BANANA BANANA BREAD
Why compromise the banana flavor? This banana bread is moist and delicious with loads of banana flavor! Friends and family love my recipe and say it's by far the best! It's wonderful toasted!! Enjoy!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
- In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
- Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Steps:
- Pre-heat the oven to 160C fan-forced and grease and line a loaf tin with baking paper so that it extends over the sides.
- In the bowl of an electric mixer, beat the butter and sugars together until light and fluffy.
- Add the eggs and beat until the mixture is thick.
- Beak in the brandy then add the flour, bicarb and spices and beat them through.
- Finally, add the banana and mix just until combined.
- Scrape the batter into the prepared tin and bake for 55 minutes or until a cake tester inserted in the middle comes out clean.
- Leave it to cool completely in the tin.
SWISS BANANA NUT BREAD
My grandmothers banana nut bread recipe, tried and true I make this often.

Steps:
- 1. Cream together butter, sugar, and eggs, once its creamy add the banana.
- 2. Sift together the flour, salt, baking soda and mix well with the wet ingredients.
- 3. Mix in the chopped nuts.
- 4. Bake at 350 degrees for 50-60 minutes.
- 5. While bread is warm baste 4 Tablespoon melted butter and then sprinkle with cinnamon sugar.
CHRISTMAS BANANA BREAD
Exceptionally moist and not too "cakey", this is lightly spiced with Indian spices - cinnamon, mace and ground ginger. Serve warm with vanilla ice cream and candied walnuts. Number of servings is an estimate - makes 1 loaf.

- Preheat the oven to 350°F Butter and flour one 8 ½ x 4 ½" loaf pan.
- Cream the butter with the sugar until light and fluffy.
- Add the eggs and beat until combined. Beat in the bananas.
- Combine the flour, spices, salt and baking soda in another bowl, then fold in the dry ingredients into the creamed mixture just until combined; do not over mix.
- Pour into the pan and bake until a tester stuck in the middle of the banana bread comes out clean, 50-60 minutes.
- Let cool on a rack before removing from the pan.

BANANA BREAD (WITH A TWIST)
Grandma's recipe handed down over the years, with 1 minor alteration! Stranded without a car, a toddler under foot and half way through the recipe I realized I was out of the margarine the recipe called for..."Oh bother," what to do? Well, there was always peanut butter in the house, and with nothing to lose at that point, I SUBSTITUTED! The end result was this recipe.

- Grease 2 loaf pans.
- Preheat oven to 350°.
- Mash 2 bananas with 1 teaspoon baking soda.
- Slightly beat 2 eggs, add sugar and peanut butter, mixing well.
- Mix in the banana mixture and the flour, combining well.
- Pour into prepared pans.
- Bake 40-50 minutes (check at 4 minutes with toothpick and adjust baking time if still "gummy").
- Cool 10 minutes, then remove from pans and finish cooling on wire racks.
- Freezes well.
