This is a great recipe. It is a wonderful vanilla wafer with a touch of cinnamon sugar sprinkled on top. It adds a wonderful bit of sweetness 8)

1 1/2 cups sugar
1 cup butter or 1 cup margarine, softened
2 eggs
1 tablespoon vanilla extract
2 teaspoons baking powder
3 cups sifted all-purpose flour
2 tablespoons milk
1 tablespoon sugar, for rolling
mccormick cinnamon sugar, to sprinkle

Steps:

  • Mix 1 1/2 cup sugar and butter in large mixer bowl; cream with electric mixer until light and fluffy.
  • Beat in eggs and vanilla extract. Gradually add baking powder to sifted flour and sift again.
  • Gradually add to the butter mixture, mixing well; stir in the milk and combine well.
  • Cover and chill at least 2 hours.
  • Preheat oven to 400° and lightly grease cookie sheets; set aside.
  • Lightly flour your work surface and sprinkle with 1 tablespoon sugar.
  • Roll cold dough to 1/8-inch thickness and cut with 2-inch cookie cutters.
  • Place 1 inch apart on cookie sheets; sprinkle with cinnamon sugar.
  • Bake 6-8 minutes. Remove from sheets and place cool on wire racks.

1 1/2 cups all purpose flour
1 stick unsalted butter
3/4 cup sugar
3/4 teaspoon baking powder
1/2 teaspoon salt
1 egg
1 tablespoon vanilla extract
1 tablespoon milk
Cinnamon sugar (1/4 cup sugar and 1 tbs cinnamon)

Steps:

  • In a large bowl or mixer, beat on medium speed sugar and butter for about 2 minutes - until creamed.
  • Add vanilla and egg and beat on medium for about 1 minute.
  • In a small bowl mix flour, baking powder and salt.
  • Add flour mixture to bowl and mix on low speed until combined. Add milk and combine.
  • Refrigerate dough for 30 minutes.
  • Preheat oven to 350 degrees.
  • Using a 1/2 teaspoon measuring spoon, scoop batter and roll into balls.
  • Roll balls in cinnamon sugar and place onto baking sheet.
  • Bake wafers for about 12 minutes.
  • Remove from oven and allow to cool.

1/2 teaspoon salt
1/2 cup sugar
1/2 teaspoon cinnamon
Pinch nutmeg
3 egg whites, beaten
1/2 stick melted butter
1/2 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease a 9- by 13-inch cookie sheet.
  • In a bowl, mix all the dry ingredients together. Add the wet ingredients to the dry ingredient mixture. Spread the mixture thinly and evenly on the prepared cookie sheet. Bake until golden brown, 8 to 10 minutes. Let cool. Break into shards. Use as garnish for Pumpkin Milk Shakes.

5 medium bananas
2 cups crushed vanilla wafers (about 60 wafers)
5 tablespoons butter, softened
1 can (14 ounces) sweetened condensed milk
1/4 cup packed light brown sugar
2 large eggs, room temperature
3 large egg yolks, room temperature
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup heavy whipping cream, whipped

Steps:

  • Preheat oven to 350°. Place bananas on a foil-lined rimmed baking sheet. Bake until tender and skins are dark brown, 25-30 minutes. Let cool for 15 minutes., Meanwhile, mix wafers and butter. Press crumbs onto bottom and up sides of an ungreased 11-in. tart pan. Refrigerate 30 minutes., Peel bananas; place a large bowl. Add milk, brown sugar, eggs and yolks, cinnamon and nutmeg; mix until combined. Pour filling into chilled crust. Place pan on a baking sheet. Bake until filling is set, 25-30 minutes., Cool 1 hour on a wire rack. Refrigerate at least 4 hours before serving. Top with whipped cream and additional crushed vanilla wafers, if desired.
