By keeping just a few ingredients on hand you'll always have the option of whipping up this light, effervescent Cilantro Lime Rice.

Number Of Ingredients 8

1 cup white rice
2 cups chicken stock ((or vegetable stock))
1/2 cup cilantro
1 lime
1 garlic clove
1/2 teaspoon salt
oil
splash of water

Steps:

  • Heat up a dollop of oil in a saucepan on medium-high heat
  • Saute 1 cup of rice in the saucepan until lightly browned
  • Add 2 cups of stock and 1/2 teaspoon salt to the rice
  • Bring to a boil and then reduce heat to a light simmer
  • Let simmer until the liquid is absorbed
  • Turn off heat and cover, letting rice sit in its own steam for a few minutes
  • Rinse 1/2 bunch of cilantro and twist off the bottom stems, chopping roughly
  • Add to a blender along with 2 Tablespoons lime juice and 1 garlic clove
  • Add a couple tablespoons of water (or oil) and blend the ingredients together
  • Add the lime cilantro mixture to the cooked rice and mix thoroughly
  • Taste for salt
  • Add additional cilantro if desired

Fluffy white rice with lime, cilantro, and onion makes a fantastic side dish: more "dressed up" than plain rice, but almost as effortless. (And even better than Chipotle's!)

1 1/2 cups long-grain white rice, such as basmati
1/2 medium yellow onion, diced small
1 bay leaf
2 tablespoons olive oil
3 cloves garlic, peeled and minced
1 1/4 teaspoon kosher salt, or to taste
2 1/4 cups cold water (or whatever your rice package directions say)
2 limes, zested and juiced
2/3 cup cilantro, leaves and stems, finely chopped, plus more to garnish
Sliced jalapeño pepper to serve (optional)

Steps:

  • Rinse the rice under cold water to release some of the excess starch.
  • Heat a medium sauce pot over medium heat. Add the oil. When the oil is warm, add the diced onion, garlic, rinsed rice, and bay leaf. Cook for 1 to 2 minutes, stirring, until the onion starts to turn translucent.
  • Add the water, salt, and garlic. Bring to a boil, then lower to a simmer and cook, covered, until the water is fully absorbed, about 20 minutes.
  • Remove the lid. Fluff the rice with a fork. Remove the bay leaf. Stir in the lime juice, zest, and cilantro. Taste for seasoning. Serve hot with sliced jalapeño pepper and a few stems of cilantro as a garnish, if desired.

3 tbsp unsalted butter
2 cups basmati rice
3 cups water
1 tsp salt
1 tbsp lime zest
3 tbsp lime juice
1 cup fresh cilantro (chopped)

Steps:

  • Preheat a deep cast iron pan or skillet with butter. Add rice and cook on medium-high until rice turns golden brown.
  • Add in water, lime zest, and salt. Stir to combine.
  • Bring it to a boil and turn the heat down to low. Cover the rice with a lid and let it cook for 15 minutes.
  • Remove rice from heat and let it sit for 10 minutes. Using a fork, fluff the rice to loosen the grains from one another.
  • Add fresh cilantro and a squeeze of lime juice right before serving. Enjoy!

2 tablespoons extra virgin olive oil
1 1/2 cups basmati long grain white rice
1 clove garlic, minced
2 1/4 cup water
1 teaspoon salt
Zest of one lime
3 tablespoons lime juice
1 cup lightly packed chopped cilantro, leaves and tender stems

Steps:

  • Brown the rice: Heat the olive oil in a medium saucepan on medium high heat. Add the raw rice and stir to coat with the olive oil. Cook, stirring occasionally, until the rice has started to brown. Add the garlic and cook a minute more.
  • Add water, salt, zest, then simmer: Add water, salt, and lime zest to the rice. Bring to a rolling boil, then cover and lower the heat to low to maintain a very low simmer. Cook undisturbed for 15 minutes (check your rice package instructions), then remove from heat and let sit for 10 minutes. Fluff the rice with a fork.
  • Stir in lime juice and cilantro: Transfer the rice to a serving bowl. Pour lime juice over the rice and toss with chopped cilantro. Serve with chicken, steak, shrimp, Mexican or Asian food.

  • Rinse the rice in a strainer until the water runs clear. Drain well and place the rice in a 4 quart sauce pan with high sides and add 3 cups water. Bring to a rapid boil over high heat. Lower the heat all the way, cover and cook 12 min. Turn off the heat after 12 min and let steam for 10 minutes. Steam longer for a drier rice.
  • While the rice is cooking prepare the rest of the ingredients. In a food processor or blender add the cilantro, lime zest and juice, garlic, oil, salt and pepper. Blend or process until smooth. You can add in another lime's worth or zest and juice as well as another tablespoon of oil and another cup of cilantro for a stronger flavor and color.
  • Fluff the rice with a fork or rice paddle and add the cilantro mixture. Fold the rice until well combined and all the rice is mixed with the cilantro sauce and no clumps rice left white. You want an even green color. Season with more salt and pepper to taste, if desired. Serve hot.
