3 large egg whites
1/2 cup sugar
2 tablespoons unsweetened cocoa powder
2 teaspoons cinnamon
1 teaspoon grated orange zest
1/8 teaspoon salt
1/4 teaspoon vanilla extract
1 14-ounce package sweetened shredded coconut

Steps:

  • Preheat the oven to 325 degrees F and line a baking sheet with parchment paper. Whisk the egg whites, sugar, cocoa powder, cinnamon, orange zest, salt and vanilla in a large bowl until combined; fold in the coconut.
  • Scoop heaping tablespoonfuls of the coconut mixture about 1 inch apart onto the baking sheet. Use your fingers to form into pyramids. Bake until golden brown around the edges, 20 to 25 minutes. Let cool 10 minutes on the baking sheet, then transfer to a rack to cool completely.

Steps:

  • Preheat the oven to 325 degrees F. Combine the coconut, condensed milk, and vanilla in a large bowl. Whip the egg whites and salt on high speed in the bowl of an electric mixer fitted with the whisk attachment until they make medium-firm peaks. Carefully fold the egg whites into the coconut mixture. Drop the batter onto sheet pans lined with parchment paper using either a 1 3/4-inch diameter ice cream scoop, or 2 teaspoons. Bake for 25 to 30 minutes, until golden brown. Cool and serve.

1 1/4 cups (300 ml) sugar divided
1 1/2 tsps (7 ml) cinnamon ground (club house)
1/4 tsp (1 ml) cloves ground (club house)
4 oz (125 g) semi-sweet baking chocolate chopped
2 egg whites
1 tbsp (15 ml) water

Steps:

  • Place almonds, 1 cup (250 mL) of the sugar, cinnamon and cloves in food processor. Cover. Process just until nuts are finely ground. Add chocolate. Cover. Process until chocolate is finely grated, but not melted. Add egg whites and water. Cover. Process just until dough clings together.
  • Shape dough into 1-inch (2 1/2 cm) balls. (Dough will be sticky). Roll in remaining sugar to coat. Place about 2 inches (5 cm) apart on parchment paper-lined baking sheets. Using the bottom of a glass, flatten balls to about 1/4-inch (1/2 cm) thickness.
  • Bake in preheated 325°F (160°C) oven 10 to 12 minutes or until tops are set but centers remain moist. (Do not overbake.) Cool on baking sheets 1 minute. Remove to wire racks; cool completely.

1-1/4 cups confectioners' sugar

1-1/2 cups confectioners' sugar

  • Place egg whites in a small bowl; let stand at room temperature for 30 minutes. Sift almond flour, 1-1/4 cups confectioners' sugar and cinnamon together twice., Preheat oven to 325°. Beat egg whites on medium speed until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating on high until stiff peaks form. Fold in almond flour mixture., Cut a small hole in a corner of a food-safe plastic bag. Pipe 1-in.-diameter cookies 2 in. apart onto parchment-lined baking sheets. 1 (7 ounce) bag sweetened flaked coconut
3 tablespoons sugar
2 large egg whites, at room temperature
2 (1 ounce) semi-sweet chocolate baking squares, melted
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees. Line baking sheet with parchment paper or foil; lightly coat with cooking spray (if using nonstick pans or liners, do not use cooking spray).
  • In large bowl, toss coconut with sugar until evenly coated. In a pan melt the chocolate; let cool slightly. In small bowl, combine egg whites, chocolate, vanilla and salt until blended. Add to coconut mixture; blend well with spatula.
  • On prepared baking sheet, form heaping table-spoonfuls of mixture into 15 mounds, 2 inches apart. Bake 15 minutes or until bottoms are golden and tops start to brown (centers will be slightly soft). Let cool 10 minutes on baking sheet; remove with spatula to wire rack; let cool completely on rack. Best served the same day, but can be stored overnight in airtight container.

1 cup powdered sugar
¾ cup almond flour
2 tablespoons cocoa powder

Steps:

  • Sift the dry ingredients together in a medium bowl.
  • In a separate bowl, beat egg whites until frothy and gradually add the granulated sugar. Beat until stiff peaks form.
  • Add about half of the dry ingredients to the egg whites, fold until mostly combined, and slowly add the other half. Pipe mixture onto a silicon mat in 1-inch circles.
  • Tap the tray a couple times on a hard, flat surface to remove air bubbles.
  • Let them sit at room temperature for about 30-60 minutes (until dry to the touch) and bake for 16-17 minutes at 300°F.
  • Serve.
  • Enjoy!

1 3/4 cups whole almonds
1/2 cup whole almond
3/4 cup sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla
2 egg whites

Steps:

  • Preheat oven to 400 degrees F. Grease baking sheets; set aside.
  • Place 5 squares chocolate in food processor; process until coarsely chopped. Add 1 3/4 cups almonds and sugar; process using on/off pulsing action until mixture is finely ground. Add cinnamon, vanilla and egg whites; process just until mixture forms moist dough.
  • Form dough into 1-inch balls (dough will be sticky). Place about 2 inches apart on prepared baking sheets. Press 1 almond on top of each cookie.
  • Bake 8-10 minutes or just until set. Cool 2 minutes on baking sheets. Remove cookies from baking sheets to wire racks. Cool completely.
  • Heat remaining 3 squares chocolate in small saucepan over very low heat until melted. Spoon chocolate into small resealable plastic food storage bag. Cut small corner off bottom of bag with scissors. Drizzle chocolate over cookies.
  • For long-term storage, allow cookies to stand until chocolate drizzle has hardened. Store in airtight containers.

¾ cup sweetened condensed milk
¼ teaspoon almond extract
1 ½ teaspoons vanilla extract
¼ teaspoon fine salt
1 large egg white
3 cups shredded unsweetened coconut
1 (4 ounce) bar semisweet chocolate, chopped, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine condensed milk, almond extract, vanilla extract, salt, and egg white in a bowl. Whisk until thoroughly combined. Add about 2 1/3 cups shredded coconut. Mix with a spatula until mixture is sticky and holds together. Form into balls using a sorbet scoop.
  • Roll balls in remaining coconut. Space macaroons evenly onto a silicone-lined baking sheet.
