AREPAS STUFFED WITH CHILES, CHORIZO AND CORN



Arepas Stuffed with Chiles, Chorizo and Corn image

3 poblano peppers
2 to 3 teaspoons canola oil
3 scallions
1 ear corn, husked
4 ounces goat cheese, at room temperature
2 tablespoons grated Parmesan
2 links Mexican pork chorizo (about 8 ounces), finely diced
2 1/2 cups masa harina flour
1 teaspoon salt
2 tablespoons melted butter
2 tablespoons canola oil
Chopped fresh cilantro, for garnish
Lime wedges, for garnish

Steps:

  • For the filling: Preheat a grill to medium-high heat.
  • In a bowl, toss the poblano peppers with the canola oil. Place on the grill along with the scallions and corn and cook, turning occasionally, until the vegetables are nicely charred.
  • Immediately place the peppers in a bowl, cover with plastic wrap and let sit for 10 minutes to sweat and soften. Chop the charred scallions and put them into a large bowl. Cut the corn kernels off the ear and add to the bowl. Peel the skins off the peppers, finely chop and then add them to the corn and scallions. Stir in the goat cheese and Parmesan.
  • Heat a large saute pan on the grill, add the chorizo and cook until the oils are released and the chorizo is slightly browned, 3 to 4 minutes. Add the chorizo to the poblano-cheese mixture and gently fold together. Set aside until ready to use.
  • For the arepas: Combine the masa flour and salt in a large bowl. Pour in 2 1/2 cups hot water and, using a wooden spoon, stir to combine. Add in the melted butter, cover with plastic wrap and let rest for 10 minutes.
  • Divide the dough into 12 small balls. Place each ball in between two pieces of plastic wrap and flatten using a heavy-bottomed skillet or tortilla press to about 3 1/2 inches in diameter and 1/4 inch thick.
  • Heat the canola oil in a cast-iron skillet over medium heat. Fry the arepas until lightly browned--they should have a nice crust on the outside but still be soft inside--about 5 minutes per side.
  • Using a sharp knife, slice the arepas in half, similar to an English muffin. Stuff 1 to 2 teaspoons of the filling inside each. Garnish with some chopped cilantro and a squeeze of lime juice.

1 large onion, chopped
1 celery rib, chopped
1 teaspoon olive oil
2 garlic cloves, minced
3 cans (14-1/2 ounces each) reduced-sodium chicken broth
1 tablespoon sherry or additional reduced-sodium chicken broth
2 bay leaves
1 teaspoon dried thyme
1/2 teaspoon pepper
1 package (12 ounces) fully cooked chorizo chicken sausage links or flavor of your choice, chopped
1 cup half-and-half cream
1 cup shredded smoked Gouda cheese
1 medium sweet red pepper, chopped
2 green onions, chopped

Steps:

  • In a nonstick Dutch oven, saute the corn, onion and celery in oil until tender. Add garlic; cook 1 minute longer. Stir in the broth, sherry, bay leaves, thyme and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes. Discard bay leaves., Cool slightly. In a food processor, process soup in batches until blended. Return all to pan. Stir in sausage and cream; heat through. Sprinkle with cheese, red pepper and green onions.

Number Of Ingredients 10

2 large poblano chiles
3/4 lb chorizo pork sausage
3 cans corn (do not drain (or 4 1/2 cups fresh or frozen corn))
2 cups chicken broth
1 cup heavy cream
kosher salt (to taste (this will depend on how salty your sausage and your broth are))
freshly ground black pepper (to taste)
1/2 small red onion (sliced as thinly as possible)
12 large basil leaves (finely sliced)
1 lime (cut into wedges)

Steps:

  • Preheat the oven to broil. Move the top oven rack to about 6 inches from the broiler. Place the chiles on a foil lined or well greased baking pan and broil for 15-18 minutes, turning over every 2-3 minutes. (Set a timer and be ready to turn them several times.) You want the chiles to be soft and blackened all over when you remove them from the oven. Transfer the roasted chiles to a dish with a lid (or a dish that can be tightly covered with foil). Cover and let rest for 10-15 minutes. The blackened portions should peel right off after resting. Peel and seed the chiles and chop into 1/4" - 1/2" pieces.
  • In a large pot, cook and crumble the chorizo over medium heat, about 6-7 minutes. Drain the grease well and add the corn and broth. Bring to a boil and then reduce to a simmer just until the corn is tender and warm. Add the cream and poblanos. Stir and cook for about 2 more minutes, just to blend the flavors. Taste the broth and add salt and pepper, to taste.
  • Scoop into bowls and top with onions and basil. Serve with a wedge of lime for squeezing on top. Enjoy!

