BAKED ZITI WITH CHICKEN
We reimagined this family classic using store-bought rotisserie chicken.

Steps:
- Heat oil in a large skillet over medium. Add onion; cook, stirring occasionally, until translucent, about 5 minutes. Add garlic; cook, stirring occasionally, until fragrant, about 1 minute. Add plum tomatoes, crushed tomatoes, salt, black pepper, and crushed red pepper; bring to a boil over medium. Reduce heat to medium-low; simmer, stirring occasionally, until flavors meld and sauce thickens, about 30 minutes.
- Meanwhile, bring a large pot of salted water to a boil. Add ziti, and boil until just al dente, according to package directions. Drain and return ziti to pot.
- Preheat oven to 375°F. Add tomato mixture, shredded chicken, and basil to ziti; stir to coat thoroughly. Pour half of ziti mixture into a 13- x 9-inch baking dish coated with cooking spray. Sprinkle evenly with 1/3 cup of the Parmesan and 1 cup of the mozzarella. Top with remaining ziti mixture, and sprinkle with remaining 1/3 cup Parmesan and 1 cup mozzarella.
- Bake in preheated oven until cheese has melted, about 15 minutes. Remove from oven, and let rest 10 minutes. Garnish with additional basil before serving.
CHICKEN BAKED ZITI
This was my first made up recipe. If you like, throw some vegetables in for good flavor. I usually use stuff like broccoli, black olives, and mushrooms.

- Preheat oven to 350°F.
- Boil pasta until cooked all the way through.
- Drain, and pour into a 13x9-inch baking dish.
- Cut chicken strips into bite size pieces.
- Add to pasta.
- Pour sauce and half of the cheese over the pasta.
- Stir until well mixed.
- Sprinkle remaining cheese over the top, and bake for 25-30 minutes until cheese starts to brown.

- Preheat oven to 350 degrees F.
- In a large skillet, cook ground beef, onions, and garlic over medium-high heat for 6 to 8 minutes or until beef is browned; stirring frequently.
- Stir in spaghetti sauce, chicken broth, and oregano.
- Reduce heat and simmer for 10 minutes.
- Stir 1 cup of the sauce into the cooked ziti noodles.
- Spoon 1/2 of the ziti mixture into a 13x9x2-inch baking dish.
- Sprinkle with 1 1/2 cups mozzarella cheese and 1/2 cup Parmesan cheese.
- Top with 2 cups sauce, then remaining ziti mixture and remaining sauce.
- Cover and bake 20 minutes.
- Sprinkle with remaining mozzarella and Parmesan cheese.
- Return to oven and bake uncovered for 10 minutes or until heated through.
EASY & CHEESY BAKED ZITI

Steps:
- Brown the ground beef in a skillet.
- Sprinkle with salt, pepper, garlic powder and Italian seasonings and drain.
- Stir in the jar of spaghetti sauce and 1 cup of chicken broth.
- Allow this to simmer while you cook the noodles.
- Cook noodles until al dente and then drain.
- Stir one cup of sauce into the drained noodles.
- Add 1/2 cup of sauce to the bottom of a 9×13 dish, and then pour in 1/2 of the noodles.
- Top these noodles with half the cheese. Repeat these steps with the remainder of the ingredients.
- Bake for twenty minutes covered at 350 degrees.
- Remove foil and bake another ten minutes.

- Pulse bread, 2 minced garlic cloves, 1/2 cup Asiago, and melted butter in food processor until coarsely ground. Set aside.
- Adjust oven rack to middle position and heat oven to 400 degrees. Bring 4 quarts water to boil in large pot. Add 1 tablespoon salt and ziti to boiling water and cook until nearly al dente. Drain in colander and rinse under cold water until cool.
- Melt remaining butter in empty pot over medium heat. Cook onion until softened, about 5 minutes. Add remaining garlic and pepper flakes and cook until fragrant, about 30 seconds. Stir in flour and cook until golden, about 1 minute. Slowly whisk in wine and cook until liquid is almost evaporated, about 1 minute. Slowly whisk in milk and broth and bring to boil. Add chicken and simmer until no longer pink, about 5 minutes. Off heat, stir in remaining cheese until melted.
- Microwave broccoli, covered, in large bowl until bright green and nearly tender, 2 to 4 minutes. Stir cooked broccoli and drained ziti into pot and season with salt and pepper. Transfer to 13- by 9-inch baking dish. Sprinkle with bread crumb mixture and bake until sauce is bubbling around edges and topping is golden brown, 20 to 25 minutes. Cool 5 minutes. Serve. (Casserole can be assembled, minus bread crumbs, 24 hours in advance. Bring to room temperature before adding bread crumbs and baking.

- Preheat the oven to 350 degrees F (175 degrees C). Spray two 9x13-inch baking dishes with cooking spray.
- Bring a large pot of lightly salted water to a boil. Cook ziti in the boiling water, stirring occasionally, until tender yet firm to the bite, 9 to 11 minutes. Drain.
- While pasta cooks, melt butter in a large skillet over medium heat. Add chicken and season with salt and pepper. Cook and stir until chicken is browned and no longer pink in the center, 5 to 7 minutes.
- Combine pasta, pasta sauce, and chicken in a large dish. Spread 1/4 of pasta mixture in each 9x13-inch dish. Top each with 2 cups (8 ounces) of mozzarella cheese and 1/2 cup Pecorino Romano cheese. Repeat with another layer of pasta and cheeses.
- Bake in the preheated oven until hot and bubbly, about 25 minutes.
