CHICKEN CHOW MEIN CASSEROLE
An easy-to-prepare flavorful casserole that makes great use of leftover chicken.

Steps:
- Grease 1½ quart casserole and set aside. Preheat oven to 350°F.
- Melt butter in skillet over medium heat. Sauté garlic, onion, celery, red pepper, and mushrooms, stirring constantly, for 3-4 minutes, just until the onions are transparent.
- Combine the chicken broth and soup together in bowl or large measuring cup. Stir in the ground ginger and Parmesan cheese. Transfer the sautéed vegetables to large bowl and add the chicken, soup mixture, cashew pieces, and water chestnuts. Mix together. Carefully fold in 1½ oz chow mein noodles. Transfer mixture to prepared casserole and sprinkle with remaining 1 oz chow mein noodles.
- Bake for 30-35 minutes, or until casserole is hot and bubbly.
CHICKEN CHOW MEIN CASSEROLE
This simple casserole version of chicken chow mein makes great use of leftover chicken or turkey and is easy on the budget and your time. I don't measure or weigh the amount of chicken I use but the original recipe calls for 3 pounds so I've left the recipe that way. I just use whatever I have left over, or I'll stew a few chicken breasts or pieces if I'm starting from scratch. If you've got 2-3 cups of chicken you'll be in good shape. For a little extra kick add some red pepper flakes. You can easily cut this recipe in half for a smaller family.

- Preheat oven to 350 degrees F.
- In bottom of 9x13 casserole dish, put a layer of chow mein noodles followed by chicken and vegetables. Top with remaining noodles.
- Mix soup with 1 can of water. Spoon soup mixture over vegetables.
- Drizzle soy sauce over all.
- Bake at 350°F for 30-40 minutes.
- Enjoy!

- Preheat the oven to 375F. Lightly spray the inside of a 9 by 13-inch casserole dish with cooking spray.
- Add the butter to a large, deep skillet over medium heat. Once melted, add the celery, carrot, red bell pepper, and onion, and turn the heat up to high. Cook, stirring constantly until the vegetables are starting to soften, about 3 to 5 minutes.
- Turn the heat back down to medium. Add the garlic and cook 30 seconds, stirring constantly.
- Add the condensed cream of chicken soup, milk, soy sauce, and black pepper. Stir to combine.
- Stir in the chicken and rice.
- Transfer the mixture to the prepared casserole dish. Spread the chow mein noodles evenly on top. Cover the dish with aluminum foil.
- Bake until the casserole is warm throughout, about 30 minutes.
- Serve topped with sliced scallion and minced red bell pepper.

- Combine 1 cup soy sauce, pineapple juice, brown sugar, ginger, and garlic in a multi-functional pressure cooker (such as an Instant Pot®). Place chicken on top. Turn on Saute function and cook for about 8 minutes, stirring occasionally. Cancel saute function. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
- Meanwhile, combine 2 tablespoons soy sauce, hoisin sauce, water, oyster sauce, rice vinegar, and brown sugar in a bowl. Set sauce aside.
- Heat sesame oil in a large skillet or wok over medium-high heat. Stir in onion and cook until soft and translucent, about 3 minutes. Stir in fresh chow mein noodles, cabbage, celery, mushrooms, carrots, and peas. Cook and stir until vegetables are tender, about 5 minutes. Mix sauce into the skillet and toss everything together until well combined and heated through, about 2 minutes. Serve with the shoyu chicken.

- In a wok or skillet, melt butter or margarine over medium heat. Add mushrooms, celery, onions and garlic powder; cook until the onions have wilted. Add chicken broth and baby corn. Continue cooking until celery is cooked but still crisp. Stir in the green beans or bean sprouts and soy sauce.
- Mix cornstarch and water together in a small bowl. Slowly stir into vegetables. Sauce should start to thicken a little. Mix in chicken, and heat through.

- Combine soy sauce, cornstarch, sesame oil, and garlic for marinade in a glass or ceramic bowl. Add the chicken and marinate for at least 30 minutes.
- Heat 1 tablespoon vegetable oil in a saute pan over medium-high heat. Add the chicken. Stir-fry until lightly browned and cooked through, 3 to 5 minutes. Transfer cooked chicken to a plate for later.

- Lightly brown hamburger and drain off excess fat.
- Add pepper, onion and celery plus enough water to cover.
- Simmer for 20 minutes.