1 pound chorizo sausage
1 (10 ounce) can diced tomatoes with green chile peppers
1 small onion, diced
1 small carrot, grated
1 small stalk celery, grated
2 tablespoons minced garlic
1 teaspoon Worcestershire sauce
1 teaspoon adobo seasoning
1 teaspoon dried basil
1 teaspoon dried cilantro
1 cup cooked long-grain rice
1 tablespoon chopped fresh parsley
olive oil cooking spray
4 poblano peppers, halved and seeded
½ cup water
⅛ cup shredded Cheddar cheese
⅛ cup shredded mozzarella cheese
⅛ cup shredded pepper Jack cheese

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir chorizo in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Add tomatoes, onion, carrot, celery, garlic, Worcestershire sauce, adobo, basil, and cilantro to the skillet with the chorizo. Simmer for 5 minutes. Add rice and simmer for 5 minutes more. Remove from heat, add fresh parsley, and let rest.
  • Preheat the oven to 350 degrees F (175 degrees C). Spray a baking dish with cooking spray.
  • Stuff each poblano pepper half with the chorizo mixture; lay in the baking dish. Add water to the bottom of the dish. Loosely cover with aluminum foil.
  • Bake in the preheated oven until peppers are tender but still firm, about 1 hour. Remove foil and sprinkle peppers with Cheddar, mozzarella, and pepper Jack cheeses.
  • Turn on the broiler; broil peppers until cheese is brown and bubbly, 3 to 4 minutes.

50 g butter
1 small onion, finely chopped
4 garlic cloves, chopped
500 g floury potatoes, cubed
1 leek, thinly sliced
1 teaspoon cayenne
1 liter vegetable stock
250 g chorizo sausages, cut into 1 cm wide slices
salt & freshly ground black pepper

Steps:

  • Heat the butter in a large pan and cook the onion, garlic and potatoes for 5 minutes until lightly golden.
  • Add the leek and cayenne and cook for a further 1 minute.
  • Add the stock, bring to the boil and simmer for 20 minutes until the potatoes are very soft and beginning to break up into the soup.
  • Using a potato masher, roughly mash the potatoes into the soup.
  • Stir in the chorizo and simmer gently for 5 minutes until the orange coloured oil from the chorizo rises to the surface of the soup.
  • Check the seasoning, ladle into bowls and garnish with a sprig of flat leaf parsley.
  • Serve with lots of crusty bread for mopping up.

  • Brown the chorizo in a pot that holds at least 4 quarts. Unless the sausage is really lean, you don’t need to add oil yet.
  • When the sausage is browned, add the diced onion, celery, potato, and butter. Reduce the heat to medium-low and sweat these vegetables until they are about halfway tender (10 minutes or so).

  • Blend 3 cups corn kernels and 1 1/2 cups broth in processor to coarse puree. Transfer to large bowl. Heat oil in heavy large skillet over medium heat. Add chorizo and sauté until beginning to brown, about 3 minutes. Using slotted spoon, transfer chorizo to small bowl.
  • Add onion and remaining 3 cups corn kernels to same skillet; sprinkle with salt and pepper. Sauté over medium-high heat until onion begins to soften, 5 to 6 minutes. Add potatoes and stir until potatoes begin to soften, about 2 minutes (corn may begin to brown slightly). Transfer corn mixture to large pot. Add dried thyme, cayenne, reserved pureed corn mixture, and remaining 2 1/2 cups broth to pot. Bring just to boil. Reduce heat to medium and simmer uncovered until potatoes are tender, 10 to 12 minutes. Add half and half and chorizo. Simmer uncovered until heated through, about 2 minutes. Season chowder to taste with salt and pepper. Simmer 5 minutes longer to thicken, if desired. DO AHEAD Soup can be made 1 day ahead. Cool, cover, and chill. Rewarm over medium heat, stirring often (do not boil).
