Delicious !! I found this recipe in a United church cookbook and decided to give it a try. It's a keeper for sure. I had tried others looking for just the right one. My search is over. :o)

- In a large bowl, combine first nine ingredients and mix well. Press into a 9x5-in. loaf pan. Bake at 350° for 1 hour. Remove from oven; drain. Spoon chili sauce over loaf. Return to oven and bake until no pink remains, about 20 minutes longer.

BACK-OF-THE-BOX MEATLOAF
I know, I know...there are a ton of meatloaf recipes out there (and I have made quite a few of them). But, once again, this just turns out to be my family's favorite. It is extraordinarily simple, yet very satisfying. For the soft bread crumbs, I generally run a few slices of bread through the food processor. Believe it or not, hot dog rolls work great too! I have also used the drippings and made a delicious gravy to serve alongside it.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
- Mix the beef, pork, water, eggs, picante sauce, onion soup mix, bread crumbs, and bell pepper together in a mixing bowl until evenly blended. Pack into the prepared loaf pan, then poke holes into the loaf with a fork nearly to the bottom of the pan. Pour the undiluted cheese sauce over the top of the roast and spread evenly.

HALLOWEEN HALFLING MEATLOAF
This is a great tasting and scary meatloaf. Our guests got a big kick out of it. I prefer to bake my meatloaf on a slotted broiler pan to let the grease drip off. You can use spicy sausage but I prefer a mild sausage.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix together the ground beef, sausage, onion, saltine cracker crumbs, beaten eggs, and cajun seasoning in a bowl until well combined. In a large baking dish, form the meat loaf mixture into a Halfling shape, with a large head, 2 stubby legs, and 2 upraised arms.
- Bake in the preheated oven until the meatloaf is no longer pink inside and just starting to turn brown, about 1 hour. An instant-read thermometer inserted into the center should read at least 165 degrees F (70 degrees C).
- To decorate the meatloaf's head, pick out about 14 corn kernels, and arrange them into teeth. Place 1 small green pepper slice on each side of the creature's head for ears; place two pickle slices on the face for eyes, then place 2 black olive halves, cut sides down, in the pickle slices to finish the eyes. One more olive half forms the nose. Surround the monster with a background of ketchup "blood," and bake until browned, about 10 more minutes.
- Let the meatloaf rest for 10 minutes before serving. Just before serving, stick a paring knife in the meatloaf's body, and decorate it with a little ketchup blood.

BASIC MEATLOAF RECIPE | EATINGWELL

- Preheat oven to 375 degrees F. Coat a large rimmed baking sheet with cooking spray (or see Loaf Pan Variation).
- Pulse onion, bell pepper and celery in a food processor until finely chopped. (Or finely chop them with a knife.)
- Heat oil in a large nonstick skillet over medium-high heat. Add the vegetables and cook, stirring occasionally, until tender and most of the liquid has evaporated, 5 to 10 minutes. Transfer to a large bowl and let cool for 10 minutes.
