Cinnamon Mocha Biscotti Recipe

Ingredients:

  1. butter
  2. brown sugar
  3. white sugar
  4. instant espresso
  5. eggs
  6. vanilla
  7. all-purpose flour
  8. baking powder
  9. salt
  10. ground cinnamon
  11. pecans
  12. miniature semisweet chocolate chips
  13. cinnamon baking chips

Steps:

  1. preheat oven to 325f on convection bake setting
  2. combine butter , sugars and espresso or coffee granules in a large bowl and beat with an electric mixer until light and fluffy
  3. add eggs , one at a time , beating well after each addition
  4. add vanilla and mix briefly
  5. add flour , baking powder , salt and cinnamon and mix until well blended
  6. fold in pecans , chocolate morsels and cinnamon chips
  7. line a baking sheet with parchment paper
  8. scoop dough out onto paper and form into a large rectangle , -inch thick
  9. bake 25 minutes , or until firm
  10. remove from oven and cool 10 minutes
  11. use a serrated knife to cut the dough into -inch thick slices
  12. place on a parchment-lined baking sheet and return to the oven for 8 minutes
  13. turn and bake 8 minutes more
  14. remove from oven and cool completely on wire racks before storing in an airtight container
