CHRISTMAS BUBBLE BREAD

if your looking for a easy tasty holiday bread then look no further. this bread recipe is very simple and packed with flavor. i love the combination of the dried cranberries and the golden raisins with the smell of the cinnamon as it bakes in the oven. make this bread and give it as a gift. they will love it! it's diabetic ok if you use splenda. i don't use the sugar or butter on top and i may or may not put splenda into the dough according to mood. it's fine to vary the fruits. i used red and green cherries last time i made this, i have also used chopped dried apricots and golden raisins. prep time includes rising time **for a real treat you can make extra of this bread and use it to make a bread pudding or french toast.

Number Of Ingredients: 11

Ingredients: milk,egg,butter,flour,sugar,salt,dried cranberries,golden raisin,cinnamon,instant yeast,powdered sugar

Steps:

  1. pour your milk into a medium size saucepan
  2. add the soft butter and heat till the butter is melted
  3. pour the milk and the melted butter into a large bowl
  4. check the temperature of the milk
  5. you want it to be between 100 and 110
  6. take your room temperature egg and brake it into a small bowl
  7. with a fork , beat the egg and add it to the milk mixture
  8. add about 1 cup of flour and mix together with a wooden spoon
  9. add in the instant dry yeast and the ground cinnamon to the mixture
  10. using the wooden spoon beat till well blended
  11. add in the sugar and salt
  12. mix together
  13. add the rest of the flour and mix
  14. place dough onto a lightly floured surface and knead the dough
  15. using the palm of your hands , push the dough away with a rolling motion
  16. fold the dough back toward yourself
  17. then give the dough a quarter turn
  18. continue this sequence of pushing , folding and turning
  19. knead the dough for about 6-8 minutes
  20. adding flour as you need it
  21. after pour a little oil into a clean bowl
  22. place the kneaded dough into the bowl and give it a turn to coat all sides of the dough', "cover with plastic wrap and allow to bulk up to double it's size", 'this will take about 1 hour
  23. after the dough has doubled in bulk , pour out onto a lightly floured surface
  24. flatten the dough and add the cranberries and the golden raisins
  25. knead the dough till the dried fruit is evenly spread throughout the dough
  26. shape the dough into a rectangle
  27. cut the dough with a sharp knife into three equal sizes
  28. after you cut the dough into three equal parts
  29. cut each piece of dough in half again
  30. then cut each piece again in half
  31. you should end up with 12 equal size pieces
  32. grease a 9 x 9 square pan
  33. roll each dough into a ball and place them into the pan 4 down 3 across
  34. cover the dough with plastic wrap once again
  35. allow to double in size
  36. this will take about 1 hour
  37. place pan into a preheated 350f oven for 25 to 30 minutes
  38. or , till a thermometer is placed into the center of the bread in the middle and the temperature reads between 190 - 200
  39. remove from pan
  40. while the bread is still hot brush with melted butter
  41. as soon as you brush the melted butter on the top of the bread
  42. immediately tap a layer of powder sugar over the top with a sieve or sifter
  43. enjoy this wonderful bread
