CINNAMON SUGAR VANILLA WAFERS
This is a great recipe. It is a wonderful vanilla wafer with a touch of cinnamon sugar sprinkled on top. It adds a wonderful bit of sweetness 8)

Steps:
- Mix 1 1/2 cup sugar and butter in large mixer bowl; cream with electric mixer until light and fluffy.
- Beat in eggs and vanilla extract. Gradually add baking powder to sifted flour and sift again.
- Gradually add to the butter mixture, mixing well; stir in the milk and combine well.
- Cover and chill at least 2 hours.
- Preheat oven to 400° and lightly grease cookie sheets; set aside.
- Lightly flour your work surface and sprinkle with 1 tablespoon sugar.
- Roll cold dough to 1/8-inch thickness and cut with 2-inch cookie cutters.
- Place 1 inch apart on cookie sheets; sprinkle with cinnamon sugar.
- Bake 6-8 minutes. Remove from sheets and place cool on wire racks.
CINNAMON SUGAR VANILLA WAFER COOKIES

Steps:
- In a large bowl or mixer, beat on medium speed sugar and butter for about 2 minutes - until creamed.
- Add vanilla and egg and beat on medium for about 1 minute.
- In a small bowl mix flour, baking powder and salt.
- Add flour mixture to bowl and mix on low speed until combined. Add milk and combine.
- Refrigerate dough for 30 minutes.
- Preheat oven to 350 degrees.
- Using a 1/2 teaspoon measuring spoon, scoop batter and roll into balls.
- Roll balls in cinnamon sugar and place onto baking sheet.
- Bake wafers for about 12 minutes.
- Remove from oven and allow to cool.
CINNAMON WAFER COOKIES

- Preheat the oven to 350 degrees F. Lightly grease a 9- by 13-inch cookie sheet.
- In a bowl, mix all the dry ingredients together. Add the wet ingredients to the dry ingredient mixture. Spread the mixture thinly and evenly on the prepared cookie sheet. Bake until golden brown, 8 to 10 minutes. Let cool. Break into shards. Use as garnish for Pumpkin Milk Shakes.

- Preheat oven to 350°. Place bananas on a foil-lined rimmed baking sheet. Bake until tender and skins are dark brown, 25-30 minutes. Let cool for 15 minutes., Meanwhile, mix wafers and butter. Press crumbs onto bottom and up sides of an ungreased 11-in. tart pan. Refrigerate 30 minutes., Peel bananas; place a large bowl. Add milk, brown sugar, eggs and yolks, cinnamon and nutmeg; mix until combined. Pour filling into chilled crust. Place pan on a baking sheet. Bake until filling is set, 25-30 minutes., Cool 1 hour on a wire rack. Refrigerate at least 4 hours before serving. Top with whipped cream and additional crushed vanilla wafers, if desired.
