AMAZING APPLE CROSTATA

Amazing Apple Crostata image

There's an Italian restaurant famous for their family-style eating. You'd think something as simple as apple pie wouldn't be as decadent or exotic as this, but you would be very, very wrong. I'm not a dessert lover but I took one of these home and ate it even after it was all soggy from melted ice cream and savored every morsel. There are no words for how good this is. This crust is to die for!

Categories     Desserts     Pies     Tarts     Fruit Tart Recipes

Time 1h35m

Yield 6

Number Of Ingredients 10

1 ¾ cups all-purpose flour
2 tablespoons white sugar
1 teaspoon salt
¾ cup chilled unsalted butter, cut into small pieces
2 tablespoons ice water, or more if needed
1 lemon, halved
6 small Gala apples, peeled and thinly sliced
½ cup white sugar
½ teaspoon ground cinnamon
2 teaspoons white sugar

Steps:

  • Mix flour, 2 tablespoons sugar, and salt together with an electric mixer until combined. Mix in butter until mixture resembles coarse meal. Add ice water, 2 teaspoons at a time, while the mixer is running until dough just holds together. Test dough by pinching a small amount between your fingers; if it is crumbly, add a 1 teaspoon more ice water at a time.
  • Wrap dough in plastic wrap and chill until slightly firm, 20 to 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Squeeze 1/2 the lemon over the apple slices to keep from browning.
  • Place a large piece of parchment paper on a flat work surface. Roll dough into a round 12 to 16 inches in diameter, 1/4 to 1/2-inch thick. Arrange apple slices in 2 layers on the dough, leaving a 1 1/2 to 2-inch border all around. Fold up the border, pleating the edge to make it fit; leave most of the apples uncovered.
  • Combine 1/2 cup sugar and cinnamon in a small bowl. Sprinkle over apples. Squeeze remaining 1/2 lemon over apples. Sprinkle 2 teaspoons sugar over crust. Transfer parchment paper to a baking sheet.
  • Bake in the preheated oven until crust is golden brown, 50 to 60 minutes.

APPLE CROSTATA OR FREE FORM APPLE PIE

Apple Crostata or Free form Apple Pie image

Ina Garten's apple crostata is the best apple pie recipe you will ever need! Flaky buttery crust envelopes chopped apples with grated orange peel, cinnamon and allspice. I add a little cream to the apples for a yummy creamy flavor.

Provided by Karins Kottage

Categories     Dessert

Number Of Ingredients 14

2 c flour
1/4 c sugar
2 sticks cold butter
1/2 tsp salt
1/4 c Ice water
4-5 large apples (I used a mix of green and red) (peeled)
1 orange zested
1/4 c flour
4 Tbsp cold butter
1/4 tsp salt
1/4 tsp cinnamon
1/8 tsp allspice
1/8 tsp ginger
2 Tbsp cream

Steps:

  • 1. Put all of the dry ingredients in the bowl of a food processor, fitted with the dough attachment. Pulse 2 or 3 times to combine.2. Add the butter all at once and pulse 12 to 15 times, until the butter is the size of peas.3. Add a 1/4 cup of the ice water all at once and pulse the dough until it begins to come together around the blade.4. Turn the dough out onto a well-floured surface and knead it a few times until you form a smooth ball. Divide the ball into two pieces and flatten each piece into a disk. Wrap in plastic wrap. If you're making one tart, place one disk in the refrigerator for an hour and freeze the other disk. Otherwise, if you're making two tarts, refrigerate both disks of dough for 30 min. to 1 hour.

APPLE GALETTE RECIPE (APPLE CROSTATA)

Apple Galette Recipe (Apple Crostata) image

Luscious layers of baked apple wrapped in an easy tart pastry, my Apple Galette recipe is one of the easiest dessert recipes you can have in your arsenal. Ready in under an hour!

Provided by Isabel Laessig

Categories     Dessert

Time 1h5m

Number Of Ingredients 12

1½ cups all-purpose flour
3 Tablespoons powdered sugar
1⅓ sticks salted butter (cubed and chilled)
2-3 Tablespoons ice water
1 large egg (lightly beaten)
3 medium granny smith apples
¼ cup packed light brown sugar
1½ Tablespoons all-purpose flour
2 teaspoons cinnamon
squeeze of lemon
1 egg
2 teaspoons turbinado sugar

Steps:

  • Place the flour, sugar and butter in a food processor and pulse for 20 seconds or until the largest piece of butter is the size of a pea. Add the egg and process just until combined. With the processor on low, drizzle in the iced water just until the dough starts to clump. Then, turn the dough out onto a very lightly floured board and just gently pull it together - don't knead it too much. Wrap it in plastic wrap or baking paper and place it in the fridge for ½ an hour to rest.
  • Preheat the oven to 395°F and line a baking tray with parchment paper. Peel the apples, then chop each apple into quarters. Slice out the core of each quarter and then cut each quarter into 4 or 5 slices. Place the apple slices in a bowl and add the sugar, flour, cinnamon and lemon juice.
  • Sprinkle some flour over the bench top, place the dough on top and sprinkle the top with a little flour too. Gently roll it out to about a 10 inch circle (about ½ of an inch thick). Place the rolling pin on the dough on the furthest side from you, wrap the top of the dough over the rolling pin and roll it back towards you, rolling the dough around the rolling pin.Roll it back out in reverse onto the prepared baking tray.Arrange or scatter the apples in the center of the disk of dough, making sure to leave a 1.5 inch ring clear around the edge. Discard any remaining juice that may have come out of the apples in the bowl.Gently gather the edges of the dough and fold over the edge of the apples, leaving the center uncovered.Brush the egg around the edge of the pastry and sprinkle with the turbinado sugar.
  • Bake for around 45 minutes until the edges of the pastry are golden and crisp. If there are any pools of liquid in the galette, you can just soak a little away with paper towel. Allow to cool for 5 minutes before serving. Enjoy!

APPLE CROSTATA WITH CARAMEL SAUCE

Apple Crostata With Caramel Sauce image

This rustic apple pie comes together quickly when using a premade or refrigerated pie crust. I like to use Jonagold apples sliced pretty thin, about 2 medium will equal the 4 cups.

Provided by newspapergal

Categories     Dessert

Time 55m

Yield 6 serving(s)

Number Of Ingredients 9

12 inches pie crusts
1/2 cup sugar
3 tablespoons all-purpose flour
4 cups chopped peeled apples
2 tablespoons sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1 tablespoon butter
1 cup caramel topping (optional)

Steps:

  • Heat oven to 400ºF.
  • Mix 1/2 cup sugar and the flour in large bowl. Stir in apples. The sugar-flour mixture will not all stick to the apples; that's OK.
  • Spread the apple mixture uniformly from center of the dough circle to within 2 inches of edge. Fold edge of dough over apple mixture; crimp edge of dough slightly.
  • Mix 2 tablespoons sugar, nutmeg & cinnamon; sprinkle over apples and dough.
  • Cut the 1 Tbsp butter into 5 or 6 small pieces; spread on top of the apples.
  • Bake 27 to 32 minutes or until crust is golden brown.
  • Cut into wedges. Serve warm drizzled with caramel topping.
