie rigate (shell-shaped)
Coarse salt
2 tablespoons extra-virgin olive oil, plus more for drizzling
2 pounds large shrimp, peeled and deveined
Freshly ground black pepper
5 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes, plus more for garnish
1 1/2 tablespoons freshly grated lemon zest
1/3 cup white wine
Juice of 1/2 lemon
1/4 cup chopped fresh parsley leaves

Steps:

  • Bring a large pot of water to a boil over high heat. Add asparagus to pot, simmer 30 seconds, and remove. Add the pasta and a generous pinch of salt to the pot and cook until al dente. Drain the pasta, reserving 1/2 cup of the pasta water.
  • Meanwhile, heat a large saute pan over high heat. Add 1 1/2 tablespoons of the oil and swirl it to coat the pan. Add the shrimp in a single layer. Sprinkle with salt and pepper. After 2 minutes, turn the shrimp over; add 1 tablespoon olive oil, the garlic, and the red pepper flakes. Stir constantly for 1 to 2 minutes, regulating the heat to avoid burning the garlic.
  • Add the lemon zest and white wine to the shrimp. Stir to reduce the wine slightly. Add the lemon juice, cooked pasta, cooked asparagus, and reserved pasta water to the pan. Toss to combine. Remove from the heat and sprinkle with parsley. Serve with a drizzle of olive oil and extra red pepper flakes on each serving.

1/2 teaspoon paprika

Pinch dried thyme
1/4 teaspoon crushed caraway seed
1/3 cup red-wine vinegar
1/3 cup vegetable oil
1 tablespoon ketchup
1/8 teaspoon Worcestershire sauce
2 cups trimmed and finely sliced asparagus (about 1 pound)
2 tablespoons finely sliced scallions, green and white parts
1/4 cup thinly sliced radish
1/2 teaspoon salt
4 medium sized Boston or bibb lettuce leaves, washed

Steps:

  • Make the dressing by combining the mustard, celery salt, pepper, paprika, salt, sugar, thyme and caraway seed in a medium bowl. Whisk in the vinegar, oil and 3 tablespoons of water. Transfer cup dressing to a small bowl, then whisk in the ketchup and Worcestershire sauce. Cover tightly and chill the remaining dressing for use in other salads.
  • Assemble the salad by lightly tossing the asparagus, scallions and radish together with the salt. Lay a cup-shaped lettuce leaf on each of 4 plates. Divide the mixture into the lettuce cups. Drizzle with the dressing. Serve immediately.

1 lb shrimp, cooked
1/2 cup red bell pepper, chopped
1 cup mayonnaise
1/4 cup parsley, finely chopped
1/2 teaspoon white pepper, freshly ground
1/2 teaspoon celery seed
1/2 teaspoon salt
1 tablespoon prepared horseradish
1/4 cup lemon juice, freshly squeezed
endive or green leaf lettuce
2 eggs, diced, hard-cooked
4 lemon wedges

Steps:

  • Cook green asparagus in boiling salted water until barely tender, about 1 minute.
  • If purple asparagus is tender, don't cook at all.
  • In mixing bowl, combine asparagus, shrimp and bell pepper.
  • In another bowl, mix mayonnaise, parsley, pepper, celery seed, salt, horseradish and lemon juice; stir into shrimp mixture.

1/2 cup diced red bell pepper
1/2 cup diced yellow bell pepper
1/2 cup diced orange bell pepper
1/2 cup diced green bell pepper
1/2 cup diced sweet onion
1/2 pint grape tomatoes, sliced in half
1 garlic clove, smashed and minced fine
1/2 fresh lemon, juice of
1 tablespoon rice wine vinegar
1 tablespoon honey
4 tablespoons extra virgin olive oil

Steps:

  • In medium-sized bowl, combine garlic, vinegar, lemon juice, honey, salt and pepper.
  • Drizzle in olive oil slowly, while whisking.
  • Drop in peppers, onions and tomatoes as you chop them.
  • Blanch asparagus: boil water, drop asparagus into the water and notice that the color turns a bright green, about 30 seconds, immediately remove asparagus with a slotted spoon to ice water to stop the cooking process.

1 pound fresh asparagus, trimmed
1 cup chopped fresh cauliflower
1 cup fresh broccoli florets
1/2 cup dry red wine
2 shallots, finely chopped, divided
1/4 cup olive oil
1/4 cup red wine vinegar
2 teaspoons Dijon mustard
1/4 teaspoon salt
1/4 teaspoon pepper
6 cups spring mix salad greens
1 bunch watercress
20 large shrimp, cooked, peeled and deveined
1 small fennel bulb, thinly sliced, fronds reserved
1/2 cup julienned sweet red pepper

Steps:

  • With a sharp knife, level the bottom of each artichoke and cut 1 in. from the top. With kitchen scissors, snip off tips of outer leaves. Place in a steamer baske in a large saucepan over 1 in. of water. Bring to a boil; cover and steam until leaves near the center pull out easily, 20-25 minutes. Add the asparagus, cauliflower and broccoli ; cover and cook until crisp-tender, 3-4 minutes. Drain. With a spoon, carefully remove and discard the fuzzy centers of the artichokes. Thinly slice artichoke hearts., Meanwhile, in a small saucepan, combine wine and 1 shallot. Bring to a boil; cook until liquid is reduced to about 2 tablespoons.   • Make dressing:
  • In a small bowl whisk together honey, mustard, lime juice, and tarragon. Add oil in a stream, whisking until emulsified, and season with salt and pepper.   • Have ready a large bowl of ice and cold water.   • In bowl with favas, toss together 1/3 cup dressing, asparagus, shrimp, mâche, frisée, and salt and pepper to taste. Drizzle salad with some of remaining dressing and garnish with chives.
