CHRISTMAS FRUITCAKE
It's a shame that fruitcake as a species gets such a bad rap. With its two key ingredients--rum and butter--it ought to be a hit. This recipe includes dried fruit, instead of the glowing, candied stuff we've all learned to associate with fruitcake, and is less dense and more cake-like than many fruitcake recipes. It has become a favorite of my friends and family around the holidays (even the skeptical ones), and is delicious by itself, or covered with a layer of almond paste.

Steps:
- Soak cherries, mango, cranberries, currants, and citron in 1/4 cup rum for at least 24 hours. Cover tightly, and store at room temperature.
- Preheat oven to 325 degrees F (165 degrees C). Butter a 6x3-inch round pan or loaf pan and line it with parchment paper.
- In a large bowl, cream together butter and brown sugar until fluffy. Beat in egg. Whisk together flour, baking soda, salt, and cinnamon; mix into butter and sugar in three batches, alternating with molasses and milk. Stir in soaked fruit and chopped nuts. Scrape batter into prepared pan.
- Bake in preheated oven for 40 to 45 minutes. Cool in the pan for 10 minutes, then sprinkle with 2 tablespoons rum.
- Cut out one piece parchment paper and one piece cheesecloth, each large enough to wrap around the cake. Moisten cheesecloth with 1 tablespoon rum. Arrange cheesecloth on top of parchment paper, and unmold cake onto it. Sprinkle top and sides of cake with remaining rum. Wrap the cheesecloth closely to the surface of the cake, then wrap with paper. Place in an airtight tin, and age for at least 10 weeks. If storing longer, douse with additional rum for every 10 weeks of storage.

CHRISTMAS FRUIT PUDDING CAKE
This is a moist cake. I'm not sure why it's called pudding cake since there is no pudding in it. My mom only cooks on the holidays (and even then it's rare), but she is a good cook and has a lot of great recipes for holiday parties. This is one of them.

CHRISTMAS SPECIAL FRUITCAKE
I've made this quick and easy Christmas fruit cake many times during the past several years, giving it to family and friends for gifts. I also gave one to my doctor, and he claims it's the best he's ever tasted.

Steps:
- Put the dried fruit, cherries, apple, zests, apple juice, brandy and Cointreau in a large bowl. Microwave on High for 1 min, then leave to soak overnight.
- Butter and line a 2lb loaf tin with a strip of non-stick baking paper. Heat oven to 180C/160C fan/gas 4. Put the kettle on to boil and have a roasting tin, plus a sheet of buttered foil, ready.
- Beat the butter and sugar together until it turns a little paler, then stir in the eggs, flour, breadcrumbs, syrup, spices, salt, soaked fruit and the nuts. Spoon into the loaf tin and smooth the top. Scrunch the foil loosely over the tin, twisting corners to tighten it around the tin's edges. Sit it in the roasting tin, then pour in a few cms of boiling water. Carefully transfer to the oven and bake for 40 mins.
- After 40 mins, turn down the oven to 160C/140C fan/gas 3 and cook for another 1½ hrs, topping up the water level every now and again.
- To reheat the pudding, either return it to a medium oven for 30 mins in its tin, or turn out onto a serving plate, cover loosely with cling film and microwave for 5 mins on Medium. For the topping, gently heat the butter, sugar and syrup together until the sugar dissolves, stir in the brandy, then tip in the nuts and fruit. Spoon over the hot pudding and dust with a little icing sugar, if you like.

MINI CHRISTMAS PUDDING TREATS
A great little treat that look like Christmas puddings. These little puddings are so quick and simple to prepare. They always disappear quickly. You can use orange juice or water with a little brandy essence if you do not wish to add the alcohol. Measurements are all approximations- the mixture should be moist enough to easily roll into small walnut sized balls. Use any purchased Christmas fruit cake-even home brand turns out OK. Any sized cake is OK. You can add some extra diced glace cherries if you wish. My brother-in-law originally made these from a magazine about ten years ago- we have been making them every Christmas since.

Steps:
- Crumble the fruitcake with your hands into a mixing bowl.
- Stir in the brandy and mix thoroughly. Add enough of the brandy (or substitute) so that the mixture will easily roll into walnut sized balls. Roll into balls using your hands.
- Place the rolled balls onto a lined baking tray.
- Melt the chocolate and drizzle over the balls to represent the custard. Use a teaspoon and let the chocolate run down the sides of the little puddings.
- Chop the snake lollies using scissors into small slices. Add two green and one red piece to the top of the puddings. Position the lolly pieces lose together, these become the holly atop of the puddings.
- Refrigerate until the chocolate has set. Store in an airtight container and keep refrigerated.

- For the all-in traditionalist. This trad rich, boozy fruit cake carries all the usual suspects: glacé ginger, pineapple and cherries, golden syrup, sultanas and Nana’s secret ingredient - rum.
- For a native ingredient upgrade. Our cherry and macadamia fruitcake is dense with brandy-soaked fruit and spices, with the addition of sour dried cherries, macadamias and orange zest and juice.
- For those who like their cake more boozy than fruity. This Colombia version, torta negra, is dense with prunes, raisins and figs, generously spiked with both rum and port.
- For gin lovers. This Dutch fruitcake is loaded with gin-soaked raisins. It's a lighter-style fruitcake with only raisins as the star - finished with an apricot jam glaze (and glacé cherries to decorate are optional).
- For whisky lovers. A light whisky fruitcake that still packs a punch, fragrant with orange rind and easy-to-make oven-dried orange slices.
- For those who want a fruitcake they've never tasted before. Could the best Christmas cake you’ll ever eat come from Sri Lanka? It's much closer to a flourless cake or a brownie than some of the rock-hard missiles that pass for Christmas cake - the secret is choko preserve.
- For those who've left their pudding to the last minute. This Christmas Day pudding is for you. Aptly named, this fruity number can be made on Christmas Day itself!
- For the pudding lover. This brandied sago pudding a lot simpler to make than traditional plum pudding - it still uses suet and breadcrumbs for texture, with dried cherries adding some glamour.
- For those who don't want to miss out on their pudding but want to stay cool. Enter the frozen summer fruit semifreddo pudding. We've given the chilled Italian custard a decidedly summery feel with mangoes, passionfruit, pomegranate and peaches.
- For the big kids in us all. These boozy Christmas pudding popsicles, laden with brandy and plenty of spice, come with a melted chocolate shell and a maraschino cherry on top!
