Classic Waffles image

This is a no-fail recipe. Fluffy on the inside and slightly crisp on the outside. You can also substitute regular milk for the buttermilk and they turn out just as good! I have a Belgian waffle maker that flips 180 degrees, so please note that the "flipping waffle maker over" part of the recipe is aimed at that type of machine (think Waffle House). If you have a standard waffle maker, I'd suggest pouring the batter into the center of the bottom and spreading it out a little with a spoon before closing the lid.

2 cups all-purpose flour
1 tablespoon sugar
1 tablespoon baking powder
1/4 teaspoon salt
1 3/4 cups buttermilk (or regular milk)
2 eggs
2 tablespoons oil

Steps:

  • Preheat waffle iron.
  • Combine flour, sugar, baking powder and salt in a large bowl. Whisk milk, eggs and oil in a medium bowl. Whisk milk mixture into dry ingredients until smooth.
  • Pour one cup of batter into preheated waffle iron. Close top and flip waffle maker. Bake until brown, about three minutes.

Nothing beats those square waffles that our mom's used to make for us in the 70's/80's! This waffle recipe works perfectly in those old waffle makers and new ones!

Steps:

  • In a large bowl, whisk together the flour, salt, baking powder and sugar.
  • Preheat the waffle iron according to the manufactures directions.
  • In a large capacity measuring cup, beat the eggs, then stir in the milk, butter and vanilla.
  • Pour the milk mixture into the flour mixture; then beat until mixed completely.
  • Ladle the batter into a preheated waffle iron and close the lid.
  • Cook the waffles until they are golden brown and crisp.
  • Serve with berries, syrup, whipped cream etc.

The secret to these super-crispy waffles is using a little vegetable shortening. Make a large batch on the weekend, then grab and reheat on a rushed morning.

2 cups all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
1 teaspoon fine salt
1 1/2 cups milk
4 tablespoons melted unsalted butter, plus more for brushing waffle iron
4 tablespoons vegetable shortening, melted
2 large eggs
Pure maple syrup, soft unsalted butter, confectioners' sugar or fruit preserves, for topping

Steps:

  • Preheat a waffle iron to medium-high. Preheat the oven to 200 degrees F (to keep cooked waffles warm). Whisk together the flour, sugar, baking powder and salt in a large bowl. Whisk together the milk, butter, shortening and eggs in another bowl. Pour the milk mixture into the flour mixture and gently stir until just incorporated (it's okay if there are some lumps).
  • Lightly brush the top and bottom of the waffle iron with butter. Fill the waffle iron about three-quarters of the way full (some waffle iron should still be showing). Close the lid gently and cook until the waffles are golden brown and crisp, 6 to 7 minutes. Keep the cooked waffles warm in the oven or covered with foil on a plate while you make the remaining waffles.
  • Serve with maple syrup, butter, sugar or fruit preserves.
