BUTTERY CARAMEL APPLE JAM
This recipe was inspired by others I had found online. They were very good but seemed to taste more like apple pie, so I changed it to be more like caramel. Hope you enjoy it.

Steps:
- Sterilize the jars and lids in boiling water for at least 5 minutes.
- Bring apples, water, and butter to a boil in a large pot. Reduce heat to low, cover, and simmer until apples are softened, about 8 minutes. Mix in brown sugar, white sugar, pectin powder, and butter flavoring. Bring to a full rolling boil, stirring often. Cook at a boil for 2 minutes without stirring.
- Pack the apple jam into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 15 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Let stand 8 hours to overnight before use. Store in a cool, dark area; refrigerate opened jars.

THE BEST CARAMEL APPLES
When I was searching for a recipe to make homemade caramel apples for the very first time, a close friend gave me this amazing and fairly easy recipe. Steps:
- Bring a large saucepan of water to a boil. Dip apples in boiling water for a few seconds, then dry with paper towels to remove any wax from the peels. Set apples aside; when completely cool, insert a wooden chopstick firmly into the bottom of each apple for a handle.
- Line a baking sheet with parchment paper.
- Stir butter, brown sugar, corn syrup, and sweetened condensed milk together in a saucepan over medium-high heat. Bring to a boil, stirring constantly, and reduce heat to medium. Cook until a candy thermometer reads 248 degrees F (120 degrees C), 25 to 30 minutes; stir constantly to prevent burning. A teaspoon of the syrup, dropped in a glass of cold water, should form a firm ball. Remove caramel from heat and stir in vanilla extract.
- Working quickly, dip each apple into the hot caramel to completely coat the apple and about 1/2 inch of the wooden handle. Sprinkle apples with any desired toppings while still hot. Let caramel apples cool on the parchment paper. Use caution, caramel is very hot.

APPLE JELLY
An old family recipe - makes a very pretty "blush" colored jelly if you use red apple peels. Prep time and yield depends upon how many apples you want to work up. This was based upon preparing 20 large apples (Jonathan and Jonagold varieties) *With left over pulp - let cool completely and place on a plastic dish on a table top away from your house. The birds and butterflies will enjoy the treat!

Steps:
- Push popsicle sticks into the center of each apple.
- Cook caramels and water in a large saucepan on medium-low heat until caramels are completely melted, stirring constantly. Dip apples in caramel until evenly coated, letting excess caramel drip off. Scrape caramel off the bottom of the apple and place on a baking sheet covered in wax paper and sprayed with nonstick cooking spray.
- While the caramel is still warm, trim the bottom off each marshmallow to create a flat surface and place near the top of the apple to create ears. Place baking sheet with apples in the refrigerator for an hour, or until caramel is set up.
- Melt chocolate chips in the microwave for two minutes, or until melted. Stir until smooth and dip each apple entirely in the chocolate. Gently shake off excess chocolate and place back on the baking sheet. Return baking sheet with apples to the refrigerator for 30 minutes or until chocolate is set up.
- Melt white chocolate chips in the microwave for two minutes, or until melted. Dip the bottom half of each chocolate apple into the white chocolate. Shake off the excess and place two yellow jelly beans on the front of the lower half of the apples to create buttons. Using a large spoon, sprinkle red sugar crystals on the apple until all of the white chocolate has been covered. Place on baking sheet and let set until hardened.
