Get your fiesta on with this zesty cilantro lime quinoa. Each bowl is gloriously gluten-free, vegan, and just plain delicious as side dish, salad topper, or burrito bowl base.

1 cup dry quinoa ((rinsed))
1.5 cups water
1/4 cup chopped cilantro leaves (plus extra to taste)
1/2 lime, zest and juice ((see notes))
1-2 TBSP olive oil or avocado oil
salt + pepper (to taste)

Steps:

  • First rinse and drain your quinoa using a mesh strainer or sieve.
  • Bring a medium saucepan to medium heat and lightly toast the quinoa to remove any excess water. Stir as it toasts for just a few minutes. This step is optional but really adds to the nuttiness and fluff factor of the quinoa!
  • Next add your water, set burner to high, and bring to a boil.
  • Once boiling, reduce heat to low and simmer, covered with the lid slightly ajar, for 12-13 minutes or until quinoa is fluffy and the liquid has been absorbed.
  • Add chopped cilantro, lime juice, lime zest and oil and season with a pinch of salt and pepper.
  • Toss to combine and taste.
  • Add any extra cilantro, lime, or seasoning that your heart desires and dig in!
  • Leftovers taste great and can be stored in the fridge for up to four days.
  • The quinoa will soak up the lime and oil so, to amp up the flavor, add a little extra dressing the next day and you're good to go! A scoop or two makes a fabulous salad topper or a flavor-filled base for a yummy burrito bowl! I seriously can't get enough of this stuff!

24 ounces salsa
1 ounce taco seasoning mix
1 lime, juice of, and zested
1/4 cup water or 1/4 cup stock
15 ounces black beans, rinsed and drained
1 jalapeno, seeded and diced
2 lbs boneless skinless chicken breasts (I left the skins on, and mine weren't boneless)
fresh cilantro, to taste

Steps:

  • Using at least a 6 quart instant pot, add all ingredients to the chicken into the pot except cilantro.
  • Close lid and seal the pressure valve, then set on manual/high for 15 minutes.
  • When time is up, allow the pressure to naturally release for 10 minutes. Then manually release the rest of the pressure by flipping the valve. Remove lid.
  • Shred the chicken breast (either remove and shred or shred in pot using 2 forks). Then add the cilantro into the pot and stir everything together to coat.
  • Serve with rice or flour/corn tortillas, quinoa, limes, and colby jack cheese.

  • Add two cups of water and one cup quinoa to the Instant Pot. Seal the vent and set to high pressure for 5 minutes. When done, do a quick release and fluff quinoa with a fork. Stir in lime zest and juice, coconut oil, and chopped cilantro. Salt to taste (if needed).
  • Bring two cups of water to a boil over medium-high heat. Add the cup of quinoa, reduce heat to a simmer, cover, and cook 15-20 minutes (until water has totally evaporated and quinoa is cooked completely).
