- Combine the apples, sugar, flour and cinnamon in a large bowl. Transfer to an 11x7-in. baking dish; dot with butter. , For topping, combine the flour, sugar, baking powder and nutmeg in another large bowl. Cut in butter until mixture resembles coarse crumbs. Stir in egg just until moistened; sprinkle over filling., Bake, uncovered, at 375° for 40-45 minutes or until topping is golden brown and apples are tender. Serve warm with ice cream if desired.

CINNAMON APPLESAUCE
A snack doesn't need to be heavy to be satisfying. This nonfat, high-fiber applesauce, made in the microwave, fits the bill. If you prefer a sweeter applesauce, choose red apples, such as Fuji or Gala, instead of adding more sugar.

- In a medium saucepan, combine apples, lemon juice, cinnamon, and salt. Bring to a boil over medium heat. Cover, and cook, stirring occasionally, until the apples have cooked down into a sauce, 20 to 25 minutes.
- Using a fork, remove pieces of apple peel from sauce, and discard. Use immediately, or store, refrigerated, in an airtight container for up to 1 week.

Steps:
- Peel/core apples and cut into thick slices.
- Toss together the apples, brown sugar, cinnamon and nutmeg either in a bowl or put in a zippered plastic bag and shake until coated.
- Cook apple mixture, 2 tbls. of water and 1 tbls. of butter in a medium sized saucepan over medium heat, stirring occasionally.
- Cook for 8-10 minutes or until apples are tender - but not mushy.
- Serve just as is or top with vanilla ice cream or whipped topping.

BAKED APPLE FOR ONE
This smells delicious while it bakes. It can easily be multiplied to accomodate a larger family. If you use a cold apple, the sugar will stick to the outside nicely, but it will take longer to cook. I have heard of people using honey instead of sugar, but it tastes funny to me. (note: I'm sorry I originally forgot to post the baking temperature of 375)

- Preheat the oven (or toaster oven) to 375.
- Place the apple in a small oven safe bowl or dish.
- Spoon the liquid into the dish beneath the apple.
- Layer the sugar, raisins, and cinnamon in the center of the apple, sprinkling the excess sugar (with a touch of cinnamon) over the top.
- Cover the entire dish with foil and bake until tender, about 20 minutes (for a small apple.).
- It can safely be eaten 5 minutes out of the oven.

- Heat a large skillet over medium low heat. Heat the olive oil in the pan until it begins to shimmer. Then add the apples, sprinkle with the salt and toss quickly. Cover and let the apples cook for about 2-3 minutes. Remove the cover and add the brown sugar and spices. Mix throughly and replace the cover.
- Continue to cook the apples for another 5-8 minutes. Until they reach a nice golden color, and begin to soften, yet still hold their shape. If you prefer a softer, creamier apple more like an apple sauce, reduce the heat to simmer and continue to cook until they reach your desired consistency. It may be necessary to add a tablespoon or two of water, to keep them from burning.
- Remove from heat and serve. Enjoy them as they are for dessert. Equally, they are delicious served over oatmeal, cream of wheat, and ice cream. However, one of my favorite uses for these apples are to serve them with pancakes or layered in my Cinnamon Apple Strata.
