1/4 cup butter, softened
1 cup packed brown sugar
1 egg
2 tablespoons ground flaxseed
2 tablespoons honey
2 cups old-fashioned oats
1 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 cup raisins

Steps:

  • In a large bowl, beat butter and brown sugar until crumbly, about 2 minutes. Add egg; beat well. Stir in flax and honey. In a small bowl, combine the oats, flour, cinnamon and baking soda; stir into creamed mixture just until blended. Gently stir in raisins., Press into an 11x7-in. baking dish coated with cooking spray. Bake at 350° for 14-18 minutes or until set and edges are lightly browned. Cool on a wire rack. Cut into bars.

Healthy Granola image

This delicious healthy granola recipe is naturally sweetened with maple syrup (or honey). It's made with oats, coconut oil and your favorite nuts and fruit. Make it your own! Recipe yields about 8 cups granola, enough for about 16 half-cup servings.

4 cups old-fashioned rolled oats (use certified gluten-free oats for gluten-free granola)
1 1/2 cup raw nuts and/or seeds (I used 1 cup pecans and 1/2 cup pepitas)
1 teaspoon fine-grain sea salt (if you're using standard table salt, scale back to 3/4 teaspoon)
1/2 teaspoon ground cinnamon
1/2 cup melted coconut oil or olive oil
1/2 cup maple syrup or honey
1 teaspoon vanilla extract
2/3 cup dried fruit, chopped if large (I used dried cranberries)
Totally optional additional mix-ins: 1/2 cup chocolate chips or coconut flakes*

Steps:

  • Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
  • Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
  • Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
  • Let the granola cool completely, undisturbed (at least 45 minutes). Top with the dried fruit (and optional chocolate chips, if using). Break the granola into pieces with your hands if you want to retain big chunks, or stir it around with a spoon if you don't want extra-clumpy granola.
  • Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months. The dried fruit can freeze solid, so let it warm to room temperature for 5 to 10 minutes before serving.

3 cups rolled oats
1/4 cup brown sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup pecans or cashews
3 tablespoons coconut oil
1/3 cup maple syrup
2 teaspoons pure vanilla extract
1 large egg white

Steps:

  • 1. Preheat the oven to 300 degrees. Line a large baking tray with a silicone baking mat or parchment. Set aside.
  • 2. Add the oats, brown sugar, salt, cinnamon, and pecans to a large mixing bowl. Gently toss to combine. Set aside.
  • 3. Place the coconut oil and maple syrup in a medium measuring cup. Heat for 10 to 20 seconds, or until the oil has combined. Gently whisk the vanilla in with a fork.
  • 4. Pour the liquid over your oat mixture. Gently toss to combine.
  • 5. Whisk the egg white until foamy. Drizzle over the mixture and give it one last toss to coat.
  • 6. Turn the granola onto your prepared pan. Spread into an even layer.
  • 7. Bake 30 minutes, stirring once halfway through. Allow to cool completely before packaging.

2 cups old-fashioned oats
¾ cup chopped almonds ((with skin))
¾ cup chopped pecans
½ cup desiccated coconut ((or shredded/flaked))
1/8 teaspoon salt
2 teaspoon ground cinnamon
2 tablespoons canola or other flavorless oil
1/4 cup pure maple syrup
Optional: 1/2 cup combination of seeds ((flaxseed/pumpkin/ sunflower/sesame seeds))
Optional: 1/2 teaspoon ground ginger and/or cardamom for spiced granola

Steps:

  • Preheat oven to 160C/325F. Line a baking sheet with parchment paper or a silicone baking mat.
  • Mix all ingredients except for oil and maple syrup in a bowl. In another small bowl mix oil and maple, then drizzle evenly on top of the oat mixture. Toss until evenly coated. Place on the baking sheet in one layer. Bake for 25-30 minutes, stirring the mixture every 10 minutes to prevent burning. Allow to cool to room temperature. Store at room temperature or in the fridge in an airtight container for up to a month.

2 tablespoons whole wheat flour
1 tablespoon ground cinnamon
1/2 cup honey
2 tablespoons vegetable oil
2 tablespoons vanilla extract
1/4 teaspoon salt
1 cup golden raisins

Steps:

  • In a large bowl, combine the first 10 ingredients. In a saucepan over medium heat, cook honey and oil for 4-5 minutes. Remove from the heat; stir in vanilla and salt. Pour over oat mixture and toss to coat. , Transfer to a greased 15x10x1-in. baking pan. Bake at 275° for 45-50 minutes or until golden brown, stirring every 15 minutes. Cool, stirring occasionally. Stir in raisins. Store in an airtight container.

Why buy bagged granola for $5/6 a bag when you can make your own. Most of the pre-made granolas you buy in the store are made with tons of sugar or high fructose corn syrup, AND a lot of them (I've found) contain milk powder. This was so easy to make at home and tasted AMAZING. The nuts I used were all raw, unsalted. Feel free to swap out whatever nuts or dried fruit you might have on hand. I actually used pecans in place of the walnuts, and a mix of half raisins and half dried cranberries for the dried fruit. Next time I might try some dried blueberries

Steps:

  • Preheat the oven to 325 degrees F. Line a baking sheet with parchment paper.
  • In a large bowl, toss the oats with the cinnamon and salt.
  • In a medium bowl, stir together the oil, honey, brown sugar, and vanilla. Whisk until completely combined.
  • Pour the honey mixture over the oats mixture and use your hands to combine them: Gather up some of the mixture in each hand and make a fist. Repeat until all of the oats are coated with the honey mixture.
  • Pour the mixture onto the prepared baking sheet. Spread it out evenly, but leave a few clumps here and there for texture.
