PEANUT BUTTER SNOWBALLS

Peanut Butter Snowballs image

Peanut Butter Snowballs are a peanut butter truffle with flavors of honey and vanilla. These no bake peanut butter balls make a delicious Christmas treat that you can pop in your mouth.

Provided by Emily

Categories     Christmas

Time 1h

Number Of Ingredients 9

2 ¼ cups powdered (or confectioners) sugar
¾ cup crunchy peanut butter
¼ cup butter, melted
1 teaspoon honey
1 teaspoon vanilla extract
½ teaspoon lemon juice
¼ teaspoon salt
1 cup white candy melts, melted
Sprinkles, optional garnish

Steps:

  • In a mixing bowl, stir together powdered sugar, crunchy peanut butter, melted butter, honey, vanilla, lemon juice, and salt until well combined.
  • Refrigerate dough for 20 minutes or freeze for 10 minutes.
  • While dough is chilling, melt the white candy melts by placing it in a bowl, and setting it in the microwave. Heat the white chocolate in 30 second increments, stirring each time. It shouldn't take more than 2 or 3 sets to melt the chocolate down completely. If needed, you can add in a little shortening or oil to thin out the candy melts.
  • Roll peanut butter mixture into 2-inch balls and roll into melted white chocolate and place on a parchment lined sheet pan to set. They will set quicker in the refrigerator, so feel free to put them in there instead.
  • Optional: After coating your peanut butter balls, but before setting, sprinkle these snowballs with your favorite holiday colored sprinkles.

Time 1h

Number Of Ingredients 6

1 ½ cups peanut butter (smooth)

4 cups powdered sugar
1 ⅓ cups graham crackers (crushed)

  • Stir in graham cracker crumbs and mix until well combined and smooth. Shape into balls, about 1 inch in diameter place on a cookie sheet, and chill for at least 30 minutes.

CHRISTMAS PEANUT BUTTER COCONUT CHERRY BALLS

Christmas Peanut Butter Coconut Cherry Balls image

Lynelle's mom knew what she was doing when she made this recipe. It's not your standard chocolate peanut butter ball recipe. It's so much more decadent. The peanut butter filling is smooth, creamy and just melts in your mouth. Maraschino cherries add a lovely cherry flavor while the coconut gives a bit of crunch to every bite....

Provided by Lynelle Caldwell

Categories     Chocolate

Time 30m

Number Of Ingredients 9

BALLS
1 stick butter (softened)
1 1/3 c peanut butter (smooth or crunchy)
4 c powdered sugar
24 maraschino cherries (chopped fine)
2 c coconut
DIPPING CHOCOLATE
6 oz chocolate chips (milk, semi-sweet or dark, your choice)
6 Tbsp paraffin

Steps:

  • 1. Using a mixer, combine butter, peanut butter, powdered sugar, maraschino cherries, and coconut.
  • 2. Roll in very small balls.
  • 3. Put in freezer for several hours or preferably overnight.
  • 4. Melt in a double boiler 6 oz chocolate chips and 6 tbsp paraffin.
  • 5. Dip frozen balls in and drain over waxed paper on a rack.
  • 6. Can double dip if you want. I usually double the cherry mixture and the chips mixture making enough for dipping a double batch. Enjoy!
