400 g Flour
260 ml Milk
180-200 g Butter (unsalted)
4 tbsp Sugar (60 gms)
1/4 tsp Salt :1/4 Tsp
1 tsp Yeast (Active dry yeast/Instant yeast)
1 Egg
1 tsp Milk

Steps:

  • PREPARE THE PASTRY SHEET
  • (1)Prepare the doughActivate the dry yeast by dissolving 260 ml warm milk ,4 Tbsp sugar and 1 tsp active dry yeast.Add 1/4 Tsp Salt into 400 gms of flour.Blend together the wet and the dry ingredients in a large bowl until we get a homogenous evenly hydrated dough.(2)First ProofingCover the dough with a plastic film and Let the dough sit and rise for 1 1/2 to 2 hours or until the dough get doubled in size.After proofing,Degas the dough and divide the dough into 12 equal pieces.Roll each piece of dough into the shape of a disc which is approximately 16-18 cm in diameter and not more than 2 mm in thickness.(3)Layer butter on each disc.Place the disc on a plastic film and repeat the same process for the next piece and stack them over the previous disc and continue the same with rest of the divided dough pieces.As butter is very soft now, we need to freeze them for 30- 35 minutes;so that the butter will not be very soft and will be pliable and it will be easy for us to work with the dough.Roll them into long rectangular sheet.With the help of a knife or a pizza cutter,cut them into smaller triangles.Shape them into croissants.

Growing up in France, we often enjoyed buttery croissants for breakfast with steaming cups of hot chocolate. I've tried to re-create the experience for my family with this recipe, and now, it's a Christmas tradition. -Tish Stevenson, Grand Rapids, Michigan

Number Of Ingredients 9

2 packages (1/4 ounce each) active dry yeast
1 cup warm water (110° to 115°)
1-1/4 cups cold butter, divided
5 cups all-purpose flour
1/3 cup sugar
1-1/2 teaspoons salt
3/4 cup evaporated milk
2 eggs
1 tablespoon water

Steps:

  • In a large bowl, dissolve yeast in warm water; let stand for 5 minutes. Melt 1/4 cup butter; set aside. Combine 1 cup flour, sugar and salt; add to yeast mixture. Add the milk, 1 egg and melted butter; beat until smooth. , Place remaining flour in a large bowl; cut in remaining butter until crumbly. Add yeast mixture; mix well. Do not knead. Cover and refrigerate overnight. , Punch dough down. Turn onto a lightly floured surface; knead about six times. Divide dough into four pieces. Roll each piece into a 16-in. circle; cut each circle into eight wedges. , Roll up wedges from the wide ends and place point side down 3 in. apart on ungreased baking sheets. Curve ends to form crescents. Cover and let rise in a warm place for 1 hour. , Beat water and remaining egg; brush over rolls. Bake at 325° for 20-25 minutes or until lightly browned. Serve warm.

This simplified croissant recipe will have you baking croissants like a pro. Flaky, buttery, and deliciously authentic, yet so easy to make!

4 cups all-purpose flour
1/3 cup granulated sugar
4 teaspoons active dry yeast*
2 1/4 teaspoons kosher salt
1 1/4 cups unsalted butter, (cold (2 1/2 sticks))
1 cup milk ((you may need slightly more or less))
egg wash ((1 large egg beaten with a teaspoon or two of water))

Steps:

  • Place the flour, sugar, yeast, and salt in a large bowl and whisk together until combined.
  • Slice the butter into 1/8-inch thick slices and toss in the flour mixture to coat.
  • Add the milk and stir together until a stiff dough forms.
  • Wrap the dough tightly in plastic wrap and chill for 1 hour.
  • On a lightly floured surface, roll the dough into a long rectangle shape.
  • Fold it into thirds (like a letter), turn 90 degrees, and repeat 4 to 6 more times, or until the dough has large streaks of butter in it but it is smooth and flat. (If at any point the butter starts to feel soft, chill it in the refrigerator or freezer until stiff.)
  • Wrap tightly and chill for 1 more hour, then divide the dough in half and roll each portion out to a thickness of about 1/8-inch, in a long rectangle shape (approx. 10-inches wide by 22-inches long).
  • Cut the dough into long, skinny triangles (about 5-inches at the wide end).
  • Notch the wide end of each triangle with about a 1/2-inch cut, then roll from the wide end to the pointed end, tucking the point under the croissant.
  • Place on a parchment-lined baking sheet, cover loosely with plastic wrap, and allow to proof until doubled in size (1 to 2 hours).
  • Preheat the oven to 375 degrees F, and gently brush the croissants with egg wash.
  • Bake for 15 to 20 minutes, or until puffed, golden brown, and flaky.

Christmas Morning Wife Saver (Breakfast Casserole) image

I certainly cannot take credit for this recipe but it is a Christmas classic. There are lots of little things to personalize this recipe. I have suggested using red and green bell peppers because they are Christmas colors! I also use grated cheese and spread it over the Canadian bacon instead of cheese slices. I have used regular bacon in this recipe, but I find that it overpowers the rest of the flavors. Make this tasty breakfast dish the night before and just pop it in the oven on Christmas morning; let it cook while you open gifts and sip your rum-spiked coffee!

16 slices bread, crusts removed - divided
16 slices Canadian bacon
16 slices sharp Cheddar cheese
6 large eggs
½ teaspoon salt
½ teaspoon ground black pepper
1 teaspoon dry mustard
¼ cup minced onion
2 tablespoons diced green bell pepper
2 tablespoons diced red bell pepper
2 teaspoons Worcestershire sauce
1 dash hot sauce
3 cups whole milk
½ cup butter, melted
1 cup crushed corn flakes cereal

Steps:

  • Butter a 9x13-inch baking dish. Cut and fit 8 slices of bread to fit over entire bottom of dish. Cover bread with slices of Canadian bacon and sharp Cheddar cheese. Cut and fit remaining 8 slices of bread to completely cover bacon and cheese.
  • Whisk eggs with salt and black pepper in a bowl. Whisk dry mustard, onion, diced green and red bell pepper, Worcestershire sauce, and hot sauce into eggs. Whisk in milk until egg mixture is smoothly combined. Pour egg mixture evenly over the casserole. Cover the dish and refrigerate overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Pour melted butter evenly over the casserole and sprinkle corn flake crumbs over the top.
  • Bake in the preheated oven until set and lightly browned, about 1 hour. Let casserole stand for 10 minutes before serving.

2 cups diced cooked ham
2 tablespoons butter, or as needed
7 slices bread, crusts removed
½ pound American cheese, cubed
3 cups milk
6 eggs, beaten
¾ teaspoon dry mustard
¾ teaspoon salt

Steps:

  • Spray a 9x13-inch casserole dish with cooking spray.
  • Spread ham into the bottom of prepared casserole dish. Butter one side of each bread slice; cut slices into cubes. Arrange buttered bread cubes atop ham; layer American cheese over bread cubes.
  • Whisk milk, eggs, mustard powder, and salt together in a bowl; pour over American cheese layer. Cover dish with aluminum foil and refrigerate 8 hours or overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Remove aluminum foil from casserole.
  • Bake in the preheated oven until cheese is melted and eggs are set in the middle, about 1 hour.
