Citrus Grilled Chicken Recipe

  1. boneless skinless chicken breasts
  2. extra virgin olive oil
  3. navel orange
  4. lemon
  5. garlic
  6. paprika
  7. ground cumin
  8. salt & freshly ground black pepper
  9. slivered almonds
  10. cilantro


  1. place chicken in a shallow glass dish
  2. pour olive oil over chicken , and then squeeze the juice of one orange half and one lemon half over the top
  3. add minced garlic , then sprinkle with paprika , ground cumin , salt and freshly ground black pepper
  4. turn chicken breasts to evenly coat and blend marinade
  5. cover and refrigerate at least 1 hour or overnight
  6. preheat grill or non-stick indoor grill pan over medium heat
  7. drain and discard marinade
  8. grill chicken about 5 minutes , then turn
  9. add remaining lemon and orange halves to grill
  10. cook chicken until well browned and thoroughly cooked
  11. using tongs , pick up lemon and orange halves , and carefully squeeze juice over chicken
  12. serve on a bed of rice , with additional slices or wedges of lemon or orange , if desired
  13. sprinkle with slivered almonds and freshly chopped cilantro
  14. this is delicious with steamed broccoli or asparagus
  15. enjoy !
