1 cup canned tomato sauce
1/2 cup dry white wine
2 tablespoons fresh lemon juice

1/2 cup chopped fresh basil
1 1/2 tablespoons grated lemon peel

Steps:

  • Melt butter in very large pot over medium-high heat. Add minced garlic and jalapeño; stir until garlic is golden, about 2 minutes. Add tomato sauce, wine, and lemon juice and bring to boil. Add clams; cover and boil until clams open, about 9 minutes (discard any clams that do not open). Add basil and lemon peel. Season with pepper. Transfer clams and sauce to large bowl and serve.

2 sticks unsalted butter
2 sprigs fresh parsley, plus chopped fresh parsley for garnish
2 sprigs fresh rosemary
2 sprigs fresh thyme
2 tablespoons chopped garlic plus 1 whole clove garlic
2 tablespoons chopped preserved lemon
1 tablespoon chopped Calabrian chiles
24 Manila clams
1 cup white wine
3 lemons, cut in half
Four 2-inch slices ciabatta bread
Extra-virgin olive oil, for drizzling
Kosher salt

Steps:

  • Preheat the grill over medium-high heat.
  • Add the butter, parsley sprigs, rosemary, thyme and chopped garlic to a medium Dutch oven over medium-high heat and allow the butter to melt. Add the preserved lemon, Calabrian chiles and clams and stir to combine. Cover the clams with the wine, then bring to a simmer and allow the clams to open and the sauce to reduce, stirring occasionally, about 5 minutes.
  • Meanwhile, put the lemon halves and bread on the grill and allow to char all over, 2 to 4 minutes. Remove both from the grill. Rub each piece of bread with the whole clove of garlic and drizzle with the olive oil. Set aside until ready to serve.
  • Remove the clams from the Dutch oven to a large serving bowl. Allow the sauce to reduce for another 2 minutes over high heat. Taste and adjust the sauce with salt, if needed. Add the charred lemon and bread to the serving bowl and pour over the reduced sauce, sprigs and all. Garnish with the chopped parsley.

2 tablespoons extra-virgin olive oil
1 small jalapeño, seeded, diced fine
1 large clove garlic, diced fine
1 teaspoon dried oregano or 1 tablespoon coarsely chopped fresh oregano, or both
2 pounds Manila clams, scrubbed and rinsed
1 pound linguine or spaghettini
Salt and freshly ground white pepper to taste
1 tablespoon coarsely chopped Italian parsley

Steps:

  • Boil salted water for the pasta. Meanwhile, combine the oil, jalapeño and garlic in a deep skillet over low heat and cook until fragrant. The aroma will tell you when the infusion is complete. If using dried oregano, add it now. (Add fresh at the last minute.) Increase the heat a bit, add clams and cover. Cook about 5 minutes, until all the clams have opened. (Move them around to make sure they're evenly heated.) The clam liquid should prevent the garlic and jalapeño from burning, but keep a careful eye. Remove pan from the heat, discard any unopened clams, cover and set over low heat.
  • Cook the pasta until al dente. Drain and add the pasta to the clam mixture, tossing gently to coat it with the sauce and distribute the clams evenly. Season very sparingly with salt, if needed, and freshly ground white pepper. Sprinkle with fresh oregano and parsley and serve immediately.

4 dozen small hard-shelled clams such as littlenecks (less than 2 inches in diameter)
2 small zucchini
1 fresh jalapeño chile
1 small onion
3 tablespoons unsalted butter
1 cup dry white wine
Accompaniment: crusty Italian or French bread

Steps:

  • Scrub clams well and in a large bowl cover with salted cold water. Cut zucchini into 2 x 1/2-inch sticks. Wearing rubber gloves, halve jalapeño lengthwise and discard seeds from one half. Finely chop jalapeño and onion. In a large saucepan heat 2 tablespoons butter over moderately high heat until foam subsides and sauté zucchini, jalapeño, and onion, stirring, until zucchini is crisp tender, about 5 minutes. Transfer zucchini mixture to a bowl.
  • In pan melt remaining tablespoon butter over moderately high heat and add clams and wine. Steam clams, covered, over moderately high heat 5 to 8 minutes, checking them every minute after 5 minutes and transferring them with tongs as they open to a serving bowl. Reserve cooking liquid in pan. (Discard clams that are unopened after 8 minutes.) Stir zucchini mixture into reserved cooking liquid and pour over clams.
  • Serve clams with bread.

