Time: 10 minutes



  1. olive oil
  2. mushrooms
  3. shallot
  4. fresh spinach
  5. eggs
  6. milk
  7. salt and pepper
  8. cheddar and american blend cheese


  1. in non-stick skillet saute mushrooms in olive oil approximately 3-4 minutes
  2. add shallots and continue cooking for 1-2 minutes
  3. add spinach and cook for another 1 minute
  4. remove from skillet and set aside
  5. in separate bowl , beat eggs , milk , salt and pepper
  6. add to skillet , gently stirring to allow eggs to cook without browning
  7. when eggs are about half cooked add the mushrooms , shallots and spinach mixture back into the skillet
  8. sprinkle with cheese
  9. continue cooking until eggs are done to your liking and cheese is melted
