Steps:
- Melt butter in a large braising pan over medium heat. Cook onions and garlic in melted butter, stirring occasionally with a wooden spoon, until onions are softened, 5 to 7 minutes.
- Stir chicken broth, diced tomatoes, wine, water, basil, thyme, oregano, red pepper flakes, and bay leaves with the onion and garlic. Place a cover on the braising pan and cook mixture at a simmer until the tomatoes are softened and the broth flavorful, about 30 minutes.
- Fold cod, shrimp, scallops, clams, and mussels into the broth mixture; bring to a boil, reduce heat to low, return cover to pan, and continue to simmer until the clams open, 5 to 7 minutes.

EASY CIOPPINO SEAFOOD STEW RECIPE
An easy cioppino seafood stew recipe. This Italian seafood stew uses fish, shrimp, and a frozen seafood mix.

Steps:
- Heat the oil in a large stockpot over medium heat.
- Add the fennel, onion, shallots, and salt and sauté for 10 minutes or until the onion is translucent.
- Add the garlic and crushed red pepper flakes, and sauté for another 2 minutes.
- Stir in the tomato paste, tomatoes with their juices, wine, chicken stock, clam juice, and bay leaf.
- Cover and bring to a simmer, then reduce the heat to medium-low. Simmer for another 30 minutes.
- Add the frozen seafood mix to the pot. Cover and cook until the seafood is cooked through, about 5 to 10 minutes.
- Add the shrimp and fish. Simmer gently until the fish and shrimp are just cooked through, about 5 minutes
- Season the Cioppino Seafood Stew to taste with more salt and red pepper flakes, if needed.
- Ladle the Cioppino Seafood Stew into bowls and serve.

- In a large pot over medium heat, heat the olive oil, and saute the onion, garlic, bell pepper, and chile pepper until tender. Add parsley, salt and pepper, basil, oregano, thyme, tomatoes, tomato sauce, water, paprika, cayenne pepper, and juice from the clams. Stir well, reduce heat, and simmer 1 to 2 hours, adding wine a little at a time.
- About 10 minutes before serving, add clams, mussels, prawns, scallops, and cod. Turn the heat up slightly and stir. When the seafood is cooked through (the mussels will have opened, the prawns turned pink, and the cod will be flaky) serve your delicious cioppino.

- Over medium-low heat melt butter in a large stockpot, add onions, garlic and parsley. Cook slowly, stirring occasionally until onions are soft.
- Add tomatoes to the pot (break them into chunks as you add them). Add chicken broth, bay leaves, basil, thyme, oregano, water and wine. Mix well. Cover and simmer 30 minutes.
- Stir in the shrimp, scallops, clams, mussels and crabmeat. Stir in fish, if desired. Bring to boil. Lower heat, cover and simmer 5 to 7 minutes until clams open. Ladle soup into bowls and serve with warm, crusty bread!

- Heat oil in a large saucepan over medium-high heat. Saute onion and bell pepper in hot oil until tender, about 5 minutes; add garlic and continue to saute until garlic is fragrant, about 1 minute. Transfer mixture to a large stockpot.
- Stir tomatoes, chicken broth, white wine, tomato paste, parsley, basil, oregano, red pepper flakes, and black pepper with the onion mixture in the stockpot; bring to a boil, cover the pot, reduce heat to medium-low, and simmer until the tomatoes are softened, about 15 minutes.
- Stir shrimp and cod chunks into the tomato mixture. Arrange clams and mussels in the liquid so they are partially submerged. Cover pot again and continue cooking until the clams and mussels open, 7 to 10 minutes.

CIOPPINO WITH GARLIC AIOLI
This soup/stew is so easy and so amazing! The garlic aioli was an idea I used from Recipe #8449 by Rich Eyre. The Aioli can also be used as a spread on some crusty bread.

Steps:
- Heat large stockpot on med-low heat, add olive oil and butter; heat until it just starts to smoke.
- Add onions and parsley. Stir until onions are transclucent about 7 minutes.
- Add garlic and stir about 30 seconds.
- Stir in tomatoes breaking them up in the pan.
- Add chicken broth, clam juice, wine, bay leaves, basil, oregano, and thyme.
- Mix well.
- Simmer 30 minutes.
- Mix together mayo, garlic, lemon juice and cayenne and refrigerate until stew is ready.
- Add all seafood and bring to a boil.
- Lower heat and simmer 5-7 minutes.
- Ladle into bowls and add a dollop of garlic aioli.

CROCK POT CIOPPINO (FISHERMAN'S STEW)

- Place all ingredients except seafood in crock pot. Cook on low for 6 to 8 hours.
- About 30 minutes before serving, add seafood. Turn crock pot on high and stir gently once or twice.
- Serve with sourdough bread.
- Water can be added to thin the stew, but I leave it thick.
- Special notes:
- We doubled the recipe to feed about 6-7 adults + 1 child.
- We used a 5-6 quart Crockpot and it was very full.
- We used 1lb of bagged frozen shrimp, thawed. (Costco)
- 1lb. bagged frozen scallops, thawed. (Costco)
- I can't remember what fish we used, a hearty one that will hold up.
- We bought our mussels at price chopper because Costco only sells them in 4lb bags.
- We omitted the clams
- Cooking note: the seafood cooled down the sauce significantly when added at the end. I remember it took quite a bit longer than 30 minutes to cook the seafood and we even ended up turning it up, so I would allow more time and put it in earlier.
