CHEF JOHN'S CLASSIC RICE PUDDING

Chef John's Classic Rice Pudding image

For whatever reason, rice pudding is usually not near the top when people list their favorite desserts, but despite that, it's a proven crowd-pleaser, and quite easy to make, especially using this simplified, one-pot method.

Provided by Chef John

Categories     Desserts     Fruit Dessert Recipes     Cherry Dessert Recipes

Time 3h35m

Yield 4

Number Of Ingredients 10

½ cup uncooked long-grain white rice
¼ teaspoon kosher salt
1 cup water
¼ cup white sugar
1 ⅓ cups milk
½ teaspoon vanilla extract
⅛ teaspoon ground cinnamon
1 large egg yolk
1 tablespoon cold butter
2 tablespoons dried cherries, chopped

Steps:

  • Place rice, salt, and water into a saucepan. Bring to a boil over medium-high heat. Reduce heat to low, cover, and cook until tender, about 20 minutes. Remove from heat; sprinkle with sugar and pour in milk. Stir with a whisk until until the thin layer of cooked-on starch at the bottom of the pan is cleared and incorporated into the mixture, 2 or 3 minutes.
  • Place pan over medium heat, stirring frequently, until it reaches your desired of level of doneness and creaminess, 8 to 10 minutes. The longer it cooks, the thicker and stickier it will be. Remove from heat. Add vanilla and cinnamon. Very quickly whisk in the egg yolk (to prevent it from cooking). Whisk for about 1 more minute. Add butter and dried cherries; stir thoroughly.
  • Transfer warm pudding to serving dishes. Cool to room temperature. Cover and refrigerate until thoroughly chilled, 3 to 4 hours.

CLASSIC STOVE-TOP RICE PUDDING

Classic Stove-Top Rice Pudding image

Classic Stove-Top Rice Pudding- an old fashioned recipe for rice pudding made on the stove. Delicious and easy to make, this dish is great for all ages.

Provided by The Bossy Kitchen

Categories     Dessert

Time 35m

Number Of Ingredients 9

1/2 cup/100g short grain rice
3/4 cups/200ml water
3 cups milk/750ml milk
1/4 cup/60g granulated sugar
1/4 cup/ 3 tablespoons/60g unsalted butter
1/4 teaspoon salt
1 teaspoon vanilla extract
Optional: lemon zest
Optional for decorating: cinnamon powder, fruit jam, fruit preserves, nuts, dried fruits, cardamom

Steps:

  • Use a 1 quart pot with cover.
  • Place the rice and water into the pot, bring to a boil then simmer for few minutes, covered, until the rice absorbs the water.
  • Add milk, butter and salt and cook the rice on low heat, stirring constantly to avoid scorching.
  • When the rice is almost cooked(about 10-15 minutes), add sugar and simmer for another 3-4 minutes.
  • Add vanilla, lemon zest and stir to combine.
  • The best way to know if the rice pudding is cooked is by tasting the grain. You want the rice to be cooked but still "al dente".
  • Remove the pudding from the heat and allow it to cool for 5-10 minutes. The rice will absorb the rest of the liquid and become thicker and creamier.
  • Serve the rice pudding in cups and decorate with cinnamon, pieces of fruit, your favorite jam, dried fruits etc.

RICE PUDDING

Rice Pudding image

This classic, comforting, creamy Rice Pudding recipe is made with just 5 ingredients right on your stovetop. A delightful, easy dessert flavored with vanilla and cinnamon that's perfect for holidays and cozy nights by the fire.

Provided by Trish - Mom On Timeout

Categories     Dessert

Number Of Ingredients 8

4½ cups whole milk
1½ cups water
¾ cup granulated sugar
1 cinnamon stick (3 or 4 inches long)
1 cup Arborio rice (or look for Boomba rice that is used in paellas)
1 teaspoon vanilla bean paste (or vanilla extract)
⅔ cup golden raisins (optional)
1 cinnamon stick (grated or ground cinnamon)

Steps:

  • In a heavy bottomed, 3 quart sauce pan, combine the milk, water, sugar, cinnamon stick and rice. Stir to combine.
  • Bring to an intense simmer (just below boiling) over medium high heat, stirring often. Reduce the heat to maintain a steady simmer and continue cooking, stirring often until the rice is tender, about 35 to 45 minutes. Some liquid will remain. The mixture should have the consistency of a thin oatmeal but will continue to thicken as it cools.
  • Remove from heat and remove the cinnamon stick. Stir in the vanilla bean paste or vanilla extract and raisins, if using.
  • Spoon the rice pudding into individual ramekins or small containers OR transfer to a large serving dish. Let the pudding cool slightly before serving or let cool to room temperature, cover tightly and refrigerate until ready to serve, up to 1 day in advance.
  • Just before serving, top with freshly grated cinnamon or ground cinnamon. Pudding can be enjoyed warm or cooled.

  • Combine rice, milk sugar and salt in a medium-size saucepan. Cook over medium heat, stirring constantly until thick and creamy – approximately 15-20 minutes.
  • Add the raisins and stir to incorporate. You can also leave them out or substitute 1/3 cup fresh chopped granny smith apples and 1/3 cup dried cranberries.
  • In a separate container, whisk the egg. Add the half & half to the whisked egg and blend completely. Taking a Tbsp. at a time, add a little of the hot rice mixture to the egg mixture to temper it. Stir quickly. Continue to add the hot liquid to the egg mixture this way until the egg mixture is sufficiently warm – approximately 1/2 cup of the rice mixture.
  • Once tempered, gradually add the egg mixture into the pot of rice, stirring quickly and constantly to ensure it is fully incorporated. Cook for one minute.

  • Combine 5 cups of the milk, sugar, and salt in a large saucepan. Bring to a boil over medium-high heat, stirring frequently so the sugar doesn't scorch on the bottom of the pan (watching carefully, as the liquid will quickly rise to the top of the pan.)
  • Once milk is boiling, add rice and reduce heat to low/medium-low, adjusting to maintain a gentle simmer (it should still be bubbling.) Cook, stirring every 1-2 minutes while scraping the base and sides of the pan with a wooden spoon, until mixture is thick and rice is tender, about 22 minutes. (NOTE: the ratio of milk to rice in the beginning will seem ridiculously high, but it will reduce and thicken, I promise!)
  • Temper the egg: in a large measuring cup, whisk together the egg and remaining 1/2 cup milk. Slowly pour 1/2 cup of the hot rice into the egg mixture, then add that back into the pot; stir to combine.
  • Add in the raisins and cinnamon; cook for another 3-5 minutes or so, stirring constantly, until raisins plump and pudding is thickened.
