CINNAMON SCONES RECIPE

These delicious scones are buttery, rich and swirled with an amazing cinnamon filling.

2 cups flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup cup butter (cold)
1/2 cup half and half
1 egg
1 teaspoon vanilla
1/4 cup brown sugar
1 teaspoon cinnamon
1 cup powdered sugar
2 tablespoons milk

Steps:

  • Preheat the oven to 400. Line a baking sheet with parchment or silicone, then set aside.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt. Grate the cold butter into the flour mixture and toss to coat.
  • In a small bowl, whisk together the half and half, egg, and vanilla. Pour the wet ingredients into the dry ingredients, and mix until just combined, being careful not to overmix. The dough should be a little rough and shaggy, but should hold together.
  • Gently pat the dough out on a floured surface into a rectangle that is approximately 8 inches tall and 10 inches wide.
  • In a small bowl, mix together the brown sugar and cinnamon. Spread the brown sugar mixture evenly over the dough.
  • Gently roll the dough up, starting on the wider side, to form a long tube. Cut the dough into ten even-sized pieces, and place them on the prepared baking sheet. Bake 18-20 minutes, or until golden brown. Let cool.
  • In a small bowl, whisk together the powdered sugar and 1 tablespoon milk. Add additional milk, as needed, to make a smooth and somewhat runny glaze. Drizzle the glaze over the cooled scones and let set.

⅓ cup packed brown sugar (light or dark)
2 ½ teaspoons baking powder
1 ½ teaspoons ground cinnamon
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon ground nutmeg
¾ cup cold unsalted butter, cut in small pieces
1 cup buttermilk
1 ½ teaspoons vanilla extract
¾ cup cinnamon chips

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Whisk flour, both sugars, baking powder, cinnamon, baking soda, salt, and nutmeg together in a large bowl. Cut in butter using the bread hook attachment of an electric mixer until mixture resembles coarse crumbs. Add buttermilk and vanilla, mixing just until dough is moistened; fold in cinnamon chips.
  • Drop 1/4 cups of dough 2 inches apart onto a cookie sheet.
  • Bake in the preheated oven until lightly browned, 15 to 17 minutes.

1 tablespoon baking powder, heaping
1/2 cup white sugar
1/4 teaspoon salt
1/2 cup margarine or 1/2 cup butter
3/4 cup buttermilk
1/2 cup raisins

Steps:

  • Preheat oven to 400°F.
  • In large bowl mix together flour, baking soda, baking powder, sugar and salt.
  • Cut in margarine with pastry cutter till crumbly.
  • Add buttermilk and raisins and mix. Batter should be stiff but not dry.
  • Drop by large rounded spoonfuls onto cookie sheet lined with parchment paper. Sprinkle tops of scones with sugar.
  • Bake 15 minutes till golden brown.
  • Serve with strawberry jam and devonshire cream.
  • Recipe may be doubled.

2 1/2 tablespoons melted butter
2 tablespoons sugar
1 teaspoon cinnamon

Steps:

  • Combine the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  • Cut in the cold butter, with a pastry blender, until it resembles course crumbs.
  • Stir in buttermilk until moistened.
  • Fold in cinnamon chips.
  • Knead gently (10-12 times) or until dough is no longer sticky on a lightly floured surface.
  • Cut the dough in half. Then gently roll each portion into a 7 inch circle.
  • Brush each circle with melted butter.
  • In a separate bowl, combine the sugar and cinnamon for the topping. Then sprinkle the mixture onto the circles (You can add more sugar and cinnamon if you like).
  • Cut each circle into six wedges. Then separate the wedges and place on an ungreased baking sheet.
  • Bake at 425 degrees for 11-13 minutes or until lightly brown.