Recipes do not come easier, though you will want to make sure that you take the time to scrub the shells before steaming. There's nothing worse than sand in your clams. The bacon is optional, but I like the smokiness it adds to the broth. As for the jalapeño butter, it provides a zip against the brine and sweetness. You can heat it to make a brown butter, adding nuttiness to the mix, but it's not necessary.

50 littleneck clams
4 tablespoons plus 2 teaspoons unsalted butter
2 slices bacon, diced (optional)
1 cup beer, approximately half a can or bottle
1 to 2 jalapeño peppers, to taste, seeded and diced

Steps:

  • Scrub the clams under cold running water to remove grit and sand, then set aside.
  • Melt 2 teaspoons of the butter in a large pot set over medium heat. Add the bacon, if using, and cook, stirring occasionally, until it has started to crisp, approximately 5 minutes.
  • Add the beer to the pot, and allow to heat through, then carefully add the clams in layers. Cover the pot, and let the clams steam and open, approximately 10 to 12 minutes.
  • While the clams cook, put a small pot over medium heat, and add the remaining 4 tablespoons of butter. When it melts, add the jalapeños and stir to combine. Keep the butter warm until ready to use.
  • Drain the clams, reserving their liquor, and serve them on a platter, with the reserved clam broth and the melted butter.

This is an easy, wonderfully flavoured pasta dish that can be whipped up in no time for an intimate dinner for two. Recipe is easily doubled. I use my non-stick wok as it is big enough for tossing the pasta and sauce together in and the sauce gets distributed better throughout that way.

1 tablespoon olive oil
1 tablespoon butter
1 medium onion, chopped
3 garlic cloves, minced
1/2 teaspoon dried basil
1 small bay leaf
1/3 cup white wine
1 teaspoon fresh lemon rind
3 tablespoons fresh lemon juice
1 (6 1/2 ounce) can baby clams, drained, reserve juice
salt & fresh ground pepper
1/2 cup grated parmesan cheese
1 tablespoon chopped fresh parsley
linguine, enough for two, cooked, well drained, do not rinse

Steps:

  • I usually make this in my non-stick wok.
  • Heat oil and butter on medium heat and saute onion and garlic until soft and tender, not brown.
  • Add basil and bay leaf.
  • Pour in wine, lemon rind, lemon juice and reserved clam juice.
  • Simmer until reduced a little (by about a third).
  • Add clams and heat through.
  • Toss in the cooked linguine a little at a time (don't make the mistake of adding too much or the sauce will be lost!) and lastly add the cheese and parsley.
  • Serve with more cheese on the side and red pepper flakes (optional) and warm garlic bread.

Coarse salt
4 dozen small clams, such as littleneck, rinsed well (about 5 pounds)
2 stalks fresh lemongrass, hard outer leaves removed and reserved, bottom 4 inches of stalks, thinly sliced crosswise
2 tablespoons vegetable oil
2 shallots, thinly sliced (about 1/2 cup)
3 garlic cloves, minced
2 small fresh green chiles, such as jalapeno, serrano, or Thai chiles, thinly sliced crosswise
3 small fresh red chiles, such as cherry peppers or Holland chiles, thinly sliced crosswise
1/2 cup lime juice, plus lime wedges, for garnish (5 limes total)
1/4 cup Asian fish sauce
1 cup loosely packed fresh cilantro leaves, coarsely chopped

Steps:

  • Dissolve 2 tablespoons salt in a large bowl of cold water. Add clams. Let soak at room temperature 15 minutes. Drain.
  • Scrub clams under cold running water. Transfer to a large bowl of fresh cold water. Repeat, scrubbing clams and rinsing in fresh water. Drain. Refrigerate, uncovered, until ready to use, up to 8 hours.
  • Put reserved lemongrass leaves in a large pot with 1/2 inch of water. Bring to a boil. Add clams. Steam, covered, until clams open, 6 to 7 minutes. Drain. Discard any unopened clams and the leaves.
  • Add oil, lemongrass, shallots, garlic, and chiles. Cook over medium-high heat, stirring constantly, until lemongrass and shallots turn golden, about 2 minutes. Remove from heat. Add clams to pot, and gently stir to coat.
  • Stir together lime juice and fish sauce in a small bowl; pour over clams. Transfer clams to a large serving bowl; sprinkle with cilantro. Garnish with lime wedges.
