APPLESAUCE MEATBALLS

Applesauce Meatballs image

This was my mother's standard dinner recipe for guests. These meatballs are juicy and packed with flavor! They go great with scalloped potatoes as a side dish.

Categories     Main Dish Recipes     Meatball Recipes

Time 1h35m

Yield 4

Number Of Ingredients 10

1 cup applesauce
1 egg
1 cup bread crumbs
½ teaspoon salt and pepper to taste
1 pound ground beef
flour
1 tablespoon vegetable oil
4 carrots, peeled and thinly sliced
2 onions, thinly sliced
3 cups tomato juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine applesauce, egg, bread crumbs, and salt and pepper, with ground beef; mix until well blended. (This is best done by hand.) Form mixture into medium-sized meatballs, and roll in flour.
  • Heat 1 teaspoon of oil in a large skillet over medium high or high heat. Cook meatballs, turning occasionally, until evenly browned but not cooked through. Transfer to a baking dish and set aside.
  • In the same skillet, partially cook the carrots and onions over medium high heat. Add tomato juice, season to taste with salt and pepper, and bring to a boil. Reduce heat, and simmer for 5 minutes, then pour over meatballs.
  • Cook, covered, in the preheated oven for 45 minutes, or until carrots are tender and meatballs are cooked through. Cook uncovered for 10 minutes before removing from the oven.

GRANDMA'S APPLESAUCE MEATBALLS

Grandma's Applesauce Meatballs image

This is one of my family's favorite 'comfort' foods - by all six generations. Don't let the applesauce scare you off; you can't taste it, but it keeps the meatballs tender and moist. Add mushrooms and/or pearl onions for an even heartier 'comfort' meal! Serve over hot buttered noodles or rice. We like a salad and garlic bread, or a plate of sliced tomatoes and cucumbers. Enjoy!

Time 1h5m

Yield 6

Number Of Ingredients 12

1 egg
½ cup milk
1 ½ cups herb seasoned croutons
⅔ cup applesauce
3 tablespoons chopped onion
3 tablespoons minced garlic, or to taste
½ cup shredded Cheddar cheese
salt and black pepper to taste
1 ½ pounds ground beef
1 (10.75 ounce) can condensed cream of celery soup
½ cup evaporated milk
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13 inch baking dish with cooking spray.
  • Whisk the egg and milk together in a large bowl, and stir in the croutons. Allow the croutons to soak up the milk mixture for about 2 minutes. Lightly stir in the applesauce, onion, garlic, Cheddar cheese, and salt and pepper, and mix in ground beef with your hands until thoroughly combined. Form the meat mixture into 1 1/2-inch balls, and place into the prepared baking dish. In the same bowl, whisk together the cream of celery soup with evaporated milk. Pour the sauce over the meatballs.
  • Bake, uncovered, in the preheated oven until the sauce is bubbling and thickened and the meat is no longer pink in the middle, about 45 minutes. Sprinkle with Parmesan cheese 15 minutes before end of baking, and bake until the cheese is melted and beginning to brown. An instant-read thermometer inserted into the center of a meatball should read 160 degrees F (70 degrees C).

EXCELLENT CLASSIC MEATBALLS

Excellent Classic Meatballs image

These are the best meatballs I've ever tasted!! Add them to a simmering pot of sauce, have meatball subs or, as one blog suggested, serve them on top of polenta for a surprisingly tasty entree. The sauteed onions and garlic make this recipe special, but you can vary the meats or the size of the meatballs to suit your tastes. From chef Anne Burrell, Mario Batali's long time sous chef on Iron Chef America, who mixes crazy personality with excellent techniques. The recipe came with one for marinara sauce, but there are so many good ones posted here I didn't include it.

Categories     Pork

Time 1h23m

Yield 18-20 golfball-sized meatballs

Number Of Ingredients 13

extra virgin olive oil
1 large onion, cut in a 1/4-inch dice
kosher salt (don't use regular)
2 garlic cloves, smashed and chopped
1 pinch crushed red pepper flakes
1/2 lb ground beef
1/2 lb ground veal
1/2 lb ground pork
2 large eggs
1 cup grated parmigiano
1/4 cup finely chopped fresh Italian parsley
1 cup breadcrumbs
1/2 cup water

Steps:

  • Coat a large saute pan with olive oil, add the onions and bring to a medium-high heat. Season the onions generously with Kosher salt and cook for about 5 to 7 minutes. The onions should be very soft and aromatic but have no color. Add the garlic and crushed red pepper and saute for another 1 to 2 minutes. Turn off heat and allow to cool.
  • In a large bowl combine the meats, eggs, Parmigiano, parsley and bread crumbs. It works well to squish the mixture with your hands. Add the cooled onion mixture, season generously with Kosher salt and squish some more. Add the water and do 1 final really good squish. The mixture should be quite wet.
  • Test the seasoning of the mix by making a mini hamburger size patty and cooking it. The mixture should taste really good! If it doesn't, it is probably missing salt. Add more. Add more anyway.
  • Preheat the oven to 350 degrees F.
  • Shape the meat into desired size. Some people like 'em big; some people like 'em small. I prefer meatballs slightly larger than a golf ball. Coat a large saute pan with olive oil and bring to a medium-high heat. Brown the meatballs on all sides.
  • Place them on a cookie sheet and bake them in the preheated oven for about 15 minutes or until the meatballs are cooked all the way through. If using right away, add them to a big pot of marinara sauce. If not using right away, they can be frozen for later use. Serve with pasta and sauce or just eat them straight out of the pot! YUM!
