Easy Homemade Cinnamon Rolls image

I love this easy homemade cinnamon roll recipe because it allows me to skip the first rise, and I can get them on the table a lot sooner. We usually top with cream cheese, but we have used buttercream.

1 cup milk
⅓ cup butter
2 eggs, room temperature
4 cups bread flour, divided
½ cup white sugar
2 ½ teaspoons rapid-rise yeast
1 teaspoon salt
1 tablespoon vegetable oil
¾ cup packed brown sugar
2 ½ tablespoons ground cinnamon
⅓ cup butter, softened

Steps:

  • Heat milk and 1/3 cup butter together in a microwave-safe container in a microwave on high power for 30 seconds. Stir and repeat until mixture reaches 120 to 130 degrees F (49 to 54 degrees C). If too cool, microwave for 15 seconds more; if too hot, let cool to proper temperature.
  • Whisk eggs lightly in a small bowl, adding a small amount of milk mixture at a time to temper eggs until thoroughly combined. Pour mixture into the bowl of an electric stand mixer.
  • Mix 3 cups flour, sugar, yeast, and salt together in a large mixing bowl. Add to milk mixture and beat on low speed using a dough hook, scraping down the sides of the bowl using a rubber spatula as needed.
  • Add remaining flour slowly, 1 tablespoon at a time, until dough begins to pull away from the sides of the bowl. Continue to knead on low speed until dough looks smooth, 7 to 10 minutes; dough will be sticky and the bottom will remain stuck to the bowl.
  • Pour vegetable oil over dough and turn to coat. Cover and let rest for 10 minutes.
  • Turn dough out onto a lightly floured surface and use your hands to shape into a small rectangle. Roll dough out into a rectangle that is about 1/4-inch thick.
  • Mix brown sugar and cinnamon together in a small bowl. Spread 1/3 cup softened butter over dough and sprinkle with cinnamon-sugar mixture. Roll dough into a log and cut into 12 equal pieces.
  • Place rolls, cut-side down and almost touching, into a greased 9x13-inch pan. Cover loosely with plastic wrap and let rise until doubled in size, 30 to 40 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Bake in the preheated oven until golden, 15 to 20 minutes. Remove from the oven and immediately turn out onto a tray or plate to cool; this allows the inside mixture to drip back into the rolls as they cool.

1 cup milk
¼ cup white sugar
¼ cup shortening
1 teaspoon salt
1 (.25 ounce) package yeast
¼ cup warm water
3 ½ cups all-purpose flour
1 large egg
1 cup white sugar
½ cup melted butter
3 tablespoons ground cinnamon
2 cups confectioners' sugar
2 tablespoons water, or more as needed

Steps:

  • Prepare dough: Heat milk in a saucepan over medium heat until just about to boil, 3 to 4 minutes. Add sugar, shortening, and salt; remove from heat and let cool to lukewarm, about 10 minutes.
  • While the milk mixture is cooling, sprinkle yeast over water and let sit for 10 minutes.
  • Pour lukewarm milk mixture into a bowl; add 1 cup flour and beat well. Beat in yeast mixture and egg. Gradually beat in remaining 2 1/2 cups flour. Cover and let rise until doubled in size, about 1 hour. Test by pressing a finger into the dough; a fingerprint should stay.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease two 9-inch square baking pans.
  • Prepare filling: Mix sugar, melted butter, and cinnamon together in a bowl.
  • Turn dough out onto a lightly floured board and divide in half. Roll one piece into a 16x8-inch rectangle. Spread 1/2 of the filling over top. Start at the long edge of the rectangle and roll up as for a jelly roll. Cut into eight 1-inch slices and place cut-sides down into one prepared baking pan. Repeat with remaining rectangle.
  • Bake in the oven until golden brown, 20 to 25 minutes.
  • Meanwhile, prepare frosting by mixing confectioners' sugar and water together in a bowl.
  • Remove rolls from the oven. Transfer to a large serving plate and spread frosting over top.

