1 lemon, sliced 1/4 inch thick (optional)
1 vanilla bean (split, seeds scraped, pod reserved) or 1/2 teaspoon pure vanilla extract
1/4 cup sugar
3 cups seltzer
Lemon wedges, for serving

Steps:

  • Combine raspberries, sliced lemon (if using), vanilla bean, and sugar in a double boiler or heatproof bowl set over a pan of simmering water. Cook, stirring, until raspberries have released most of their juices, about 12 minutes.
  • Strain through a fine sieve, pressing gently with the back of a spoon; discard solids. Let cool. Pour 1/4 cup syrup into each of 3 ice-filled glasses. Top each with 1 cup seltzer. Serve with lemon wedges.

2-1/2 cups water
2 cups sugar
1 cup lemon juice (about 6 lemons)
1 cup orange juice (about 6 oranges)
10 mint sprigs

Ice cubes

Steps:

  • Place first five ingredients in a large saucepan; bring to a boil, stirring until sugar is dissolved. Cover; remove from heat and let steep until cool. Strain.   • Mash berries in large bowl. Add vodka; cover and cihll overnight.
  • Strain, pressing on solids to relase liquid (there should be about 3 cups of raspberry vodka).
  • Place lemon pieces and sugar in large pitcher. Mash lemons with large wooden spoon to release juices. Add lemonade and raspberry vodka; stir to blend. (can be made 8 hours ahead. Cover and chill.).
  • Add ice cubes to pitcher and stir well. Divide lemonade, mashed lemons, and ice among 8 glasses. Serve.

2 cups boiling water
1/2 cup sugar
2 cups cold water
1/3 cup frozen orange juice concentrate (1/2 of a 6-oz. container)
1 tablespoon lemon juice
1 (2 liter) bottle club soda, chilled
raspberry ice (see below) (optional)

Steps:

  • In a really large heatproof glass pitcher, pour the boiling water over tea bags. Let it steep about 5 minutes. Remove and discard the tea bags. Stir in sugar until completely dissolved. Stir in the cold water, frozen orange juice concentrate, and lemon juice. Chill until serving time.
  • To serve, pour the club soda down the sides of the pitcher. Break up the Raspberry Ice (if using) and add to the pitcher or serving glasses.
  • Makes 14 servings.
  • Raspberry Ice: Add water to an ice tray and fill half full. Arrange fresh raspberries and strips of lemon peel in each cubicle and freeze until firm. Add more water until full and freeze until firm.
