This recipe was given to me by a friend a couple years ago. When I made a batch, my husband couldn't figure out what was different about them - it's the cinnamon graham that gives them that special taste.

1 cup butter, softened
1 cup packed brown sugar
½ cup white sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup rolled oats
2 cups semisweet chocolate chips
½ cup chopped pecans
2 cups crumbled cinnamon graham crackers

Steps:

  • In a large bowl, cream butter, sugar and brown sugar until fluffy. Add eggs and vanilla and beat until smooth. In another bowl, mix flour, baking soda, baking powder and salt. Add dry ingredients to creamed mixture and stir until it becomes a soft dough.
  • Stir in oats, chocolate chips, pecans, and 1 cup of graham cracker crumbs.
  • Drop teaspoonfuls of dough into remaining graham cracker crumbs and coat well. Place on a lightly greased baking sheet and bake at 350 degrees F (175 degrees C) for 10-13 minutes or until lightly browned. Cool on wire rack and store in airtight container.

1 1/4 cups flour
1 tablespoon baking powder
1/8 teaspoon salt
1 egg, slightly beaten
1/2 cup milk
1/3 cup packed brown sugar
3 tablespoons vegetable oil
1 1/2 cups post Banana Nut Crunch cereal
1 cup mashed ripe banana
1/2 cup post Banana Nut Crunch cereal, lightly crushed
1 tablespoon brown sugar
1/2 teaspoon ground cinnamon
1 tablespoon melted butter

Steps:

  • In a small bowl, combine flour, baking powder and salt.
  • In another bowl, whisk together egg, milk, brown sugar, and oil; add flour mixture; stir just until moistened (batter will be lumpy) then stir in cereal and banana.
  • Spoon batter into muffin tin that has been lightly sprayed with no-stick cooking spray or lined with paper muffin cups, filling each cup 2/3 full.
  • Combine remaining cereal, brown sugar, and cinnamon; drizzle melted butter over cereal mixture and stir until crumbly; sprinkle topping evenly over muffins.
  • Bake at 400° for 20 minutes or until golden-brown.

12 cinnamon graham crackers
2 cups chopped walnuts
1 cup butter
1 cup packed brown sugar
½ teaspoon ground cinnamon

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 10x15 inch jellyroll pan.
  • Arrange cinnamon graham crackers with sides touching in a single layer to cover the bottom of the pan. Sprinkle the walnuts evenly over the crackers. In a small saucepan over medium heat, combine the brown sugar, butter and cinnamon. Cook stirring constantly until the mixture begins to boil. Continue to boil the syrup for 3 minutes without stirring. Remove from heat and pour over crackers.
  • Bake for 8 to 10 minutes in the preheated oven, until bubbly and slightly darker around the edges. Cool completely in the pan. Break into pieces and store in an airtight container at room temperature.

3 cups Honey Nut Chex
3 cups Cinnamon Chex
2-1/4 cups pecan halves
1-1/2 cups dried banana chips
1/3 cup butter, cubed
1/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon banana extract
1/2 teaspoon rum extract

Steps:

  • Place the first 4 ingredients in a large microwave-safe bowl. Place butter, brown sugar and cinnamon in a small microwave-safe bowl; microwave on high for 2 minutes, stirring once. Stir in extracts. Pour over cereal mixture; toss to coat., Microwave cereal mixture on high for 3 minutes, stirring every minute. Spread onto baking sheets to cool. Store in an airtight container.
