Here's what you need: top sirloin steak, kosher salt, freshly ground black pepper, chipotle pepper in adobo sauce, vegetable oil

1 ½ lb top sirloin steak, 1/2 inch thick (1 cm) About 2 small steaks or 1 large steak
kosher salt, to taste
freshly ground black pepper, to taste
2 cans chipotle pepper in adobo sauce, finely chopped
1 tablespoon vegetable oil

Steps:

  • On a cutting board, season the steak with salt and pepper on both sides.
  • Place the steak in a zip-top bag and add the chipotle peppers, then toss to coat.
  • Refrigerate for at least 2 hours, up to overnight.
  • Heat the oil in a large skillet over medium-high heat.
  • Add the steak to the pan and cook for 5 minutes per side.
  • Remove the steak from the pan and rest on a cutting board for 10 minutes. Cut into bite-size pieces.
  • Enjoy!

1 small onion, finely chopped
1 chipotle pepper in adobo sauce, chopped
1 Tbsp. olive oil
1 clove garlic, minced
1/4 tsp. each coriander and ground cumin
1/8 tsp. ground cinnamon
1 beef flank steak (1 lb.)

Steps:

  • Combine all ingredients except steak. Pour 1/4 cup steak sauce mixture over steak in shallow dish; turn steak to coat both sides. Refrigerate 30 min. to marinate.
  • Heat grill to medium heat. Remove steak from marinade; discard marinade.
  • Grill steak, 17 to 20 min. or until medium doneness, turning occasionally and brushing with remaining steak sauce mixture.

1/2 cup lime juice or 1/2 cup orange juice
1 medium tomatoes, chopped
1 small onion, finely chopped
1 chipotle chile in adobo, chopped
1 tablespoon olive oil
1 garlic clove, minced
1/4 teaspoon coriander
1/4 teaspoon ground cumin
1/8 teaspoon ground cinnamon
1 beef top sirloin steak, 3/4-inch thick

Steps:

  • In a bowl, combine all ingredients except steak. Set aside 1/4 cup of the sauce.
  • Place steak in a resealable plastic bag. Pour remaining sauce over steak, seal bag, then turn bag over several times to evenly coat steak. Refrigerate at least 30 minutes to marinate.
  • Preheat grill to medium heat.
  • Remove steak from bag; discard marinade.
  • Grill steak 13 to 16 minutes for medium-rare to medium doneness, turning occasionally and brushing with the reserved 1/4 cup of sauce.

2 teaspoons olive or vegetable oil
3/4 to 1 lb boneless skinless chicken breasts
1 cup sliced white onion
1 cup red or green bell pepper strips (or a mix)
2 teaspoons minced garlic
1/4 teaspoon dried thyme leaves
1 chipotle chile, minced
1 tablespoon adobo sauce (from can of chipotle chiles)
2 tablespoons Old El Paso™ fajita seasoning mix (from 1-oz package)
1 to 2 tablespoons water
1 cup shredded sharp Cheddar cheese (4 oz)
4 hoagie buns or bolillo rolls, split

Steps:

  • Heat 10- to 12-inch cast-iron skillet over medium heat. Add 1 teaspoon of the oil. Pound chicken between 2 sheets of plastic wrap or waxed paper until thin. Cut into small strips; place in skillet. Cook 5 minutes or until no longer pink; remove from skillet to plate.
  • Heat remaining teaspoon oil in same skillet. Add onion, bell pepper, garlic and thyme; cook 2 to 3 minutes or until onion and bell pepper are soft.
  • Stir in chile, adobo sauce, fajita seasoning mix and 1 tablespoon of the water; cook 1 to 2 minutes. Return chicken to skillet; cook 1 minute longer, adding remaining water if needed so fajita seasoning completely coats chicken. Remove from heat; stir in cheese until melted.
  • Divide mixture among buns.

1/2 cup mango nectar
1 cup steak sauce
2 chipotle chiles in adobo sauce
4 to 6 beef sirloin steaks (2 to 3 lb)

Steps:

  • In 1-quart saucepan, heat nectar to boiling. Cook, stirring occasionally, until reduced to 1/4 cup.
  • In food processor or blender, pour reduced nectar; add steak sauce and chiles. Cover; process until marinade is smooth.
  • Place steaks in large freezer plastic bag. Pour marinade over steaks. With fingers, rub marinade onto steaks until coated. Seal bag, removing all air. Refrigerate 8 hours or overnight, or freeze up to 2 months.
  • If steaks are frozen, place in refrigerator to thaw overnight.
  • Heat gas or charcoal grill. Remove steaks from marinade; discard marinade. Place steaks on grill over medium heat. Cover grill; cook 10 to 15 minutes, turning once, until desired doneness.