1 cup pecans, chopped
4 cups powdered sugar
1 cup milk
4 ounces margarine
1 tablespoon almond extract

Steps:

  • For the dough: In a large mixing bowl, beat the eggs, granulated sugar, and salt for the dough mixture. Combine the warm milk and margarine and add to the egg mixture. Slowly add 4 cups flour and beat well. Add the yeast and mix thoroughly. Add the remaining 4 cups flour and mix on medium speed for 7 minutes. Place the dough in an oiled bowl and cover with plastic wrap. Let the dough rise to double its size, about 1 hour.
  • Preheat the oven to 350 degrees F. Roll the dough into a 1 1/2-by-2-foot rectangle.
  • For the filling: Spread 4 ounces of margarine over the dough and sprinkle entire surface with brown sugar, cinnamon, and chopped pecans. Roll the dough into a cylinder shape starting with the bottom edge, and then cut into 12 slices. Place the slices onto an oiled pan and bake for 15 minutes. Cool and cover with icing.
  • For the icing: Stir the powdered sugar, milk, margarine and almond extract until thoroughly combined.

1 tablespoon milk
½ teaspoon vanilla extract

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease a baking dish or loaf pan.
  • Mix flour and Greek yogurt together in a medium bowl until a shaggy dough forms. Transfer to a surface dusted with more self-rising flour, and knead for 8 to 10 minutes. Continue adding flour as needed if the dough is too sticky.
  • Roll out the dough with a rolling pin to form a large 10x12-inch rectangle.
  • Combine brown sugar, melted butter, and cinnamon in a small bowl. Spread this mixture over the top of the dough. Starting at one of the shorter ends, roll the dough up tightly until it forms a log. Slice into 6 even pieces. Transfer cinnamon rolls to the prepared pan.

  • In the meantime, whisk together powdered sugar, cream cheese, softened butter, milk, and vanilla until smooth. When the cinnamon rolls have finished cooking, remove from the oven and drizzle the cream cheese glaze on top.

½ cup milk
½ cup water
¼ cup butter
3 cups unbleached all-purpose flour
½ cup white sugar
½ teaspoon salt
1 (.25 ounce) package rapid-rise yeast
1 egg
¼ cup butter, softened
1 cup light brown sugar
1 tablespoon ground cinnamon
3 ounces cream cheese, softened
1 tablespoon butter, softened
1 tablespoon milk
½ teaspoon vanilla extract
2 cups confectioners' sugar

Steps:

  • Heat milk, water, and 1/4 cup butter together in a saucepan over medium heat until bubbling, about 5 minutes. Let cool to 120 to 130 degrees F (49 to 54 degrees C), 1 to 2 minutes.
  • Mix flour, white sugar, salt, and yeast together in a separate bowl. Mix egg into warm milk mixture.
  • Pour milk mixture and 1/3 of the flour mixture into a mixing bowl; beat using an electric mixer until moistened. Add remaining dry ingredients slowly until a dough has pulled together. Knead on a lightly floured surface for 8 minutes. Place in a covered bowl and let rise in a dry, warm place until doubled in size, 1 to 2 hours.
  • Punch dough down. Roll on a lightly floured surface into a 16x12-inch rectangle. Spread 1/4 cup softened butter evenly over dough. Mix brown sugar and cinnamon together in small bowl and sprinkle evenly over dough. Roll up from the short side; cut into 12 even rolls.
  • Place rolls into a greased 9x13-inch glass baking dish. Cover and let rise in a dry, warm place, 8 hours, to overnight.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Bake in the preheated oven until golden, about 17 minutes.
  • Meanwhile, beat cream cheese, 1 tablespoon butter, milk, and vanilla extract for icing using an electric mixer in a bowl until creamy; slowly mix in confectioners' sugar until smooth.
  • Remove cinnamon rolls from the oven and flip out onto a cooling rack; let cool slightly, 5 to 10 minutes, before covering in icing.
