EASY ZUCCHINI COOKIES
My grandma's recipe for Easy Zucchini Cookies is one of my most treasured recipes. These cookies have the perfect texture!

Steps:
- Preheat oven to 350 degrees.
- Grease baking sheets or line with parchment paper
- Combine flour, baking soda, cinnamon and salt in a medium bowl.
- In a large bowl, beat butter and sugar with a mixer on medium speed until light and fluffy. Add egg and beat well.
- Gradually add flour mixer and beat until smooth. The dough will be stiff.
- Stir in zucchini and remaining ingredients.
- Drop by heaping teaspoonfuls, 2 inches apart onto baking sheets.
- Bake 13-15 minutes or until lightly browned. Be careful not to over-bake.
- Cool for 2 minutes then remove to cooling racks.

You won't even taste the veg, but it's there! Good way to get veggiephobes to eat some green.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Stir the flour, cocoa powder, baking soda, cinnamon, cloves, and salt together in a bowl.
- Beat the sugar and margarine with an electric mixer in a large bowl until smooth. Beat the first egg into the butter until completely blended; beat the vanilla into the mixture with the last egg. Stir the zucchini through the mixture until evenly distributed. Mix the flour mixture into the zucchini mixture until just incorporated. Fold in the chocolate chips, mixing just enough to evenly combine. Roll the dough into walnut-sized balls and place 2 inches apart onto ungreased baking sheets.
- Bake in batches in the preheated oven until the edges are golden, about 10 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

CHRISTMAS SUGAR COOKIES--OR ANYTIME
I had made sugar cookies for more years than I want to count and never changed the recipe. But then one day, a lady at our church made this recipe for the kids at the Christmas program. My husband tasted them and told me to get the recipe. I rebelled at changing, but to please him, I tried them. Now, these are all I ever make. They are wonderful. I do use Crisco (shame on me because of the type of fat.) The lady said she had tried, and I did too, butter, and also half butter and half Crisco, but they didn't come out the same, but with the Crisco they are yummy.

Steps:
- Mix the shortening, sugar, vanilla, and eggs till light and fluffy.
- Add the rest of the ingredients.
- Chill 3-4 hours or overnight (I do mine overnight).
- On a well-floured surface, roll thin.
- Cut in shapes.
- Place on ungreased baking sheet.
- Sprinkle sugar on top of them.
- Bake 350-375 degrees (depending on oven) for 6-8 minutes depending on your thickness.
- Cool on a rack.
- You may also decorate them with and icing; there are a couple of good ones on Zaar.

- Preheat oven to 350 degrees F (175 degrees C). Grease baking sheets.
- Beat butter and sugar together in a large bowl until light and fluffy; add eggs and vanilla extract and continue beating until smooth.

ICED BROWN SUGAR ZUCCHINI COOKIES

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- In the bowl of a stand mixer fitted with a paddle attachment (or in a large bowl with a hand mixer), beat together the butter, granulated sugar, and brown sugar on medium speed until fluffy and pale - about 3 minutes. Add the eggs and mix until completely blended. Add the vanilla and mix.
- In a medium bowl, sift together the flours, baking soda, cinnamon, and salt.
- Add the dry ingredients to the wet mixture and beat on low (or stir by hand) just until the ingredients are incorporated. Do not overmix. The batter will be stiff.
- Add the zucchini and mix just until incorporated.
- Scoop the cookies in approximately 2-tablespoon increments, about 2 inches apart, onto an ungreased non-stick cookie sheet or cookie sheet lined with silicone mat. (Do you have a cookie scoop yet? It will change your life!)
- Bake for 10 - 12 minutes, until the cookies are set and light golden brown around the edges. Remove from oven and let sit on baking sheet for about 5 minutes, then move to a wire rack to cool completely.
- Make brown sugar glaze. In a medium saucepan over low heat, melt the butter. Add brown sugar. Stir for about 2 minutes, until sugar is dissolved. Gradually add milk and, increasing heat to medium, bring to a boil, stirring constantly. As soon as it comes to a boil, remove from heat and slowly whisk in powdered sugar, stirring until smooth. Stir in vanilla extract and pinch salt. Cool for about 20 minutes.
- Hold cookies by the bottom and dip the tops into the glaze. Set right-side up on cookie rack. Cool until glaze sets.
- Store at room temperature in an airtight container for up to 3 days, or freeze for up to a few months.
