6 cups thinly sliced peeled tart apples
1/2 cup sugar
1 tablespoon all-purpose flour
1/4 teaspoon ground cinnamon
2 tablespoons butter
TOPPING:
1 cup all-purpose flour
1 cup sugar
1 teaspoon baking powder
1/4 teaspoon ground nutmeg
1/2 cup cold butter, cubed
1 large egg, lightly beaten
Vanilla ice cream, optional

Steps:

  • Combine the apples, sugar, flour and cinnamon in a large bowl. Transfer to an 11x7-in. baking dish; dot with butter. , For topping, combine the flour, sugar, baking powder and nutmeg in another large bowl. Cut in butter until mixture resembles coarse crumbs. Stir in egg just until moistened; sprinkle over filling., Bake, uncovered, at 375° for 40-45 minutes or until topping is golden brown and apples are tender. Serve warm with ice cream if desired.

3 pounds Macintosh apples (about 6), quartered and cored
Juice of 1 lemon, (about 2 tablespoons)
1 (4-inch) cinnamon stick, broken in half
Pinch of salt
1 to 2 tablespoons light-brown sugar (optional)

Steps:

  • In a medium saucepan, combine apples, lemon juice, cinnamon, and salt. Bring to a boil over medium heat. Cover, and cook, stirring occasionally, until the apples have cooked down into a sauce, 20 to 25 minutes.
  • Using a fork, remove pieces of apple peel from sauce, and discard. Use immediately, or store, refrigerated, in an airtight container for up to 1 week.

4 mcintosh apples (or another firm apple, about 2 lbs)
1/2 cup brown sugar (firmly packed)
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
2 tablespoons water
1 tablespoon butter (no substitutions)

Steps:

  • Peel/core apples and cut into thick slices.
  • Toss together the apples, brown sugar, cinnamon and nutmeg either in a bowl or put in a zippered plastic bag and shake until coated.
  • Cook apple mixture, 2 tbls. of water and 1 tbls. of butter in a medium sized saucepan over medium heat, stirring occasionally.
  • Cook for 8-10 minutes or until apples are tender - but not mushy.
  • Serve just as is or top with vanilla ice cream or whipped topping.

This smells delicious while it bakes. It can easily be multiplied to accomodate a larger family. If you use a cold apple, the sugar will stick to the outside nicely, but it will take longer to cook. I have heard of people using honey instead of sugar, but it tastes funny to me. (note: I'm sorry I originally forgot to post the baking temperature of 375)

Steps:

  • Preheat the oven (or toaster oven) to 375.

  • Spoon the liquid into the dish beneath the apple.
  • Layer the sugar, raisins, and cinnamon in the center of the apple, sprinkling the excess sugar (with a touch of cinnamon) over the top.

  • Continue to cook the apples for another 5-8 minutes. Until they reach a nice golden color, and begin to soften, yet still hold their shape. If you prefer a softer, creamier apple more like an apple sauce, reduce the heat to simmer and continue to cook until they reach your desired consistency. It may be necessary to add a tablespoon or two of water, to keep them from burning.
  • Remove from heat and serve. Enjoy them as they are for dessert. Equally, they are delicious served over oatmeal, cream of wheat, and ice cream. However, one of my favorite uses for these apples are to serve them with pancakes or layered in my Cinnamon Apple Strata.
