3/4-1 teaspoon kosher salt
4 New York strip steaks, 1 inch thick

Steps:

  • Mix all spices together and rub into both sides of steaks.
  • Allow steaks to sit at room temperature for 15 to 20 minutes.
  • Grill over medium-high heat for 8 minutes or until steaks are cooked to desired degree of doneness.

2 teaspoons sugar
Kosher salt and freshly ground pepper
1 1/2 pounds flank steak
2 tablespoons extra-virgin olive oil
1 white onion, diced
2 Cubanelle or banana peppers (or 1 large green bell pepper), seeded and diced
2 cups frozen corn
1 5-ounce can evaporated milk (about 2/3 cup)
3 scallions, thinly sliced
Lime wedges, for serving

Steps:

  • Preheat the broiler. Combine the chile powder, sugar and1 teaspoon each salt and pepper in a small bowl. Brush the steak all over with 1 tablespoon olive oil, then rub the spice blend on both sides. Transfer to a broiler pan; let sit 10 minutes.
  • Meanwhile, heat the remaining 1 tablespoon olive oil in a medium saucepan over medium-high heat. Add the onion and peppers and cook, stirring occasionally, until the onion is translucent, about 4 minutes. Add the frozen corn; cook, stirring, 2 minutes. Reduce the heat to medium and add the evaporated milk. Cook until thick and creamy, about 7 minutes. Season with salt and pepper.
  • Broil the steak 3 to 4 minutes per side for medium rare. Transfer to a cutting board and let sit 5 to 10 minutes, then slice against the grain. Serve the steak with the creamed corn; sprinkle with the scallions and serve with lime wedges.

1 tablespoon chopped fresh parsley
1 tablespoon fresh lemon juice
1/4 teaspoon garlic powder
4 sirloin steaks
1/4 cup ground black pepper
1 1/2 teaspoons white pepper
1/2 teaspoon red pepper flakes
1 teaspoon ground coriander
1/4 cup sugar
1 tablespoon salt
1 teaspoon garlic powder

Steps:

  • Mix together butter, parsley, lemon juice and 1/4 teaspoon garlic powder.
  • Place butter mixture in plastic wrap and roll into a log shape.
  • Chill until firm.
  • Combine black pepper, white pepper, red pepper flakes, coriander, sugar, salt and garlic powder.
  • Rub spice mix into both sides of steaks.

3 tablespoons brown sugar
2 teaspoons ground cinnamon
1 pinch ground cayenne pepper
salt and ground black pepper to taste
2 (6 ounce) beef tenderloin steaks
1 tablespoon canola oil

Steps:

  • Sift ground espresso beans, brown sugar, cinnamon, cayenne pepper, salt, and black pepper together in a bowl. Generously coat all sides of each steak with espresso mixture. Place steaks on a plate and refrigerate for flavors to blend, about 30 minutes.

3-1/2 teaspoons coarsely ground pepper
1 teaspoon brown sugar

1/2 teaspoon kosher salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cumin
1/8 teaspoon ground mustard
4 beef tenderloin steaks (1-1/4 inches thick and 6 ounces each)
1 tablespoon canola oil
1 large shallot, finely chopped
1 tablespoon butter
1 cup reduced-sodium beef broth
1 teaspoon minced fresh thyme
1/2 cup heavy whipping cream
Crumbled blue cheese, optional

Steps:

  • Preheat oven to 350°. In a small bowl, combine cherries and wine; set aside. In a shallow dish, combine the pepper, brown sugar, garlic powder, paprika, coffee, salt, cinnamon, cumin and mustard. Add 1 steak at a time and turn to coat. Cover and refrigerate for 30 minutes. , Place oil in a 10-in. cast-iron or other ovenproof skillet; tilt to coat bottom. Heat oil over medium-high heat; sear steaks, 2 minutes on each side. Bake, uncovered, until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), about 15 minutes. Remove steaks and keep warm., Wipe skillet clean; saute shallot in butter until crisp-tender. Add broth and thyme. Bring to a boil; cook until liquid is reduced by half, about 8 minutes.
