SPANISH CHORIZO, KALE AND CRANBERRY BEAN SOUP

Spanish Chorizo, Kale and Cranberry Bean Soup image

"I have been using kale in soups and side dishes in place of spinach for years."

Provided by Bobby Flay | Bio & Top Recipes

Time 10h

Yield 4 servings

Number Of Ingredients 11

2 cups dried cranberry or pinto beans, picked through
8 ounces Spanish chorizo, cut into1/4-inch-thick slices
4 cloves garlic, coarsely chopped
1 large carrot, peeled and finely chopped
1 stalk celery, finely chopped
1 large Spanish onion, finely chopped
1/2 bunch kale (about 8 ounces), stems removed, leaves coarsely chopped
8 cups chicken stock
1 cup dry white wine
Kosher salt
Olive oil, for drizzling

Steps:

  • Put the beans in a pot and cover with 4 cups water. Cover and set aside at room temperature to soak overnight. Drain.
  • Heat a large saucepan over medium-high heat. Add the chorizo and cook until lightly golden brown and the fat has rendered, about 5 minutes. Transfer the chorizo to a paper towel-lined plate with a slotted spoon and pour out all but 2 tablespoons of the rendered fat. (The amount of fat will vary depending on the chorizo that is used. If your chorizo does not render at least 2 tablespoons fat, add some olive oil.)
  • Add the garlic, carrot, celery and onion to the fat in the pan and cook over medium heat, stirring occasionally, until soft, 8 to 9 minutes. Add the kale and cook until slightly wilted, about 2 minutes. Add the stock, wine and 2 teaspoons salt; cover and bring to a boil.
  • Add the cranberry beans and cooked chorizo to the saucepan; lower the heat to a simmer and cook, uncovered, until the beans and kale are soft, about 1 1/2 hours. Ladle the soup into bowls and drizzle with olive oil.

Provided by Food Network Kitchen

Time 40m

Yield 4

Number Of Ingredients 17

1 tablespoon lard
1/4 cup minced onion
3 cloves garlic, minced
1/2 pound ground pork
1 teaspoon ancho chile powder
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon dried oregano
Pinch ground cinnamon
Pinch ground cloves
Kosher salt
Four 10-inch (burrito size) flour tortillas
2 cups shredded Cheddar
1 cup refried beans
1 jalapeno, chopped (seeds removed for less heat)
2 tablespoons unsalted butter
Guacamole, salsa, chopped scallions and sour cream, for serving

Steps:

  • Heat the lard in a large skillet over medium heat. Add the onion and garlic and cook, stirring, until soft, about 5 minutes. Add the ground pork, ancho powder, cumin, paprika, oregano, cinnamon, clove and 1/2 teaspoon salt and cook, stirring and breaking up the meat, until brown, about 4 minutes. Add 1/2 cup water, bring to a simmer and cook for 5 minutes. Transfer to a medium bowl.
  • Lay a tortilla on a work surface and top evenly with 1/2 cup Cheddar. Add 1/4 of the chorizo, 1/4 of the beans and some jalapeno. Fold the tortilla in half to enclose fillings. Repeat with remaining tortillas and ingredients.

  • Cut into triangles and serve with guacamole, salsa, chopped scallions and sour cream.

SUNNY'S EASY CHORIZO AND BEAN TACOS

Sunny's Easy Chorizo and Bean Tacos image

Provided by Sunny Anderson

Time 20m

Yield 6 tacos

Number Of Ingredients 10

3 tablespoons vegetable oil
1/2 cup chopped onions
8 ounces Mexican chorizo, casing removed and discarded
1 clove garlic, grated on a rasp
One 16-ounce can refried beans with green chiles
Eight to twelve 6-inch flour tortillas, kept warm in the oven
2 cups shredded Cheddar-Monterey Jack blend
4 radishes, thinly sliced
1/2 cup fresh cilantro leaves
2 to 3 tablespoons hot sauce, such as Cholula

Steps:

  • In a cast-iron or heavy-bottomed pan, heat the oil over medium-high heat. Add the onions and cook until soft, about 5 minutes. Add the chorizo and garlic, breaking up the chorizo with a wooden spoon to resemble ground meat. Cook through. Add the refried beans with a little water, if necessary, to get a smooth, not-too-dry consistency, and stir to combine with the chorizo and onions.
  • Make the tacos. Arrange the tortillas on a plate using two for each taco. Add the chorizo mixture, cheese, a few radish slices, a few cilantro leaves and a shake of hot sauce. Repeat for the remaining tortillas and filling.

BEAN AND BANANA DIP

Bean and Banana Dip image

This is an Ecuadorian recipe which I got from the book, "South American Cooking". The author suggests that it is good for tailgate parties. Unusual and maybe even a little "weird", but one of those combos that surprises you with how good it is. This would halve easily if you're not feeling daring and would rather make a smaller quantity. :)

Provided by Roosie

Categories     Tropical Fruits

Time 30m

Yield 3-4 cups

Number Of Ingredients 8

2 chorizo sausages or 2 mild Italian sausage, skinned and chopped
1 onion, finely chopped
2 garlic cloves, minced
2 -3 poblano chiles or 2 -3 other mildly hot chili peppers, seeded and minced
1/2 cup tomato sauce
2 cups cooked kidney beans (reserve some of the can or cooking liquid) or 2 cups canned kidney beans, slightly mashed (reserve some of the can or cooking liquid)
4 bananas, ripe but firm
tortilla chips, to serve

Steps:

  • In a large saucepan, sauté the sausage over medium-high for 5 minutes, stirring constantly to prevent sticking and break up the meat.
  • Add onion and continue to sauté until onion is soft.
  • Reduce heat to medium and add garlic, chiles, tomato sauce and cook for 5 more minutes.
  • Add beans and bananas and enough bean liquid to make a thick dip consistency.
  • Mash beans slightly with a spoon or potato masher and mix well.
  • Cover and cook over low heat for 5 minutes.
  • Serve warm with tortilla chips.

PORTUGUESE CHOURICO, BEANS, AND RICE

Portuguese Chourico, Beans, and Rice image

I grew up on chourico, and this dish is a Portuguese comfort food that my mom always made. I took it upon myself to replicate it with a bit more kick, but even with the changes, it reminds me of being a kid. It's such a warm and satisfying dish.

Provided by Raquel Teixeira

Categories     World Cuisine Recipes     European     Portuguese

Time 40m

Yield 2

Number Of Ingredients 11

2 cups water
1 cup uncooked white rice
2 tablespoons olive oil
1 dried chourico sausage, halved lengthwise and cut into 1/4-inch slices
¼ Spanish onion, finely chopped
3 cloves garlic, minced
1 ½ cups tomato sauce
½ teaspoon red pepper flakes
1 teaspoon Italian seasoning
salt and pepper to taste
½ (14.5 ounce) can fava beans, rinsed and drained

Steps:

  • Bring the water to a boil in a pot; stir the rice into the boiling water, reduce heat to low, place cover on the pot, and allow the rice to cook until all the moisture is absorbed, about 30 minutes.
  • As the rice cooks, heat the oil in a skillet over medium heat. Cook the chourico in the hot oil for 2 minutes. Add the onions and garlic to the sausage and continue cooking until the vegetables are soft and the chourico has browned, 5 to 7 minutes.
  • Stir the tomato sauce into the chourico mixture. Reduce heat to low. Season with the red pepper flakes, Italian seasoning, salt, and pepper; simmer until thoroughly heated, 10 to 15 minutes. Stir the fava beans into the mixture and continue cooking just long enough for the beans to heat, 2 to 3 minutes. Serve over rice.
