1 cup cooked chicken, cubed
3 tbsp butter
2 cloves garlic, minced
1/4 cup chopped onion
1 cup chopped celery
1/4 cup diced red pepper
2.5 oz sliced mushrooms (about 3/4 cup)
1/2 cup chicken broth
1 284ml tin Cream of Chicken Soup
1/8 tsp ground ginger
2 tbsp Parmesan cheese
1/2 cup cashew pieces, chopped
2 1/2 oz sliced water chestnuts, drained and rinsed
2.5 oz chow mein noodles (reserve 1 oz for casserole topping)

Steps:

  • Grease 1½ quart casserole and set aside. Preheat oven to 350°F.
  • Melt butter in skillet over medium heat. Sauté garlic, onion, celery, red pepper, and mushrooms, stirring constantly, for 3-4 minutes, just until the onions are transparent.
  • Combine the chicken broth and soup together in bowl or large measuring cup. Stir in the ground ginger and Parmesan cheese. Transfer the sautéed vegetables to large bowl and add the chicken, soup mixture, cashew pieces, and water chestnuts. Mix together. Carefully fold in 1½ oz chow mein noodles. Transfer mixture to prepared casserole and sprinkle with remaining 1 oz chow mein noodles.
  • Bake for 30-35 minutes, or until casserole is hot and bubbly.

This simple casserole version of chicken chow mein makes great use of leftover chicken or turkey and is easy on the budget and your time. I don't measure or weigh the amount of chicken I use but the original recipe calls for 3 pounds so I've left the recipe that way. I just use whatever I have left over, or I'll stew a few chicken breasts or pieces if I'm starting from scratch. If you've got 2-3 cups of chicken you'll be in good shape. For a little extra kick add some red pepper flakes. You can easily cut this recipe in half for a smaller family.

1 (12 ounce) can chow mein noodles (the crunchy kind)
2 cups celery, chopped
1 cup onion, chopped
1/4 cup green pepper, chopped
3 lbs cooked chicken, cut up
2 (11 ounce) cans cream of mushroom soup
1 (11 ounce) can water
1 tablespoon soy sauce (I prefer Kikkoman's Lite)

Steps:

  • Preheat oven to 350 degrees F.
  • In bottom of 9x13 casserole dish, put a layer of chow mein noodles followed by chicken and vegetables. Top with remaining noodles.
  • Mix soup with 1 can of water. Spoon soup mixture over vegetables.
  • Drizzle soy sauce over all.
  • Bake at 350°F for 30-40 minutes.

3 ribs celery (medium-large, sliced)
3 carrots (medium-large, peeled and julienned.)
1 large red bell pepper (deseeded and chopped )
1 medium yellow onion (peeled and diced)
3 cloves garlic (crushed)
21 oz condensed cream of chicken soup (2 - 10.5 oz cans)
1 cup milk
1 Tbsp soy sauce
1/4 tsp black pepper
4 cups chicken (cooked and chopped)
3 cup cooked rice (1 cup of uncooked rice will equal 3 cups cooked rice.)
2 1/2 cups chow mein noodles

Steps:

  • Preheat the oven to 375F. Lightly spray the inside of a 9 by 13-inch casserole dish with cooking spray.
  • Add the butter to a large, deep skillet over medium heat. Once melted, add the celery, carrot, red bell pepper, and onion, and turn the heat up to high. Cook, stirring constantly until the vegetables are starting to soften, about 3 to 5 minutes.
  • Turn the heat back down to medium. Add the garlic and cook 30 seconds, stirring constantly.
  • Add the condensed cream of chicken soup, milk, soy sauce, and black pepper. Stir to combine.
  • Stir in the chicken and rice.
  • Transfer the mixture to the prepared casserole dish. Spread the chow mein noodles evenly on top. Cover the dish with aluminum foil.
  • Bake until the casserole is warm throughout, about 30 minutes.
  • Serve topped with sliced scallion and minced red bell pepper.

½ cup chopped mushrooms
2 cups chopped celery
2 onions, chopped
¼ teaspoon garlic powder

⅓ cup cold water

1 clove garlic, minced
1 pound skinless, boneless chicken breasts, cut into bite-sized pieces
1 tablespoon vegetable oil
1 (8.5 ounce) package chow mein noodles
¾ cup chicken stock
4 tablespoons oyster sauce
½ teaspoon white sugar
2 teaspoons soy sauce
2 teaspoons cornstarch
2 teaspoons vegetable oil
2 cloves garlic, minced
1 medium head bok choy, chopped
1 medium carrot, sliced

Steps:

  • Combine soy sauce, cornstarch, sesame oil, and garlic for marinade in a glass or ceramic bowl. Add the chicken and marinate for at least 30 minutes.
  • Heat 1 tablespoon vegetable oil in a saute pan over medium-high heat. Add the chicken. Stir-fry until lightly browned and cooked through, 3 to 5 minutes. Transfer cooked chicken to a plate for later.
  • Meanwhile, bring a large pot of water to a boil. Add noodles and cook over medium heat until cooked through but still firm to the bite, 4 to 5 minutes. Drain and rinse with cold water.
  • Whisk chicken stock, oyster sauce, soy sauce, and cornstarch together in another bowl. Set aside.
  • Heat 2 teaspoons vegetable oil in the same pan you cooked the chicken in over medium-high heat. Add garlic. Add bok choy and carrot; stir-fry until tender, about 5 minutes.
