Cranberry Salsa with Cream Cheese image

Fresh Cranberry Salsa with cream cheese and crackers is a spicy and sweet, quick and easy appetizer that is perfect for entertaining during the holidays!

12 ounces fresh cranberries
1/2 cup granulated sugar (or up to 3/4 cup to taste)
1-2 jalapenos (seeds and stems removed, roughly chopped (I usually just use one))
1/2 cup cilantro leaves (about 1 small bunch)
4 green onions
2 Tablespoons fresh lime juice
Pinch of salt
16 ounces cream cheese, softened
Crackers or chips (for serving)

Steps:

  • Add all ingredients except cream cheese and crackers to the bowl of a large food processor and pulse 20-30 times until finely chopped. Let sit in the fridge for at least 30 minutes.
  • Unwrap the cream cheese and place on a serving plate or bowl. Top with the cranberry salsa and serve with crackers or chips.

This light and fluffy raspberry fluff is the jello salad that everyone loves!

3 cups water
3 oz package instant vanilla pudding
3 oz package instant, or cook and serve tapioca pudding
3 oz package raspberry jello
8 - 12 oz frozen whipped topping, thawed (cool whip)
1 pint fresh raspberries, plus extra for topping

Steps:

  • In a saucepan, bring water to a boil. Whisk in pudding mixes and jello. Return to a boil, stirring constantly, and boil for 1 minute. Remove from the heat, pour into a container, and cool completely.
  • Refrigerate jello mixture for several hours or overnight. Gently fold in cool whip and raspberries, being careful not to stir to vigorously. Keep refrigerated until ready to eat.
  • Top with additional raspberries and serve.

I found this recipe while taking a cooking class. Full of mixed fruit, celery and nuts, it's a lively alternative to jellied cranberry sauce. When cranberries are in season, I buy extra and freeze them so I can make this salad year-round.

4 cups fresh or frozen cranberries
3-1/2 cups unsweetened pineapple juice
2 envelopes unflavored gelatin
1/2 cup cold water
2 cups sugar
1 can (20 ounces) unsweetened pineapple tidbits, drained
1 cup chopped pecans
1 cup green grapes, chopped
1/2 cup finely chopped celery
2 teaspoons grated orange zest

Steps:

  • In a large saucepan, combine the cranberries and pineapple juice. Cook over medium heat until berries pop, about 15 minutes. , Meanwhile, in a small bowl, sprinkle gelatin over cold water; let stand for 5 minutes. In a large bowl, combine the berry mixture, sugar and softened gelatin. Chill until partially set. , Fold in the pineapple, pecans, grapes, celery and orange zest. Pour into individual serving dishes. Chill until firm.

Sweet and spicy, quick and easy, fresh jalapeno cranberry salsa recipe, served over cream cheese, homemade with simple ingredients in one pot in 15 minutes.

1 bag Cranberries (12 oz. bag, Fresh, Washed, Patted dry)
1/4 cup Onions (Roughly diced)
1-2 Jalapeños (Roughly diced)
1/4 cup Cilantro leaves (Fresh)
2 tbsp Lemon juice (Or lime juice)
1/2-3/4 cup Granulated sugar (Adjust according to your taste)
Salt (To taste)
1/2 tsp Ginger powder
1/2 tsp Garlic powder
2 packages Cream cheese (8 oz. boxes)

Steps:

  • Add cranberries, onions, jalapeños, cilantro, lemon juice, sugar, salt, ginger powder, garlic powder in a food processor and pulse until coarsely chopped. Do not make the mixture smooth. It's supposed to be slightly chunky.
  • Transfer this to serving bowl. Cover and chill in the fridge for at least 1 hour to allow the flavors to deepen.
  • Spoon this mixture over over 2 blocks of cream cheese or you can enjoy it as just plain salsa.

1 (12 ounce) package fresh cranberries
1 cup white sugar
1 (6 ounce) package red Jell-O® mix
1 (8 ounce) can crushed pineapple, drained
¾ cup orange juice
1 apple with peel, grated
1 cup chopped pecans
1 cup whipping cream
1 (8 ounce) package cream cheese, softened

Steps:

  • Process cranberries in blender or food processor; pour sugar over cranberries and stir to dissolve.
  • Bring 3/4 cup of water to a boil; stir in gelatin and let cool. Stir cooled gelatin into cranberries, and add pineapple, orange juice, apple and pecans. Mix well, cover and refrigerate overnight.
  • Whip cream and beat in cream cheese.
  • In a glass serving dish, layer half of the cranberry mixture, then the whipped cream mixture, then the remaining cranberry mixture.

I always make this frozen salad for Thanksgiving dinner. I don't care for plain cranberry sauce and this recipe is a change from that. It looks as if it would be a sweet salad or dessert, but the mayonnaise adds a tangy taste and cuts the sweetness. Cooking time is freezing time.

8 ounces cream cheese (I use low-fat)
2 tablespoons mayonnaise
2 tablespoons sugar
2 cups whole berry cranberry sauce
1 cup crushed pineapple, well-drained
1 cup whipping cream, whipped

Steps:

  • Soften cream cheese.
  • Blend in mayonnaise and sugar.
  • Add fruit and fold in whipped cream.
  • Pour into 8X8 inch pan, cover and freeze about 6 hours.
  • Let stand at room temperature for about 30 minutes before serving, or until it can be cut or scooped.
