This recipe was in my mother's church cookbook, and now it's in my church cookbook! Apparently is was too good to miss a generation. I often make this dish to take along to potlucks...and it seems that if I don't, someone else will! It's hearty and so tasty! -Norma Turner, Haslett, Michigan

1 pound ground beef
2 cups sliced peeled potatoes
2 cups finely chopped celery
3/4 cup finely chopped carrots
1/4 cup finely chopped green pepper
1/4 cup finely chopped onion
2 tablespoons butter
1 cup water
2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
1 can (5 ounces) chow mein noodles, divided
1 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef over medium heat until no longer pink; drain and set aside. , In same skillet, saute potatoes, celery, carrots, green pepper and onion in butter 5 minutes. Add water; cover and simmer 10 minutes or until vegetables are tender. Stir in soup and cooked ground beef until blended. , Sprinkle half the chow mein noodles into a greased shallow 2-qt. baking dish. Spoon meat mixture over noodles. Cover and bake 20 minutes. Top with cheese and remaining noodles. Bake, uncovered, 10 minutes longer or until heated through.

3 large potatoes, peeled and cubed
2 large parsnips or parsley roots, peeled and chopped
Salt
1/2 to 2/3 cup whole milk
Freshly ground black pepper
Freshly grated nutmeg
1 cup shredded Italian fontina or 3/4 cup crumbled Gorgonzola
4 large bone-in pork or veal chops, about 1 1/2 to 2 inches thick
1 small bundle fresh sage, leaves chopped
3 tablespoons extra-virgin olive oil
2 large garlic cloves, crushed
1/2 cup dry vermouth or 3/4 cup dry white wine
1 pound trimmed broccolini spears
2 tablespoons butter

Steps:

  • Preheat the oven to 375 degrees F.
  • Put the potatoes and parsnips in a medium pot and cover with water. Bring to a boil over medium heat, salt the water, and cook until tender, 15 to 18 minutes. Drain and put them back into the hot pot. Mash with the milk and salt, pepper, and nutmeg to taste. Add the cheese and stir until melted.
  • While the potatoes and parsnips come to a boil, rub the chops with lots of salt, pepper, and sage. Heat the extra-virgin olive oil over medium heat in a large oven-safe skillet. Add the garlic and saute for 3 minutes, then remove the garlic with a slotted spoon and raise the heat to medium-high.
  • Add the chops and brown on both sides, about 5 to 6 minutes. Add the vermouth or wine to the pan and transfer to the oven. Cook the meat through for 7 to 8 minutes more. While the meat cooks, bring a couple of inches of water to a boil over medium heat and salt the water. Add the broccolini and cook for 5 to 6 minutes, then drain. Arrange the chops on 4 plates. Add the butter to the pan and whisk it into the pan juices, then spoon the sauce over the chops. Serve with the mashed potatoes and parsnips and the broccolini alongside.

The anticipation was extreme, and I could hardly contain myself with excitement. On a Wednesday night mid February 1965, I was asked to come and help my mother; who at the time was the head of the church kitchen, manning the large plates of food rolled out to the monthly meeting of the "All Saints Men's Club". I was 9 years old, and to accompany my mother and be a helper at this important dinner was beyond part of my wildest dreams. These beautifully stuffed, double thick pork chops were so tender and juicy, coupled with the basic, but delicious aroma and spices of the stuffing; most of the "men" would ask to have two. My mother had planned for 50 men, so there were no coming back for seconds, but this recipe stayed at the pinnacle of the "Men's Club" menu for most of my adolescence, preparing this dish year after year. This is not a fancy dish; but it does fill up all empty spots in your stomach and is really perfect made for a few or a crowd. Very easy to put together and can be easily halved or doubled twice. When preparing this for my family now, we just split a chop and enjoy with a vegetable. Go ahead, stuff em' and eat them....and you don't even have to attend the "Men's Club".

6 double thick pork chops, bone in sliced with pocket (can be boneless)
7 slices bread (cubed or broken)
1 medium onion, chopped
3 stalks celery, chopped
2 tablespoons butter
1 tablespoon water (optional if to dry)
1 teaspoon parsley (dried)
1 teaspoon salt
1/4 teaspoon sage (dried)
1/4 teaspoon pepper
1/4 cup water (or chicken, vegetable broth)

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Wash and dry chops. If pocket is not pre cut, use a sharp knife to make a slit in the "fat" side of the chop, big enough for a generous scoop of stuffing.
  • Salt and pepper inside and out of chops. Set aside.
  • Cook onion and celery in butter about 5 minutes. If dry add 1 tablespoon of water.
  • Add parsley, sage, salt, and pepper.
  • Add parsley mixture to bread and mix thoroughly, adding water as necessary.
  • Stuff chops, dividing stuffing evenly between the chops and secure with toothpicks.
  • Stand on bone end and bake for 1 hour or until well done.
  • Note: Depending on the size of your chops, sometimes I baste a bit with a bit of chicken broth with 1/2 teaspoon butter melted in it to prevent drying out.

3 pounds russet potatoes (about 9 medium), peeled and cut into 1/2-inch cubes
2 garlic cloves, peeled
6 ounces cream cheese, softened
2 tablespoons butter
1/2 cup sour cream
2 cups shredded cheddar cheese, divided
1 teaspoon garlic salt
1 teaspoon onion salt
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry

Steps:

  • Place the potatoes and garlic in a large saucepan; cover with water. Cover and bring to a boil; cook for 20-25 minutes or until very tender. Drain well. , In a bowl, mash potatoes and garlic with the cream cheese and butter. Add sour cream, 1 cup of cheddar cheese, garlic salt, onion salt and spinach. Stir just until mixed. Spread into a greased 2-qt. baking dish. , Bake, uncovered, at 350° for 30-35 minutes or until heated through. Top with remaining cheese; bake 5 minutes longer or until the cheese is melted.

6 center-cut pork chops
4 large potatoes
2 large onions
1/4 teaspoon pepper
unseasoned meat tenderizer
1/2 cup water
1/4 teaspoon minced garlic
1/2 teaspoon seasoning salt
2 tablespoons Worcestershire sauce
1/2 cup vegetable oil

Steps:

  • Heat oil, garlic, and Worcestershire sauce in a large skillet. Dampen chops and treat with tenderizer. Sprinkle chops with salt and pepper. Add chops to skillet and brown on both sides. Peel and slice potatoes and onions. Layer potatoes and onions in a lightly greased casserole dish. Place the chops on top. Cover with 1/2 cup water. Cover and bake at 350 degrees for one hour. Salt and pepper to taste.
